Getting Back On Track

I have eaten too much recently and too much that is not whole food or plant food.  So I have focused on getting back to eating a diet made up of only whole foods and plant foods and then I can begin tracking to eat 80/10/10 again.  Although that is a demanding way of eating, I do believe it is healthy and when I was able to stick with it, it made me feel great.  But when, for whatever reason I struggle with 80/10/10, I have decided to aim for at least whole food and plant foods.

Friday

When I work from home I can make a smoothie for breakfast which I really like to have first thing.  This one was amazing.  I was sent a bottle of Plenish’ Cashew M*lk to try.  I didn’t like it on its own as it was too chalky but it was good in a smoothie.  I made it with 2 small bananas, half a punnett of frozen mixed berries, 1 kiwi fruit, a handful of spinach, 3 types of sprouts, purple kale, 5 Medjool dates and 1/4 of a teaspoon of blue-green algae.
Purple Power ingredients Garnished with blueberries and cacao nibs.  I would call this one ‘Purple Power’ as it was purple and made me feel amazing.  Really buzzing and it tasted fantastic.  I will be making this again for sure.Purple Power Lunch was a very simple salad eaten with no dressing and made with Romaine lettuce, cherry tomatoes, cucumber, celery and mixed sprouts.  It was warm enough to eat it outside – first outside meal of the year.salad 17-4-15 The vegetable garden has this stunning clump of Swiss Chard growing.swiss chard red stems The magnolia tree next to the veggie patch is in full bloom.Magnolia in flower I left these spring onions in the veggie patch over winter and they have survived and flourished and are now ready for eating which is great.spring onions aprl 2015 The broad bean seeds I sowed a few weeks ago are doing well.broad beans seedlings As are the mange touts.mange tout I snacked on an apple and then some dried fruits followed by more.  I should have had a bigger lunch.red apple For supper I made ‘Mejadra’ from Ottolenghi’s ‘Jerusalem’.  It is cooked rice and lentils with fried onions.Majadra in Jerusalem Mejadra

Ingredients

250g brown or green lentils
4 medium onions (weighing 700 g before peeling)
3 tbsp plain flour (I used gram flour)
250 ml sunflower oil (I used about 80 – 100 ml of groundnut and coconut oils ie nearly 1/3 of recommended amount)
2 tsp cumin seeds
1 1/2 tbsp coriander seeds
200g Basmati rice (I used brown Basmati rice)
2 tbsp olive oil
1/2 tsp ground turmeric
1 1/2 tsp ground allspice
1 1/2 tsp cinnamon (I didn’t use cinnamon as I don’t like it in savoury dishes)
1 tsp sugar (I left this out)
350 ml water
salt and pepper

Method

Place lentils in a small saucepan with plenty of water.  Bring to the boil and cook for 12-15 minutes.  Drain.

Peel and slice the onions thinly and place on a large flat plate.
onions ready for peeling sliced onions Sprinkle with the flour and 1 tsp salt  and mix well with your handsonions in gram flour Heat the oil in a medium heavy based saucepan until the onion sizzles when you add it.  Once added, turn the heat down to medium, add 1/3 of the onion and cook 5 – 7 minutes until the onion turns golden brown and crispy.  Watch it to make sure it doesn’t burn and stir occasionally.

Use a mesh spoon and transfer the cooked onion to a colander lined with kitchen paper.  Do the same with the other 2 batches of onion.fried onions MejadraWipe the saucepan you used for the onion and add the cumin and coriander seeds.  Toast on a medium heat for 1 – 2 minutes.

Add the rice, olive oil, turmeric, allspice, cinammon, sugar, 1/2 a tsp of salt and back pepper.

Stir to coat the rice with the oil and then add the water and cooked lentils.  Bring to the boil, cover with a lid and simmer on a very low heat for 15 minutes.

Remove from the heat and set aside for 10 minutes, with the lid on so the rice continues to cook in the steam.

Add half the onion to the rice and lentils and stir gently with a fork.  Serve topped with the remaining fried onion.

When I was frying the onion I lightly fried some cherry tomatoes because I wanted something juicy with it and this worked really well.  I also added coriander and mint which went perfectly with it.
Mejadra This was delicious.  Far too oily for a woman on a diet but the flavours were amazing and it did keep me away from chocolate, cakes or biscuits.  It was very different to what I usually cook, a bit time consuming and all those onions were literally eye watering to peel but worth it and we both really enjoyed it.Majadra 1 Saturday

Another sunny day – whoop whoop !!!

