Just Like Buses

My social life lately has been just like waiting for a bus – nothing for ages and then 4 come along at once!

London has been bathed in sunshine this week which means when you go out in the evening you can be outside.  I had a very merry evening on Wednesday at Heel Tap in Southwark, which is tucked away down a little side street off Borough High St.  It has a lovely big courtyard which was the perfect location for some summer drinks.

I managed to not overdo the drinking and ate very well on Wednesday.

Outside at HeelTap Thursday morning I woke up hungry as I had not had supper the previous evening.  I made an old favourite to take to work; 1/2 cup of oats with 1 tbsp chia seeds and a few almonds as I was very hungry.Oats and chia and almondsTopped with coconut milk and loads of blueberries.

In the evening I joined Suzanne and some of the lovely local ladies for a birthday celebration at The George in Cranbrook.  I had a tuna nicoise salad which was lovely.  I was really craving some protein and that hit the spot perfectly.tuna nicoise saladLooking lovely ladies 🙂

Pleased With Myself

I had a ridiculously stressy and busy day today.  But I am feeling pleased with myself because this was exactly the type of day that sends me running for the chocolate and latte and cake and then another latte with a Brownie.  I managed to eat all healthy and all raw (apart from herbal tea and one breakfast tea) all day.  Phew.

It helped that I had made breakfast and lunch the night before.

making lunch the night before 1 My work colleagues were not impressed with the look of my breakfast.  “What is that pot of gloop”? one asked.  They were more amused than I was that it was frozen solid.  I made this delicious breakfast pudding last night and popped it in the freezer, hoping for a kind of ice-cream consistency in the morning.  It didn’t work out like that though.  It was like a brick.frozen gloop After a couple of hours it was edible.  It was delicious.  Last night I soaked 1/4 cup of sunflower seeds and 1/4 cup of pumpkin seeds in water.  After a couple of hours I rinsed them and then blitzed them with half a pineapple and a banana until completely smooth.  The main flavour was pineapple because it was at the perfect stage of ripeness.  It did take quite a lot of willpower to not just guzzle it there and then.  It was really good.Pineapple and seed breakfast For lunch I enjoyed the salad I took in.salad 4-6-13 2 Sugar snap peas, radishes, cherry tomatoes, large tomatoes, celery, spiralled carrots and cucumber and a generous slug of the Martha Stewart dressing I made the other day.  Lovely.salad 4-6-13 I am going to do this more often – wash a selection of vegetables and place them in pots in the fridge so it is easy to make the next days lunch.  I have already made tomorrow’s lunch and it literally took just a few minutes 🙂3 pots I really wanted something chocolatey so I tried to recreate the amazing chocolate milkshake I made the other day.  So out came the Carob, Lucuma, half a melon, spinach, kale, celery, avocado and spirulina.smoothie stuff 4-6-13 I didn’t add any liquid as I wanted a thick milk shake consistency and the melon was juicy enough.powder and greens Version 1 was……… revolting!!  it really was.choc green smoothie 1 So out came the cavalry; cacao powder, Tahini and banana which are pretty much guaranteed to make a smoothie more edible.reinforcements Much better 🙂Green choc smoothie 2

Spiralling

What a stunningly beautiful day it was today.  This is the view of one of my favourite parts of the garden just after 6am.  It really is a riot of colour and due to get even better.

Having enjoyed the garden I went inside and logged on – I was working before 6:15 as I was working from home today.  Certainly beats 3 hours a day commuting.

Blackberry and Apple Pudding 1

I started it last night by soaking a the almonds overnight in water.  As soon as I got up, I soaked some dehydrated coconut, dried apricots and raisins in water.Blackberry and apple pudding ingredients Blackberry and Apple Pudding

Ingredients (serves 2)

  • 1 cup of almonds, soaked overnight in water
  • 2 punnetts of blackberries
  • 1 apple, cored (not peeled) and cut in to chunks
  • 4 dried apricots                       }
  • Half a cup of raisins                } Place in bowl and just cover with cold water for an hour
  • 1/4 cup of dried coconut        }

Method

  1. Rinse the almonds and set aside
  2. Place the blackberries and apple in the blender
  3. Add the dried fruit with their soak water and the almonds
  4. Blend until smooth

This is more Autumnal than Summery but I suddenly had a fancy for blackberries so ordered them.  Having basically juice fasted for a few days, I wanted a really substantial but very healthy breakfast.  So this was it.  It made 2 portions and Harvey and I both really enjoyed every scrap.  It was literally bowl licking good.

