I had a ridiculously stressy and busy day today. But I am feeling pleased with myself because this was exactly the type of day that sends me running for the chocolate and latte and cake and then another latte with a Brownie. I managed to eat all healthy and all raw (apart from herbal tea and one breakfast tea) all day. Phew.
It helped that I had made breakfast and lunch the night before.
My work colleagues were not impressed with the look of my breakfast. “What is that pot of gloop”? one asked. They were more amused than I was that it was frozen solid. I made this delicious breakfast pudding last night and popped it in the freezer, hoping for a kind of ice-cream consistency in the morning. It didn’t work out like that though. It was like a brick.
After a couple of hours it was edible. It was delicious. Last night I soaked 1/4 cup of sunflower seeds and 1/4 cup of pumpkin seeds in water. After a couple of hours I rinsed them and then blitzed them with half a pineapple and a banana until completely smooth. The main flavour was pineapple because it was at the perfect stage of ripeness. It did take quite a lot of willpower to not just guzzle it there and then. It was really good.
For lunch I enjoyed the salad I took in.
Sugar snap peas, radishes, cherry tomatoes, large tomatoes, celery, spiralled carrots and cucumber and a generous slug of the Martha Stewart dressing I made the other day. Lovely.
I am going to do this more often – wash a selection of vegetables and place them in pots in the fridge so it is easy to make the next days lunch. I have already made tomorrow’s lunch and it literally took just a few minutes 🙂
I really wanted something chocolatey so I tried to recreate the amazing chocolate milkshake I made the other day. So out came the Carob, Lucuma, half a melon, spinach, kale, celery, avocado and spirulina.
I didn’t add any liquid as I wanted a thick milk shake consistency and the melon was juicy enough.
Version 1 was……… revolting!! it really was.
So out came the cavalry; cacao powder, Tahini and banana which are pretty much guaranteed to make a smoothie more edible.
Much better 🙂