I began the day with some exercise.  I had seen a programme recently about losing weight and the recommended type of exercise to boost metabolism was to do some energetic exercise for 2 minutes (such as jogging, climbing stairs, walking uphill), rest for 1 minute and then repeat 7 times.  So Harvey and I went and did just that.  I haven’t jogged for many years but I did it and was very pleased with myself.  I was also very grateful to Harvey who was very encouraging and kind about my efforts and managed the stopwatch.    So what an awesome way to start the day – go me !!!!

A simple fruit platter for breakfast: watermelon, red grapes, pink grapefruit and orange.  Eaten in the sunshine and every mouthful was a complete pleasure.4 fruit breakfast I spent lots of time in this part of the garden today.potting area 2 This shady spot under the huge magnolia tree needs a good sweep and tidy up but it serves as my potting shed and is a pleasant place to spend the morning.  The trees have grown so much since we moved here and so this little greenhouse is too shady to use.potting area 1 This is the lovely greenhouse I had installed last year and which I love as it is so wide.  I sowed seeds this morning for rocket, mizuna, spinach, courgette, purple string beans, cherry tomatoes and plum tomatoes.  I wanted to sow lettuce but have no seeds so I must get some.empty greenhouse 1 Lunch was a bowl of brown Basmati rice and stir fried veggies, including the swiss chard and spring onions from the garden.  It was so good to be picking veggies from the garden, cooking and eating them – it doesn’t get much fresher than that!swiss chard and spring onions I stir fried in water rather then oil, the following: garlic, broccoli, red pepper, celery, mushrooms plus the swiss chard and spring onions.  Eaten with some soy sauce and chilli flakes.  It was so good.stir fry veg in bowl We sat outside but actually there was a chill nip in the air so we moved in to the greenhouse which was delightfully warm.  I could have stretched out in there and had a snooze it was so warm and lovely.chair in greenhouse Harvey thought that sitting in the greenhouse was a strange thing to do but I am thinking it is quite an obvious thing to do and will be doing so again.  A room with a view 🙂lunch in the greenhouse The dogs liked it in there too.boy and dog For supper I made an oven cooked ratatouille from Hugh F-W’s ‘Veg Everyday!’ cookbook.  It is really easy to make and tastes amazing.  If you like ratatouille, make this version as it is fantastic.

Oven Roasted Ratatouille

Ingredients

2 onions ( I only had small red onions so used 7 of them)
2 peppers, cored and deseeded (I used 3 romano red peppers)
400g courgettes ( I didn’t have any so used celery instead)
1 large aubergine (I used 4 small/medium sized ones)
5 tbsp olive oil
salt and pepper

For the tomato sauce
2 tbsp olive oil
3 garlic cloves, peeled
2 x 400g tins chopped plum tomatoes (I used 3 as I like lots of sauce and I used more aubergine than Hugh F-W’s recipe asked for)
1 bay leaf
A large sprig of thyme
A pinch of sugar

ratatouille ingredients Method

Preheat the oven to 190 °C

Cut the vegetables in to even sized cubes and tip them in to a large roasting tray

Add olive oil, salt and pepper and toss well together

Roast for 1 to 1 ½ hours, stirring once or twice, until all the vegetables are tender, reduced and starting to brown in places

Meanwhile make the tomato sauce by heating the olive oil in a large saucepan over a medium heat

Add the garlic and cook gently for a minute without browning

Add the tomatoes, bay leaf and thyme and cook gently for about 45 minutes, stirring regularly.

When the sauce is thick, add salt, pepper and sugar.

When the vegetables are cooked, mix with the tomato sauce and return to the oven for 10 minutes.

This was fantastic and exactly what I had been imagining.  It was full of flavour, soft, slightly sweet and fragrant from the thyme I had picked from the garden.  I relished every single mouthful and am looking forward to the next portion.  That is tucked away in the fridge, ready for 2 mid week suppers.ratatouille and sweet potato

So, 2 pretty good days of eating and exercising.  Too much fat and too many dried fruits but apart from that, it was all whole foods, plant foods and vegan so that is good.

The Chaperone

Today was one of the most enjoyable days out with Harvey that I can remember.  Well, literally, most enjoyable “afternoon” as I had to work his morning but it was from home which is always easier.

I failed to be vegan today because I had butter in my mash and some mayonnaise and I had way too many calories too so tomorrow must be better.  Back to 801010 tomorrow.

Sunny London

I have found it so hard these past 2 mornings to go in to London.  I want to stay in my garden !