Blackberry and Apple Pudding Today I tried my new kitchen gadget.  The Spirali-Spiral-Slicer, made by Lurch and bought from my favourite Super Foods site, Detox Your World.  It was £29.95 which seems good value to me for the fun we had with it and the fun I plan to have with it!Lurch Spiraller You can select different blades to slice veggies but I wanted to create spirals from courgette and carrot.  I made thick courgette spiralsFat courgette spirals and skinny carrot spirals.Carrots spiralling Some of the spirals are really long!Spiralling carrots Lara was here for lunch and while I spiralled she made the dressing for the Asian Spiralled Vegetable Salad I fancied for lunch.  This was inspired by Shazzie’s Oooodles of Nooodles recipe I found on her blog.  No quantities were given so Lara estimated them.

 

Asian Spiralled Vegetable Salad

Ingredients (serves 2)

  • 3 tbsp Sesame Oil
  • 3 tbsp Tamari
  • 1 inch cube fresh ginger, finely grated
  • 1 garlic clove, minced
  • Half a red onion, finely sliced
  • 1 tbsp sesame oil
  • 1 courgette
  • 1 large carrot

Method

  1. Mix together the Sesame Oil, Tamari, ginger, garlic, red onion and sesame seeds
  2. Spiral the courgette and carrot
  3. Combine the vegetables with the dressing and mix well

Asian spiralled vegetables raw You could eat it raw – it was delicious as it was but Lara wanted it warmed through (as Shazzie suggests) so we popped it in the Dehydrator on the lowest setting and went for a dog walk for 45 minutes.

We then sat in the sun for 15 minutes and both really enjoyed this delicious bowl of spiralled vegetables with Asian style dressing.  Shazzie added kelp to hers but I didn’t have any but I will try it next time.Asian spiralled vegetables cooked I wanted to use my new gadget again at supper time so I did!  I showed Harvey how to spiral a carrot.  You are left with a long stalk which he called “the mushroom” and asked if he could eat it.  Yes my darling, you may eat raw carrot 🙂spiralled carrots He then wanted to know what else he could spiral so we tried a cucumber.  Anything that makes a child want to eat more vegetables has to be good!Harvey spiralling Having spiralled a carrot and cucumber, I decided they would do instead of pasta and set about making a pasta sauce.

I had a packet of Tapas ingredients left over from Harvey’s birthday tea.  There was some Salami, Pepperoni and lots of olives.  I fried an onion, added the chopped up Tapas ingredients, 2 large tomatoes, a huge handful of kale and some fresh sage.Pasta topping 1 Then served it on top of the spiralled carrot and cucumber.Carrot pasta and veg topping It was absolutely delicious.  Salami and pepperoni are not very healthy but there was only a little bit and the rest of the meal was really light.  They added a delicious richness to an otherwise very light and healthy meal.  Harvey did have some wholewheat spaghetti too but thanks to the spiralling, he ate far more vegetables today than usual and that has to be a good thing.Carrot pasta

So 10 out of 10 for the Spirali-Spiral-Slicer.  Good value.  Good fun.  Good results.

I also went to Weight Watchers; I have lost 4.5 pounds since I last went so I am very happy.  I was depressed at the end of last year.  In March 2012 I had lost 4 stone.  Just for one week though as my weight slowly but surely crept up after that.  I can confess now that I actually regained 1 stone and 10.5 pounds !!!  Yes, 24.5 pounds back on.  It has taken a while to lose it but I am nearly back.  I have 2.5 pounds to lose and I am back at my 4 stone loss.  I am really pleased I have managed to lose it and not completely go out of control, which is what I have always done in the past.  I really do feel I am learning to naturally eat healthily.  I have bad days and even several bad days in a row.  But never bad weeks and months any more.  I am far more aware of what I eat and why, thanks to writing my blog.  And thanks to other people’s healthy eating blogs, which continually inspire me to eat good food.

I am looking forwards, onwards and downwards.

