Fruit-Full

Ever since I came out in a bad rash at the beginning of the year, I have had a very sensitive skin.  The Doctor explained my immune response to whatever it was I reacted to could take 2 months to calm down.  But it seems to keep flaring up which suggests to me that I keep eating what I am reacting to.  I think it may be gluten.  For a very long time I have noticed that bread makes me feel bloated, gasy and very tired so I do not eat much of it.  But wheat in any form and oats are also making me feel tired, foggy headed and more recently, have very dry skin, spots and blotches.  So today I decided to eat very simply which meant raw fruits and vegetables.  Well, I think it’s the wheat and oats so I need to give them up and see if I feel better.

Today was bright and sunny to begin with but rather cold.sunny London 24-2-15 I took half a small watermelon and some grapes to work for breakfast.  I also had a large soy milk latte.black grapes and watermelonI popped out to Covent Garden at lunch time – less than a 5 minute walk from the office  which is great.  Nil point for helpfulness from the Apple store though.

I definitely feel more alert and energetic than I did yesterday which is a good start and not at all hungry so I am going to try consuming just fruits and veggies again tomorrow.  No improvement to my skin yet but it will take a few days for that to improve.

Disasterama

I always seem to sleep badly on a Sunday night – why is that?

Luckily I had my wits about me last night and I made a chia pudding to take in to work.  Half a cup of raw sprouted oats, 1 tbsp chia seeds, 2 heaped tbsp Co Yo and almond milk, stirred and left in the fridge.  In the morning I added a fresh mango.breakfast 23-2-15 I love this.  Sweet and juicy fruit and creamy coconutty chia pudding makes a great start to the day.mango and chia pudding Lunch was a salad bowl from wholefoods.  I should have bought a bigger one because I still felt hungry afterwards.wholefoods salad box I had some green tea and cashews.green tea and cashews Then some popcorn and 2 apples.propercorn This burnt offering was supper.  Disasterama!  It was meant to be buffalo style cauliflower which I was really looking forward to making but my ‘batter’ slipped off and the cauliflower burnt.  I was so disappointed.  However, the bits that aren’t burnt tasted good so I shall tweak the recipe and have another go another day.burnt cauliflower

Chips Are Vegan

We woke up to a very cold and frosty but bright and sunny morning.  I do love a sunny morning.  I also love it when the little fella sleeps in beyond 7 am and when I have a fab friend staying so all was well with the world when I woke up.  Being an emotional over eater, that also means it is easier for me to make sensible food choices, which I did – apart from some chocolate. I made the men folk a sausage and egg bap with a freshly squeezed juice but I just consumed plants for breakfast.

I began the day with a large juice made with orange, apple, cucumber, carrot, persimmon and fennel.orange coloured juice Followed by a lovely smoothie made with 2 frozen bananas, a kiwi fruit, 1 tsp blue-green algae and coconut water, topped with cacao nibs.  It made 2 of this size and I enjoyed them both.green nana ice-cream We had a lovely walk over the road.moss and wood stack green moss BJ and H in woods It was very muddy!muddy feet A snack of humous and celery kept me going until lunch time.houmous and celery When I made a stir fry with noodles.SOBA needlesBroccoli, cauliflower, peppers, onions and mushrooms, stir fried in coconut oil.

Chinese New Year 2015

I have had a fun and busy and not the best eating couple of days!  Friday weigh day was a no change result which I was partly relieved about as I did minimal exercise last week and ate too much on some days.  Weighing the same is better than a gain!

Yesterday I played tennis for the first time in about 9 months and loved it.  I had got my timings wrong and ended up with 5 minutes to make breakfast before I went so I made a very quick smoothie with 2 frozen bananas, pineapple and a persimmon.  No time to add anything else.  It tasted good and provided energy for the tennis but not long after.

banana, pineapple and persimmon Lunch was a very quick and easy bowl of pasta.Tagliatelle I made a very simple sauce with mushrooms and tomatoes and served it with pea shoots and cucumber.pasta and salad Unfortunately I had a bit of a Nutella and toast-fest in the late afternoon.  I blame a bad night’s sleep, an unfortunate incident with some laundry detergent that was actually washing up liquid and poor meal planning.  Harvey decided that to help me protect his jar of Nutella, he would hide it in his room – that works for me!