This is my view from the kitchen window and it was too good to leave alone.  I had to get outside.garden 14-4-15 I feel such a sense of peace and happiness amongst my vegetable garden.  I really must sow more seeds and Saturday will be spent doing just that.veg garden 04 2015 I prepared a huge bowl full of watermelon and, with reluctance, set off for London.

I sit next to a window and in the morning I have to have the blind down because the sun shines in my eyes so at lunch time I was very keen to get outside and to feel the sun on my skin.yellow building St Giles In the fieldsUnsurprisingly all the seats had people sitting on them, enjoying the warmest day of the year so far.

I did snack again in the evening but only 1 heaped tbsp coconut yogurt with some walnuts.  At least I was vegan today and mainly wholefood and plant based.  A definite step back in to the right direction.

An April Weekend

I definitely did not stick to 801010 eating this weekend!

801010 Day 8

I felt ok today but slightly itchy which I think was an allergy to the quinoa I had last night.  I need to avoid quinoa but we had run out of rice so I tried it yesterday but that familiar itchy and shivery reeling running down my back has returned, albeit more mildly than before.

A simple breakfast of blackberries with mango.blackberry and mango 2 I prefer blackberries in a smoothie but the mango was lovely.blackberry and mango I popped out at lunch time and chose to spend half an hour sitting in Timberyard.  I fancied some time out.  Time just for me.matcha latte 1 I had a matcha made with soya milk like a latte.  I have not had one before; it was slightly bitter but pleasant enough.  The best part was sitting in Timberyard, peacefully on my own while I drank it.matcha latte It was such a lovely sunny day today.sunny seven dials I walked up to Food For Thought.FFT salad mixed I chose a box of mixed salad and all 4 salads were excellent.  They were very different, all vegan and all good.  The downside to a meal like this though is that it is hard to track what you are eating!FFT salad 9-4-15 A quick and easy supper of blueberry and banana ice-cream.blueberries 9-4-15 Blackberries and 4 bananas.  Such a quick and easy supper.blueberry banana ice cream

% of calories consumed by food group:

Carbohydrates = 67 %
Fat = 24 %
Protein = 9 %

Looking at the averages over the past week the numbers are:

Carbohydrates = 62 %
Fat = 28 %
Protein = 10 %

So the protein is good but the fat too high so next week I need to focus on eating less fat and more carbs.

801010 Day 7

I felt great today.  I was alert, full of energy and happy.

I woke up too early so got up and prepared lunch and breakfast to take to the office.packed bag All packed up and ready to go.  I also took some soya milk so I can make tea during the day and try to stay away from the coffee shops.food bag Breakfast was half a large Piel de Sapo melon and lots of raspberries.  The melon was so sweet and juicy, it made an excellent breakfast.raspberries and melon 8-4-15 I took a trip to Wholefoods Market at lunch time because I wanted to have a walk in the sunshine and I needed a few groceries.  I had taken my salad in to work today which I munched while reading my new book.Whole and salad It was made with a variety of green leaves, cherry tomatoes, cucumber, celery, brown Basmati rice, and roasted veggies left over from the weekend.salad 8-4-15 3 I added 1 tbsp of pumpkin seed butter as a dressing.  I will keep that in my desk drawer to add to future salads.pumpkin seed butter I have had pumpkin seed butters I prefer but I chose this one because the ingredients are 100% pumpkin seeds with no added fats or salt.salad 8-4-15 2 Delicious and this kept me going until supper time.salad 8-4-14 I made a huge stir fry for supper, using a colourful array of veggies.purple red and orange Plus some mixed sprouts and this fantastic tofu.  It tastes lovely and has a firm texture which is easy to cook as it doesn’t break apart when you cook it.sprouts and tofu I griddled the tofu and ate 4 slices.  This is one and a half packs so I had about 100g of tofu which was plenty.tofu in griddle pan Served on a bed of quinoa and garnished with coriander, sprouts and green chilli.  I seasoned the veggies with soy sauce, garlic and fresh ginger while I cooked them.tofu stir fry 2 It was very tasty and both Harvey and Matt enjoyed a bowlful too.  I was very pleased to see Harvey chomp his way through this lot.tofu stir fry

So having eaten a very healthy supper, Harvey and I popped along to David and Annette’s to watch the International Space Station as it orbited over their house.  It was very lovely, standing in their garden with a glass of red wine, listening to lambs bleating and looking up at the sky.  Conditions were perfect for star gazing as there was no moon and no clouds and the space station was very easy to see.  It was great and Harvey said on the way home, that he didn’t need science lessons when he had David, who had kindly explained orbitting to him.

