Market Shopping

I went to buy porridge but instead bought a ham and cheese croissant for breakfast.  It was good but very unsatisfying.  I should have gone with the porridge.  And radishes for breakfast is weird!

At lunch time I couldn’t wait to get in to the market.  My sister Abi is coming for lunch tomorrow so I wanted some yummy treats.  Plus it is Easter so where better to buy my family something special than Borough Market?

I am not giving away all my menu plans for tomorrow but there will be some Caerphilly

and Comte (yes, the piece the man is holding)

and a small piece of this unusual looking goats cheese.

I love skinny green beans and hope the ones I have sowed are successful but they are months away so I keep buying them when I see them.

I emerged from Konditor & COOK with a massive bag of ……….. surprises 🙂 .  And a rare roast beef with horseradish sandwich and a fudge brownie which did not exist long enough for a photo.  It was awesome but not as good as Monmouth’s.

When I got home I really needed to eat some fresh fruit and veggies as they had been lacking all day.  So I made a smoothie.  I am getting really lazy about eating salads but at least having smoothies gets the nutrients in.

Tonights smoothie was some black grapes, 2 clementines, 1/2 a lime, 1/2 an avocado, 1/3 can of pumpkin puree, mineral water and ice cubes.  No banana as the grapes were sweet enough.

It tasted very clean and refreshing.

I hit all my deadlines and completed my key tasks at work this week so I can really relax and enjoy the weekend.  I have so much lined up and so many wonderful people to catch up with.  Not quite all my favourite people but lots of them.  I hope you have a really wonderful weekend too.

Confessions Of A Chocaholic

I took breakfast in again today and forgot to photograph it – sorry.  It sugar free muesli with almond milk, chia seeds and a banana.

I spent all morning in meetings but one at least was in another office so I managed a 15 minute walk each way in the sunshine to get there and back.  I am not walking the long distances I was when I was at home so I try to walk faster instead.

At around 12:30 I walked in to the market.  I was very hungry today and decided to have a more substantial lunch than usual.

I have often been tempted by this stall but never tried it before, until today.  It was really good.

The Vietnamese chicken curry was spiced perfectly for me and it had decent chunks of chicken in it.   I sat on a step in the sunshine and took 10 minutes to relax and breathe deeply and enjoy watching people wandering around.  I love people watching.

I have been quite disciplined about not eating much chocolate lately but at certain times I just have to have chocolate.  Today was one of those days.  The coffee cups and brownie pieces in Monmouth are quite small so this is not quite as piggy as it looks.  Nearly, but not quite.

I have decided that if I am going to have a sweet treat, it has to be really good or it is not worth it.  Monmouth Coffee’s truffles are chocolate heaven.  And their chocolate brownies are worth walking over hot coals for.  They are one of my favourite chocolate products on the planet.  The centre is super moist and rich and chocolatey and to get to it you bite through the crust which is firm and then slightly chewy.  I can not imagine a brownie being any better anywhere!

I enjoyed these with a coffee.

At home I had a green smoothie, again.  Sorry to be boring but I have to eat really lightly in the evening when I have a heavy lunch: Swiss chard, spinach, yellow tomato, frozen banana, 1/2 avocado, 2 dates, 1 tsp sunflower seeds and 1 tsp walnuts.

It was good.  I won’t add walnuts again though as they made it slightly bitter.

Thick and cold.  Just like ice-cream.

I shall fall asleep tonight, dreaming about chocolate truffles and brownies from Monmouth :-).  I hope you get to try one someday.

There Be Dragons

Well, dragon fruit anyway.

This was perfectly ripe and juicier than previous dragon fruits I have tried.

I think it is an amazing looking fruit.

I chopped some up and added it to Muesli, natural yogurt and chia seeds mixed with almond milk.   A monochrome breakfast.

No photo of my lunch!!!!!  I had to attend a presentation and lunch was served as it was held at lunch time.  So I had 4 sandwich triangles with grapes.  Resisted the crisps and cakes.

Until I went out for a brisk walk and picked up a chocolate fudge nut cookie

with a skinny latte.

Then on the train home I bought some crisps!!!  No idea why because I don’t even like them much :-(.