The Nearly Bearable Lightness Of Being

I really enjoyed lying in bed last night with an empty stomach.  I wasn’t hungry but just felt flatter.  I slept well and woke up feeling lighter.  It was a very pleasant sensation so I decided to try another day of juice fasting.

We all enjoyed some lovely exercise today, cycling in Bedgebury Forest.

This was the star of the breakfast juice, freshly picked from the garden. Beetroot on board Juiced with 1/4 of a melon, a large carrot and a blood orange.Breakfast juice in bowl Absolutely delicious.Breakfast juice 2-6-13 For lunch I made the classic green and red juice: spinach, cucumber, coriander, red pepper, 2 tomatoes, spring onions and garlic.  I added half a red chill to the mix.veggies on board It juices in layers.juice in layers Very colourful and I enjoyed the chili in it.  This juice smells wonderful and tastes great.very red juice I don’t know if it was the cycle ride or because this was day 2 but I really struggled in the afternoon.  I was desperately tired and very grumpy.  I had a bath with relaxing oil (Patchouli) and slept for a couple of hours.

I think I was a bit dehydrated so I made a clementine juice with 6 clementines.  Nothing else as I wanted the sugar boost.  It was absolutely amazing.6 clementines I drank plenty of water too.Sparkling water I was still struggling though so I enjoyed a mango and then a banana.Mango I also decided to make a salad with an oil and vinegar based dressing for supper, rather then have another juice.  Everyone else was having curry so I did well to stick to my salad.

I found a recipe on Martha Stewart’s site and decided to try it.

Salad Dressing (Martha Stewart)

Ingredients

  • 1 tablespoon minced shallot or garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon light-brown sugar
  • 3/4 teaspoon coarse salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon Worcestershire sauce
  • 2 1/2 tablespoons red-wine vinegar
  • 2 tablespoons fresh lemon juice
  • 3/4 cup extra-virgin olive oil

Method

  1. In a clean jar, mash together the shallot, mustard, brown sugar, salt, pepper, and Worcestershire sauce.
  2. Pour in the vinegar, lemon juice, and olive oil. Cover tightly and shake well to combine and emulsify. Add salt and pepper to taste. Use immediately or store in the refrigerator.

So a very healthy days eating but I didn’t feel good at all.  I may have felt better tomorrow if I persevered but I actually had no intention of doing any more than a one day juice fast at the beginning of the weekend. I liked the feeling of lightness you get from being fuelled by juice alone but I didn’t want to keep feeling grotty.  The salad and the bike ride were good and being the four of us again is wonderful.

Just Juice

Today’s mission was a juice fast.  Just juice.  That was all I aimed to consume today.  I did have several herbal teas too and glasses of water to make sure I stayed hydrated.

One of my vegetable beds is a disaster.  Whatever I try, I am defeated by slugs.  The Purple Sprouting Broccoli and Brussels have been munched to bare stalks and they are now working their way through the cauliflower.  They started munching the cabbage and before they finished it, it has started bolting.

So I picked one of the cabbages and dug up a parsnip to add to my first juice of the day.cabbage and parsnip

The first juice of the day was made with cabbage, parsnip, celery, apple and pear.Ingredients for juice 1 It was a lovely bright green colour and tasted rather pleasant.  I would definitely make this one again.Juice 2 Juice number 2: half a pineapple, half a lemon, celery, red pepper and cucumber.Things for juice 2 Not as good as juice number 1 but OK.Juicing peppers Juice 2 made 2 large glasses. I drank one immediately and put the other in a thermos flask with some ice as we were out for the afternoon and early evening.  Juices are best drunk immediately but I took one along so I didn’t give in and have something else.

I feel OK after my juice fast.  I am quite tired and cold but that will be resolved by an early night.  I do feel very pleased with myself for sticking to the juice fast.

Feeling Juicy

Today has been all juicy.  Well, nearly all juicy which means it was nearly all raw too.

I bought a new tea to try – Yerba Maté – which apparently helps curb your appetite.  I have this cute little gadget for making tea with loose leaves without the hassle of a teapot.  You squeeze the handle to open the scoopy seivey part and put the tea in.  Then you just put the tea scoop in the mug and add boiling water.  Very easy.