So an interesting end to a good day.  The numbers aren’t so good so I need less fat tomorrow.

801010 Day 6

I did NOT want to go back to work today and the amazing warm sunshine made it even harder to sit on the train and then sit in the office!  I took in a honeydew melon for breakfast and then at lunch time, went out for lunch.

I really wanted to eat something healthy and delicious so we came to the Wild Food Cafe in Neal’s Yard.  We got the window seat in the middle where the windows are open and the window box has tulips in it.Wild Food Cafe outside I am loving the bright blue skies and sunshine.colourful LondonYou can see the chefs preparing all the food as the kitchen is in the middle of the cafe.

801010 day 5

I awoke from my chocolate coma and cake fest of yesterday with renewed determination to stick to the 801010 diet but with a difference.  I really like raw food but I can not eat it all day every day.  I think I can stick to 801010 but with some cooked foods. This is partly because I do not want to eat so many fruits.  I feel good eating lots of fruits but I think I will feel better if I eat less fruits and more vegetables and to do that, I need to eat either some cooked vegetables or add dressings to salads which takes me over the 10% daily fat allocation.  So I am going to try 801010 with cooked veggies.

I made a large juice for breakfast with oranges, pears, apples, strawberries and celery.breakfast juice ingredients It was refreshing and sweet but not too sweet.  Very enjoyable.3 breakfast juices Lunch was a huge big salad made with mixed green leaves and tomatoes and a selection of roasted vegetables: courgettes, peppers and aubergine.lunch 6-4-15 1 No dressing needed as the veg were roasted in olive oil and they and the tomatoes were juicy enough.lunch 6-4-15 We went on a walk to Camber Sands after lunch with Lucy, Emily and Charlie.  It had been really sunny until I got to the beach.  What is it with me and beaches?  I am notoriously unlucky with the weather when I head to the seaside.  It was sunny.  Very sunny all morning until I went to the beach and it was immediately overcast and chilly!

H on Camber We walked away from the crowds as it had been so difficult to find our lost black labradoodle as every dog looks black from a distance on the beach and one lost dog was enough drama for one day.Camber 6-4-15 2Despite the lost dog it was an enjoyable walk but too short as we had to clock watch because I had to drop Lara and Charlotte off.  I can’t believe Easter is over already 😦

If I had stopped there, I would have been on  776 calories plus my C:F: P ratios were 51:31:18. That is too low in carbs but if I had added lots more fruits or veggies I would have corrected the ratios.   But  I didn’t. There was some chocolate cake, red wine and a hot cross bun left over which were sadly consumed.  So the lesson learned here is that to eat a diet of plant foods, you have to eat a lot so you don’t get so hungry you pig out.  Hopefully that is all the Easter temptation consumed so tomorrow should be easier as I really am hopeless when it is all under my nose.

Easter Sunday 2015

So I am not even pretending to have dieted today.  I was going to try and be rigid but decided pretty early on today (about 5 minutes after I woke up!) to just go with the flow and eat like everyone else.  So I did.  I breakfasted on 1 hot cross bun and 1 mini hot cross bun.

I wanted to go for a walk as it was such a beautiful sunny day but I have really hurt my foot.  I think this is day 3 and it is just not getting better.  In fact the way I am walking has made my entire leg hurt so apart from hobbling around the garden, I am unable to do much more than that.daffs under tree My sister Abi and her family joined us for lunch and we enjoyed the lovely weather by holding an egg hunt round the garden.K egg hunt It was lovely to see my family and to spend time outside in the sunshine.Bs and Ws Abi and I I was not vegan today and went with vegetarian.  For pre dinner nibbles we had cruditees (carrot, celery and pepper) and pitta bread with taramasalata and houmous.

I will be back on the 801010 tomorrow but I did enjoy the respite today.  I enjoyed the sunshine, the Spring flowers, the home made food, the red wine and most of all, I enjoyed being with my children and my family.  I hope you all enjoyed your Easter Sunday too.

801010rv Days 3 and 4

Well it is true to say that I have failed to eat raw, failed to eat vegan (on day 3) and failed to eat in the 801010 ratio.  This is a tough diet to follow, especially at Easter when people invite me out for irresistible suppers, come visiting and temptation lurks round every corner when you go shopping.

I picked this pretty bunch of flowers from the garden.  Did you know there were so many different types of daffodil?daffs on countertop daff 4 daff 3 daff 2They made a pretty and bright display on the kitchen window sill but daffs are not my favourite spring flowers.vase of daffs I think these are much prettier and tulips are some of my favourites.green and white flowers But the blue hyacinths are probably my favourite for their beautiful colour and their heavenly scent.