At home I had a smoothie made up with half an avocado and mango I found in the fridge,

spinach and golden linseeds,

plus a banana, 2 medjool dates, ice cubes and almond milk.  It was yummy and the perfect thick and smooth consistency I like which I think the avocado gives.

Remember this brown tomatoes I had on Sunday and said I really liked?  Well, I think they are Kumatoes – my friend Laura sent me this link which is interesting – thanks Laura.

A Little Less Again

I made it to Weight Watchers tonight for the first time in 3 weeks and notched up another 2 and a half pounds off.  That makes it 4 stone and 3 pounds less of me than there was before :-).  Not a massive loss but I am perfectly happy taking it slowly.  I enjoy my little treats and am so proud of myself for managing to balance work and eating healthily with the occasional treat of a piece of cake or cookie from the market.  Big grins here tonight.

I made breakfast and took it to work: 2 spoonfuls of sugar free Alpen, almond milk, natural yogurt, chia seeds and a passionfruit.

I did a walk up to Gresham Street during the morning as I had to visit one of the other offices.  It was glorious being out in the sunshine, walking over the river and through the City.  I stopped off at EAT on the way back and had an NY pastrami and pickle sandwich with a skinny latte, which I enjoyed sitting outside.

On the way back, this lady was singing under Southwark Bridge.  She had a stunning voice and it was a very pleasant 5 minutes spent listening to her.

I cooked a delicious meal when I got home.  I picked spinach, Swiss chard and beetroot leaves.

I cut out the stalks and chop the green leaves up separately.

I fried a red pepper with the Swiss chard stalks and a jumbo oyster mushroom.

I pushed the cooked vegetables to one half of the pan and added the cooked brown Basmati rice to the other half of the pan to warm through.  When that was cooked I pushed it to the side and wilted the green leaves with some soy sauce.

 In another pan I heated through some chopped up roast pork left over from yesterday with some Wagamama Sweet Teryaki sauce.

It was really tasty.  3 distinct but complementary flavours and textures.  And lots of nutrition too.  Yummy.

We all enjoyed it and both boys ate all their veg.  Result!

Still Sowing

The greenest green smoothie.

The green all came from the garden; spinach and swiss chard.  Plus an apple, frozen banana, linseeds and almond milk.  Apple and spinach in a smoothie goes really well together.

Another morning spent happily in the garden, preparing the raised beds and sowing more seeds.  Harvey came to help me and weeded and dug over one of the beds.

and he sowed some sunflower seeds.

Having dug over the empty sections of the raised beds,  I sowed rows of 2 types of lettuce, beetroot, a broccoli that you pick when it has small heads and a red veined spinach.  I also sowed a row of Komatsuna which is a Japanese green leaved vegetable.  My sister Lucy sent me a package of unusual oriental seeds and this is one of them.  I am most intrigued.

It was so relaxing being outside today.  I find it incredibly therapeutic being in the sunshine, looking at what has grown and thinking about what is to come.  It was perfect gardening weather today – bright and sunny but not too hot so I felt energised by the sun, not over heated by it.

Then something really exciting happened.  We have all been worrying that our tortoise, William, had not survived the winter as we had not seem him.  He had self-hibernated so we weren’t sure where he was.  Today we found him!  And he is fine.

William had a little soak in some shallow water and then something to eat.  We gave him his favourite – a dandelion flower and he ate which is a good sign.

We are all very happy to have him back.

Salad for lunch ………from the garden! Lettuce, rocket and spinach.  Amazingly a lettuce and lots of rocket survived our winter so I enjoyed a plateful.  So good to be picking it and eating it again.

Along with 3 tomatoes, none of which were red.

The yellow was a bit mushy but the orange and brown were excellent as they were full of flavour and sweet.

I added some cucumber to the tomato mix which I dressed with some olive oil and white wine vinegar.  Topped with a small tin of sardines in tomato sauce mixed with some mayonnaise.  A really healthy and delicious lunch.

Which we ate outside.  First lunch, of many I hope, eaten outside this year.  The boys had pasta, in case you are curious.

There are many more to go but I made a fantastic start to my vegetable growing this weekend.