Tea scoop I was meant to feel less hungry and more alert.  I can not swear that I did but possibly.  Yerba Mate teaJuice for breakfast made with half a medium sized watermelon and a large handful of spinach just picked from the garden.
watermelon and spinach That was all, 2 simple ingredients.  It tasted ok but looked weird, as if it was separating which was slightly off-putting.watermelon and spinach juice I worked from home today and here was my happy view from the kitchen window – 2 chaps hard at work clearing ornamental shrubs, flowers and millions of weeds to make way for vegetable domination 🙂clearing the garden I was hungry so had an apple.Apple with bite For lunch I came over all juicy again.  I have some new kitchen gadgets to share with you and this is one of them – a Nut Mylk Bag, or in this case, a juicing bag.  The lime is there purely to add a sense of scale.Nut mylk bag I gathered a selection of vegetables; a whole spinach from the garden (LOVE that spinach, it’s so green and so good), a spring onion, a cucumber, a garlic clove with skin left on, a red pepper, a bunch of coriander and 2 tomatoes.veggies for lunch Chopped them up and put them in the blender.jug full of veggies Then poured them in to the nut mylk bag which I held over a large jug while I squeezed and pressed all the juice out.  All those vegetables made just over 500ml juice.Makinf veg juice It was very dark green with a frothy top.  It tasted much better then I was expecting and it even smelt good so that was an easy to drink and enjoyable green juice.veg juice

So what did I do with the pulp?  Compost it?  I should have done.  I spread it on a dehydrator tray and dehydrated it for a few hours.  The plan was to make crackers.

Eventually it turned in to this!veg pulp dried Guess what?  It tasted as revolting as it looked!  I had planned to spread it with half an avocado and some tomato for supper but after one small taste, it went straight in to the bin.  Yuck!dried veg pulpI snacked on a pear in the afternoon and then another as I was feeling very hungry.

Pear For supper I was feeling more smoothie than juicy.  So I got out some of my favourite super foods and made the best chocolate milk shake ever.  I could live on this it was so amazing.

Chocolate Milk Shake

Ingredients (serves 1)

1 banana
1 tbsp Tahini
1 tbsp Udo’s oil
1 tbsp Carob
1 dsp Maca
1 dsp Lucuma
1/4 tsp Crystal Manna
A generous slug of coconut milk

Method

Chuck it all in the blender and blitz until smooth

Liquid Day

I have been in a stressy stodgy funk for a few days.  Not sleeping well which makes me tired which makes me eat garbage which makes me feel bad which makes me feel stressed and so it goes.  On and on.  Having eaten my weight in biscuits yesterday (they were provided and laid out on the table, just in front of me, during a 5 hour workshop) and then a curry in the evening, I decided something drastic had to be done.

I committed to just having smoothies and juices today.  And teas.  I took a mug and a selection of teas to work that I knew I could enjoy without milk.  I didn’t drink all those teas but I enjoyed 3 mugs during the day.  Important for staying well hydrated.

Harry has been staying for a couple of days which we have all enjoyed very much.  I don’t usually eat anything until I get to work but as I was going in much later today and because I thought Harry may be hungry, I made 3 small smoothies with 1 large mango, 1 cup of blueberries, 2 tbsp chia seeds and 1 large scoop vegan protein powder.3 small smoothies Obviously they had to be enjoyed whilst wearing 3D glasses

I did have a skinny latte on the way in to work which I would have been better off without but it was just the one all day.

At lunch time I went to Borough Market.  I was so excited when I saw these as I thought they were Alphonso but they are a different type.  I bought 2 to try and will let you know what they are like.

Kesar Mangoes The Smoothie Bar was open today so I had a wheatgrass shot and a green juice which was made with apple, celery, parsley and something green and leafy.  It was very good.Wheatgrass and green shot A close up of the previous shot?  No, I did actually have 2 of each.  They sell the juice with the wheatgrass in it but I really dislike wheatgrass so I have it separately so I can just chug it down and then enjoy the juice. I didn’t think one juice would be enough to get me through the afternoon so I had 2.Another green smoothie

What is this?  Is it a bike?  Each of the 8 “cyclists” was pedalling which jointly moved this contraption along.  This picture was taken at the end of London Bridge as they turned right in to Tooley Street.  They seemed to be enjoying themselves.