Yesterday was Good Friday and the day started very well.  I made another citrus salad because I enjoyed the one I had the other day so much.citrus fruit salad 1 1 pink grapefruit, 1 orange and 2 mandarins.citrus fruit salad Harvey wanted pancakes and I followed a classic pancake recipe (from Hugh F-W’s Family cookbook) but substituted the plain flour for gram flour and the dairy milk for coconut milk.gram and koko dove's farm gram flour It looked ok and the verdict from the Little Fella was that these were better than usual as they were “lighter”.  So that was a substitution worth trying and to be repeated.chickpea pancakeI did quite a lot of driving during the morning and kept hunger at bay by munching 3 apples while I drove along.  That is one huge advantage of this diet – it is so easy to find something to eat when you are hungry.

For lunch I made a smoothie with a punnett of fresh blackberries and 4 frozen bananas which was amazing.  I love blackberries and they feel so full of vitamins.  I know they, and other fruits are, but they seem to really zing with goodness.  I made enough for 2 portions this size and I ate it all with great relish.blackberry banana ice-creamI was invited to Jane’s for supper during the day.  Having set myself a target of sticking to 801010 for 4 weeks, I was meant to refuse invitations out but I didn’t want to and I am happy I didn’t.  I had a really lovely evening and Jane kindly cooked me a vegetarian alternative to everyone else’s meal of stuffed aubergine with sweet potato and parmesan.  It was delicious.  So were the puddings!!  An amazing panettone with ice-cream covered in a rich chocolate sauce and also frozen berries with a white chocolate and limoncello sauce over them.  Oh my, that was sensational and I am making that for my sister tomorrow!  I also had bread and red wine.  So a diet disaster for me but it was vegetarian and all so yummy it was worth every calorie and I really enjoyed catching up with some of my lovely local friends.

I don’t even know where to begin tracking what I ate yesterday so no stats to report but the numbers would not have been good!

On to today, day 4 of 801010 rv.  I went shopping on just a cup of tea and an apple and was then tempted in Hartley Dyke to eat the fudge samples they had out.  I tried all 3 😦

For lunch we had some vegetable soup I made with the veggies I had leftover from a recent Able & Cole delivery: carrots, romaesque cauliflower, sweet potatoes, green pepper, fennel and onions.  I literally chopped them up, cooked them in water with some salt and pepper and blended until completely smooth.

We had the soup with chia wraps, houmous and rocket.houmous and chia wrap It was nourishing and tasted good enough.  Lara, Harvey and I ate it all up.  I must make soup more often as it is such a good way to use up veggies that are slightly past their best or, as in this case, needing to be eaten but not in the next couple of days meal plans.veg soup and rocket For supper I made us a large green leafy salad with tomatoes and celery.3 leaves I was inspired by @MGLASO , an Instagram account I enjoy from a vegan family in Norway, to make a salad dressing with mango, lime and chilli.  It worked very well and I will be making this again.mango, lime and chilliI bought some vegan burgers recently from Abel & Cole to have in the freezer for occasions when I need to grab something quickly.  I could have cooked from scratch today as I had plenty of time but I wanted to try them.  These burgers tasted really good.  I had mine with just salad but Harvey had his in a wholemeal bap with ketchup and a large salad.  Harvey even asked what the special occasion was because I cooked a burger for him !!  I told him it was a vegan burger and he said he preferred it to the meat ones so that is fantastic.  These are made with soya beans, brown rice, onion, carrot, sunflower seeds, sesame seeds, salt and pepper.  They held their shape well and cooked very easily – 3 minutes on each side in a frying pan.  Dragonfly burgers Supper was a huge pile of mixed green leaves, celery, tomatoes and a huge portion of the mango, lime and chilli dressing.  Added fat free and also no added salt.salad with mango Plus a country vegetable burger.  So not all raw but it was all vegan.  I enjoyed this meal very much.veg burger and salad

Total calories = 1,892 which is 392 over my target of 1500.  A lot of that came from 4 dates I snacked on while preparing supper (264 calories in 4 Medjool dates!).

Carbohydrates = 67 %
Fat = 24 %
Protein = 9 %

Most of that fat came from the houmous.

I also failed with exercise.  I have hurt a toe on my left foot which is making walking very painful and when I do walk, the way I shuffle along makes my leg hurt.  So very frustrating, especially this afternoon which was sunny and I would have liked to go outside so I hope it heals itself quickly.

I think it is safe to say that tomorrow will not be the best diet day either as it is Easter Sunday !