I treated myself to a little relax this afternoon that involved an ice-cold pear cider, a good read on my Kindle and a reclining chair set up in the sunshine.  Bliss.

The dogs always keep me company in the garden.  The black dog, Milton,  always sits very close

but the yellow dog, Dylan, keeps more of a distance.  Dogs have distinctly unique characters just like people do.

James cooked supper which was wonderful. Roast pork, green beans, broccoli and purple carrots with roast potatoes,

followed by meringue with whipped vanilla cream and Aplphonso mango.  It looks like carrot but it really was mango.  Alphonso is a very deep orange and quite an intense flavour.  This is half of one of those massive meringues I bought in the market.  Half was enough for each of us.

A simple but satisfying weekend, with lots achieved and plenty of time to relax too.  Lara is home and we are snuggled up on the sofa looking forward to a top evenings telly as Silent Witness and Mad Men, two of my favourites, are back.  Have a good time yourself.

Seed Time

Breakfast was a new one today.  I blended 1/3 can of pumpkin, some strawberries and linseeds.  Just those, nothing else.  There was some strawberry and banana smoothie left in the blender jug from the one I made Harvey but a minimal amount.  I wanted a thick paste consistency rather than a liquid drink.

Once blended, I added it to 1/3 cup of oats and left to sit for a couple of hours.

Today I did two things for the first time this year:

1. Got out my gardening bag 🙂

2. Ate breakfast outside :-).  Yes, I really did.  I ate while I wrote on the labels for the seed trays.  The brick red mush in the bowl is my breakfast which was actually rather good.

The vegetable beds are prepared and ready.  This is my original plot, which has some healthy looking broad beans growing well.  I planted these in October.

 

This is my new plot, which has 2 wig wams waiting for the bean seedlings and there are 2 rows of potatoes in the ground.  This year I am also using potato sacks which will be on the patio, so I can eat potatoes without picking gross slugs out of them first.

These are the raised beds, with plenty of Swiss Chard, and various onions, garlic and shallots growing which I planted in October.  Technically, Adrian, the gardening genius who helps me on Fridays planted them but I regularly admire them.

This is my potting shed.  As you can see there, there is not actually a shed.  I am paralysed by a fear of spiders and can not go in small spidery places like sheds so I have a potting bench outside which is next to the little greenhouse I use.

My tomato strategy this year is to try 4 varieties, 3 of which I am planting in large terracotta pots on the patio in a sheltered corner which receives a lot of sun and has a partial glass roof. It’s a bit like a greenhouse with an open side.  I put compost I make or cheap compost from a garden centre in the large pots with a shallow layer of seed compost on top.

I water the compost thoroughly and then press the seeds gently in to the top.  If you put the seeds in to dry compost and then water them, they run all over the place.  So a little tip is to press the seeds in to compost which is already wet.  So I now have 6 large pots full of tomato seeds plus one with peppers and one with okra.

I have never grown okra before.  I don’t actually like it so I thought if I grew my own I may like it.   I am always intrigued to see what the seeds will be like.

Over by the potting bench, I put lots of seeds in to smaller pots which I filled completely with seed compost.  I use a mixture of pots that disintegrate and pots which I keep to re-use again.  These are 2 types of French beans I am sowing.

That empty greenhouse needs filling up!

I sowed and sowed and sowed.  It was so peaceful outside under the flowering magnolia tree.  Just me and the birdsong and occasionally Harvey.  By lunch time the greenhouse was filling up.  All that promise in those little seeds.

I had started lunch before breakfast!  Yes, really I did.  I was on fire today.

Mushroom Crusted Chicken

Ingredients (serves 4)

  • 3 tbsp olive oil
  • Juice of half a lemon
  • 1 garlic clove, crushed
  • Small handful of fresh thyme, chopped finely
  • 4 chicken breasts
  • 2 slices bread, made in to breadcrumbs
  • 1 jumbo oyster mushroom (or use alternative mushrooms)
  • 1 egg

Method

  • Mix the olive oil with the lemon, garlic and thyme.
  • Marinade the chicken all morning or overnight.

  • Finely chop the mushroom.

  • Mix the mushroom with the breadcrumbs.
  • Place the chicken breasts, one at a time, between 2 sheets of cling film and bash with a rolling pin to flatten them.