All put in to the blender and blitzed until smooth.  I have not had garlic or tomatoes in a smoothie before and was rather dubious.  It actually tastes ok, a bit like a gazpacho.  Not amazing but drinkable.  Tomato Smoothie

I feel very pleased with myself for drinking so lightly today.  Phew – I can do it 🙂

An Outside Day

Today was an outside kind of a day.  It would have been a waste to have spent today inside so sympathy to everyone who had to be inside.

Several cups of tea in my gardening mug were enjoyed in the early morning sunshine while I measured and designed and planned.  Grand Designs indeed.  There is the small matter of financing such plans and persuading my vegetable disliking husband to give up a large part of the garden to vegetable production but a girl can dream.  And plan.  And scheme.The Lawn RangerThen time to actually get on with some work.  I planted out the leeks

So lots of exercise today as I spent about 6 hours gardening plus walked for an hour.  My meals were all very healthy but I did have a huge bowl of granola and yogurt in the afternoon as I felt really hungry so that was annoying.  Hopefully calories expended equalled or were less then calories consumed.

Special People

Another sunny day – yippee.  I was straight in to the garden today before I even had a cuppa.  I couldn’t wait to get going.  Unlike others in the house this morning who were quite content to stay inside.

Harvey and Beryl 1 I have such big plans for this part of the garden.  They involve a fruit cage and a new greenhouse.  But for now, this overgrown area has had a section cleared and I planted out 2 types of French bean.Clearing a veggie garden One will be yellow and the other green.green beans with roots 2 types of French beans I realise I may be unusual in choosing breakfast items from my vegetable garden but that is what I did today.  I was inspired by spinachspinach in garden and beetroot.beetroot in gardenI use the leaves and bulb of the beetroot.

Beetroot leaves and spinachI feel healthier just looking at this traffic light array of colours.  I love the dark green with the bright orange of the orange and the deep orange of the Aplhonso mango.  Plus obviously the redness of the beetroot.

Green, orange and red I blended it together with a heaped tablespoon of tahini and coconut water.  It was absolutely delicious.  Sweet and earthy and a gorgeous colour.  Harvey and I both enjoyed a glass full of this one.Sunshine Smoothie After a few more hours in the dehydrator, these nut and flax crackers finally dried out sufficiently.  I wanted to take some out for lunch today.  We were all contributing food and I was taking cheese, fruit and crackers.Crispy flax crackers Still warm from the dehydrator I couldn’t resist spreading some butter on a couple.Flax cracker with butter 2 Well, I had to make sure they tasted OK and these were a funny shape so not suitable for public consumption 🙂 . I was impressed.  They have a lovely flavour and finally, after many hours of dehydrating, a crispy texture.  Very good and worth waiting for.Flax cracker with butterWe headed off to South London for lunch.  To an area I lived in for many happy years and where some very special people we know still live.  I was meeting my sisters and their families at Simon and Sarah’s, two very special people to us all.  Simon was originally a friend of my sister Lucy’s and we all got to know him very well because he was our lodger for a while.  Lucy and I also worked with him twice.  Our Mother adored Simon and used to ask one of us, any one of us, to please marry him.  Well, none of us took any notice and Sarah married Simon.  We were all really looking forward to meeting up at their house for a get together.

We all contributed some dishes which meant we had a lovely mix of food on our plates.  I had vegetable couscous, roast chicken, guacamole, onion bahji, cherry tomatoes, cheese tortillas, salami, green salad and a salad made up of olives, peppers and tomatoes.  Deeelicious!  I also had some parma ham and potato salad later.  All enjoyed with a  couple of large glasses of Pimms.

After eating we relaxed in the sunshine.  So many years to reminisce over and tales to tell and catching up to do.  It has been quite some time since so many of us were together.At Simon and Sarah's Pudding time 🙂  Sarah had made a lovely strawberry pavlova and Lucy brought a fabulous chocolate cheesecake which came from COOK.  I confess I had another sliver of the cheesecake and a little slice of a lemon tart too. Pavlova and chocolate cheesecakeThis tasting box of Green & Blacks chocolates was a good find.  I bought this at Ocado and it is a selection of all their flavours in small bars and it comes with tasting notes.  I think there were 2 (may be 3 but I think 2) bars of each flavour and they were enough for a couple of mouthfuls of each of their wonderful chocolates.  I also had a small amount of cheese.

