I made it to Weight Watchers tonight for the first time in 3 weeks and notched up another 2 and a half pounds off. That makes it 4 stone and 3 pounds less of me than there was before :-). Not a massive loss but I am perfectly happy taking it slowly. I enjoy my little treats and am so proud of myself for managing to balance work and eating healthily with the occasional treat of a piece of cake or cookie from the market. Big grins here tonight.
I made breakfast and took it to work: 2 spoonfuls of sugar free Alpen, almond milk, natural yogurt, chia seeds and a passionfruit.
I did a walk up to Gresham Street during the morning as I had to visit one of the other offices. It was glorious being out in the sunshine, walking over the river and through the City. I stopped off at EAT on the way back and had an NY pastrami and pickle sandwich with a skinny latte, which I enjoyed sitting outside.
On the way back, this lady was singing under Southwark Bridge. She had a stunning voice and it was a very pleasant 5 minutes spent listening to her.
I cooked a delicious meal when I got home. I picked spinach, Swiss chard and beetroot leaves.
I cut out the stalks and chop the green leaves up separately.
I fried a red pepper with the Swiss chard stalks and a jumbo oyster mushroom.
I pushed the cooked vegetables to one half of the pan and added the cooked brown Basmati rice to the other half of the pan to warm through. When that was cooked I pushed it to the side and wilted the green leaves with some soy sauce.
In another pan I heated through some chopped up roast pork left over from yesterday with some Wagamama Sweet Teryaki sauce.
It was really tasty. 3 distinct but complementary flavours and textures. And lots of nutrition too. Yummy.
We all enjoyed it and both boys ate all their veg. Result!
Bravo for your release of another 2.5lbs of weight. Congratulations Zöe on your hard work to get to where you are now. Keep up the great eating and of course, the occassional treats. ☺

4 stones is a lot to lose, you have got a lot of will power, Zoe and your meals always look so delicious that you wouldn’t even guess you were on any sort of diet/calorie restricting regime! Huge well done.
I’ve never added passion fruit to my oats, that is something new to try 🙂
Thank you Nutty Crunch 🙂 It is hard work losing weight but it has become a way of life and we are all enjoying eating more healthily. Passionfruit and oats work really well together, so give it a go.