  • Leave on a plate while you prepare the others.

  • Coat in egg and then breadcrumb/mushrooms.
  • Place frying pan on heat and use oil marinade which I brushed over the base of a ridged pan.
  • Fry over a medium high heat for about 5 minutes, turning once.

I served this with skinny green beans which I steamed.

And mashed potato.  It was delicious and we all loved it.

I spent the afternoon in Maidstone shopping with Harvey and when I got home I had a snack of cheese, oatcakes and red wine.

In a minute I am off to the cinema with Lucy to see the Exotic Marigold Hotel – excited!!!!  Have a good evening 🙂

Happy Friday

I started today with a delicious roll.  The bread was so dark and full of seeds and I had it filled with ham.  With a skinny latte on the side.

I have had a challenging week at work.  It has been the week to deliver what I have been working on for 4 weeks so it has been stressful and busy and demanding.  It seemed to go well and today I could begin to relax a little which was much needed.  I went out for an early lunch today and it was sunny again.  Market Day :-).

The market was buzzing and I really enjoyed it.  It was full and noisy and vibrant.  Yet again I thought how lucky I am to work next to such a wonderful place.  Look where I ended up again!

Well, it has been couple of weeks.

I sat and ate outside next to the Cathedral, breathing slowly and deeply and feeling very happy.

I didn’t NEED 2 of these cookies but I had them anyway – they were great.

I also gave in to temptation and bought 4 of these massive meringues; 2 raspberry and 2 plain.  We will enjoy those this weekend.

Back to Turnips.  Harvey loves figs with yogurt and a drizzle of runny honey so I bought some figs for him.

And some mango.  Aplhonso mangoes are here :-).  They are much smaller than others and very intensely flavoured.  Hideously expensive too but what a lovely treat.

I left work at 5:30 pm on the dot and tried a different route home.  I walked across Southwark Bridge and took in the views and felt the warm sun on my face and felt excited for the weekend.  I got on the train at Cannon Street which meant I got a seat – hooray.  I too often have to stand until Sevenoaks when I get on at London Bridge so by taking a lovely walk which was 5 minutes longer then the normal route, I got on at the start of the line and had a seat.  Result.

I over-ate today so apart from a glass of wine, I had a super healthy supper.  This was one of the best smoothies I have ever made.  I love looking in the fridge, fruit bowl and garden and choosing what to blitz up.  I think about how the produce is bursting with goodness and by having it in a smoothie, my body can so easily absorb and digest it all.

Perfect Smoothie

  • 2 Swiss Chard leaves
  • 1 Bulls Blood beetroot leaf
  • 2 Medjool dates
  • 1 frozen banana
  • 6 large strawberries
  • 1 tbsp golden linseed
  • 1/2 carton cottage cheese with pineapple
  • Almond milk
  • 1/2 an avocado
  • Ice cubes

It was perfect.  Thick and smooth and creamy.  It had the consistency, texture and coldness of an almost melted ice cream.  Perfect.  I know I just said perfect twice, but it really was.  Perfect, perfect, perfect :-).

Early Bird

Well I wasn’t up catching worms but I did catch an early train to work and I was at my desk just after 6:30am!  I had so much to do this morning and I woke up at 4:30 stressing about it.  Rather than toss and turn I decided to go in and crack on.  What a great idea.  I got everything done I needed to do.  Next time you wake up early and start stressing, get up and work in it if you can.

I took in a breakfast of 1/2 a can of pumpkin (the last one in the cupboard), 1/3 cup of oats, almond milk, pumpkin spice (cloves, cinnamon and nutmeg), chia seeds and almonds with some mixed dried fruit.  I ate it 2 hours after making it, by which time the oats had softened and the chia seeds had swelled and it was lovely.

I didn’t get out for lunch until 2pm but by then I had completed a days work so I took a whole hour.  It was great.  The sun was shining and the market was still busy but not crazy.  For some reason I fancied a bratwurst today.   To be truthful, it is next to the Raclette stall which had a really long queue!