So diet wise not the best days eating.  But in my defence I didn’t go crazy and all I have had since is some Rooibos tea.  The food today was lovely.  But the best thing about today was all the special people I spent it with.

In Recovery

I was feeling much better today and the glorious sunshine streaming in to my bedroom got the day off to a beautiful start.  I made a very green, green smoothie for breakfast which I started 2 hours before I had it by soaking 1 tbsp hemp seeds and 1 tbsp coconut in some water.

hemo seeds and coconut After 2 hours I added half an avocado, a stalk of celery, one lime and a large handful of kale plus some mint, parsley,  coriander and thyme.green ingredients I confess this was not very pleasant but I drank it and thought about the healing powers of it all.green smoothie 25-5-13 I have been wanting to make something using my Excalibur Dehydrator and I made some aubergine crisps first.  The point of dehydrating food, apart from preservation, is to maintain enzymes and nutrients in food by keeping them raw.  Dehydrators do not let the food get hot enough to kill the enzymes so they are still considered raw.small aubergines I made a marinade using 1 tbsp each of avocado oil, soya sauce and maple syrup and a sprinkling of paprika and salt.  I was inspired by this recipe on Rawmazing.Ingredients for marinade I mixed the marinade ingredients in a bowl, added the aubergine which I sliced very thinly and set aside for about an hour.marinade After an hour I placed the aubergine on the dehydrator trays.aubergine slices on tray I put them in on 115 ° for an hour and then turned it down to 105 °.  Dehydrators are very simple.  There is a heating element at the back and a fan which blows the air over the food on the trays which dries it out.  There is a door which goes on the front to maintian the temperature.aubergine crisps in dehydratorAfter about 10 hours some slices of aubergine were crispy but the thicker bits were still chewy.  So I have left them dehydrating a little longer.
Aubergine crisps Next on the dehydrator menu were some nut and flax crackers.  I used this recipe from The Rawtarian.  I had to soak the walnuts, almonds and sunflower seeds for an hour.nuts in jug Mixing the nuts with the onion and tomato was a real challenge and both the VitaMix and my blender struggled.  After a lot of perseverance it was virtually done but some lumps remained.  I decided that rather then risk breaking one of my machines I would enjoy the texture.cracker mixture The next challenge was spreading the mixture thinly on a dehydrator sheet.  It stuck to everything and kept lifting up but I got there in the end.spread crackers on sheet After about 6 hours they were dried out on top.After 6 hours dehydrating I turned them over and put them back in the dehydrator.flip them overAfter 8 hours in total, they are still not crunchy so they are still dehydrating. They do taste really good already and I am looking forward to eating them tomorrow.

While all this food was dehydrating I made a very simple salad for lunch.  Approximately 5 different salad leaves, coriander, mint, tomatoes, celery and half an avocado.

salad 25-5-13 I mashed the avocado with a small amount of apple cider vinegar and salt and just mixed it in to the salad.  That was it.Salad 15-5-13 I had been intending to eat the aubergine crisps and nut and flax crackers with some guacamole or humous I planned to make.  But I had a bit of a relapse in the afternoon and the dried goods were not dry enough.  So I had a bowl of granola with probiotic yogurt and then spent some time in the garden in the very lovely late afternoon sun.

I planted out my little sweetcorn plants which are looking very healthy.  I just hope the snails and slugs don’t get to them.  I also planted some beer traps as I have so far lost purple sprouting broccoli, Brussel Sprouts and cabbage 😦Sweetcorn and nasturtiums planted out I love the light of the early evening sun.Sun beside the apple tree Blueberries.Blueberries to be A strawberry in the making.A strawberry in the makingHarvey had a sore throat and I was still feeling delicate so I made us a hot drink with water, lemon juice, honey and finely grated ginger plus Goji berries.

So I have eaten quite well today, apart from the granola.  I nibbled quite a bit of the nut and flax mixture so no idea really how many calories I consumed.  At least they were nutritious calories.  I do hope the dehydrated food is ready before I go to bed!