They serve it with with mustard, ketchup and sauerkraut.  I hate sauerkraut but it is supposed to be good for you so I ate it.  Yuck.  The Bratwurst was lovely though and I managed to avoid my trademark when eating such things of a large ketchup splat down the front of my shirt.  Never a good look and especially not at work, all down the front of a gorgeous orange blouse.

While I munched I wandered round slowly, looking at the stalls.  One of my favourite things on the planet is meringue – check these out!  Look at the ladies arm to get some sense of scale – they are massive.

And they had little custard tarts.

These always remind me of my friend Jeremy who was happily living in Malaysia for 3 years and we visited him every year.  We had amazing holidays together and he lived near a city called Johor Bahru in the South, near Singapore.  When we went to the shops we ate these lovely tarts.  So I treated myself to one and had a lovely reminisce about some very good times with a dear friend.

Having consumed lunch, while pottering about, I went to Turnips.  How I love this stall with their unusual goodies.

I bought loads of goodies and happily paid for them.

I am looking forward to cooking then up this weekend.  When I got home, my wonderful daughter had cooked us all a lovely dinner:  maple marinated salmon, brown Basmati rice, broccoli and carrots.

Maple Marinated Salmon

Ingredients (serves 4)

  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 1 garlic clove, crushed
  • 1 inch chunk of ginger, grated finely
  • 4 pieces salmon

Method

  • Mix together the maple syrup, soy sauce, garlic and ginger in a large bowl.
  • Add the salmon and marinate all day.
  • Lightly fry the salmon for about 5 minutes on each side.
  • Heat the remaining marinade in a small pan and bring to the boil.  Serve with the salmon.

It was lovely and a wonderful treat to come home to.  Thank you Lara.

The carrots are purple, not “burnt” as Harvey thought!

Mama’s Cafe

Fresh fruit, yogurt and granola parfait for breakfast with a skinny latte.  No time for a photo though as I was busy, busy busy!  I was in the office earlier than usual as I have so much work to do today.  I did need to experience some of that sunshine though so at lunch time I walked outside, under pretty Southwark Bridge,

and in to EAT.  I had a chicken Laksa soup which I sat outside and ate.

It was spicy, coconutty and tasty.

I had to work in a different office in London this afternoon and our meeting finished at 5 pm so I came home :-).  It was awesome to get home in daylight and I wanted to make supper for us.  Egg and chips?  Oh yes!

I peeled several sweet potatoes and cut them in to chip shapes, and covered them in a thin coating of olive oil, salt, paprika and cinnamon and put them in the oven for 40 minutes at 190 °C.

And I headed out to the garden to pick green leaves.

Look at the glorious colour on those stems!  If you have a garden or allotment then I really recommend Rainbow Swiss Chard.  It is so exciting to have fresh green leaves in the garden at this time of year and the stems are so colourful.

I feel healthier just looking at this lot and can’t wait to eat it!

Back inside I cut out and chopped the stems

 

and the leaves separately.

I stir fried the stems for about 5 minutes and then added the leaves for a couple of minutes until they just wilted.

I also poached some eggs – we had 2 each.

So Mama’s Cafe served up egg and chips for tea and we all enjoyed it 🙂

Art Class

I didn’t have such an early start today as I was working in Gillingham so I made us porridge for breakfast, which was lovely as I haven’t had any for ages.

I also had time to make lunch to take.  I was feeling like a Greek salad, so I started with 2 lovely tomatoes,

cucumber and Feta and also added some sugar snaps and carrots.  A grind of pepper and 1 tbsp olive oil and I was sorted.

I was stressed out when I came home so I decided to cook something.  A friend of mine, Maria, had asked me if I had any good dip recipes and I have been intending to make one up for a while.  Tonight was the night.  I put a can of red kidney beans in the blender with 1/4 of a fresh pineapple.  In the oven, I roasted a carrot, green pepper, onion, large plum tomato and half a head of garlic.  When they were cooked, I blitzed it to a smooth puree.

I was also roasting a tray of baby parsnips I had bought last week in the market.  On Sunday, Gary had made some delicious crispy parsnips and I wanted those to scoop up the dip.  It all looked good.

The parsnips were lovely but the dip was mediocre so not a recipe worth sharing.

Sorry Maria, back to the drawing board!