We woke up this morning to a very unexpected flurry of huge snow flakes.  I hadn’t seen it  forecast so was really surprised.snow I was anxious too because I was expecting my fab friend BJ to be arriving from Leicestershire and didn’t want snow to stop play.  Luckily it didn’t and he arrived safely and on time.snow Feb 2015I have mentioned this before and I am going to mention it again.  If you like chilled water, keep a jug in the fridge with some fruit and veggies in it to make it really refreshing.  This blend, of lemon peel, an orange and some cucumber is excellent.

I am going to have to be ultra good again from tomorrow.  It is one of the situations I find the hardest to eat well in; everyone around me is tucking in to food and drink I am trying to avoid and there were no fruit and vegetable alternatives.  I really enjoyed myself but do feel very uncomfortable now as I ate far too much but it was a great day.  Thank you to BJ for visiting and to Alison and Andrew for having us all over.

Pancake Day – Late And Vegan

Harvey was very disappointed to have missed pancake day this year so I promised him pancakes today.  Not for breakfast though!  I have 2 days off work to spend with Harvey as it is half term so I was having a little lie in and reading the magazine Abel & Cole left me last week.  There was a recipe for celeriac rosti which sounded easy.  I had a celeriac languishing in the fridge so this seemed like a good way to use it up and I thought we could have it for breakfast.

celeriac on recipe You grate half a celeriac.grated celeriac Mix it with egg, garlic, herbs or spices, salt and pepper.  I have just noticed the recipe says to add flour but I missed that bit out (accidentally) and they worked really well!making rosti Then fry it gently.  Super easy.egg celeriac rosti Harvey had his with garlic sausage and he really enjoyed it.  I try and make sure he has fruit and/or veggies with every meal so that was veggies with breakfast sorted!

I adapted the recipe to make it vegan by substituting the egg for a vegan ‘egg’ made by mashing a banana and mixing in 1 tbsp chia seeds.  I went and had a long bath while the chia seeds swelled up.banana chia As mine were sweet rostis I didn’t add the garlic, herbs, salt or pepper.  I just stirred in the grated celeriac.rosti celeriac banana Then fried them in coconut oil.cooking banana celeriac rosti Served with persimmon it was very good.  Frying banana intensifies the flavour and the banana flavour went very well with the celeriac.persimmon and rosti Celeriac Rosti

Savoury Style (serves 1)

1/4 of a celeriac, grated
1 egg, whisked
1 clove of garlic
Sprinkling of herbs (I used thyme)
salt and pepper
1 tbsp flour (optional)
oil for cooking

Whisk eggs in a bowl and add the garlic, herbs, salt and pepper
Mix in the celeriac
Make in to 3 large balls and pace in frying pan
Flatten and fry for a approximately 2 minutes each side

 

Sweet and vegan style (serves 1)

1/4 of a celeriac, grated
1 banana mashed
1 tbsp chia seeds

Mash the banana and add the chia seeds and set aside for at least an hour
Mix in the celeriac, shape in to balls and fry as above

They are very easy and taste lovely.  The magazine recommended making them to serve with roast meat but they were excellent for breakfast too.

Sweet And Snacky

I worked from home today which is always enjoyable because I avoid 3 hours commuting and I can prepare food in my own kitchen.

I had a good nights sleep last night which I think is partly because I went to bed having eaten lightly, so I wasn’t wasting valuable energy digesting a huge meal.  These looked tempting, sitting there in the sunshine.

Persimmon bowl I was in the mood for a smoothie so I made one with persimmon, blueberries, banana and pineapple with coconut water and a spoonful of mixed nut butter.smoothie 18-2 nut butter Really good.  So creamy and full of sweet flavours.smoothie 18-2 I couldn’t get in to my kitchen until 3pm as I had an electrician working in there so I snacked on some coconut chips, almonds and dates.nuts coconut Then some grapes.grapes in green bowl By 3pm I was too busy with work to cook anything other than a bowl of ready made soup.Biona lentil soup 18-2 Not as good as home made but close enough.hearty lentil soup 18-2 More snacking in the afternoon.  I ate more coconut chips later as I was getting frustrated with how much work I had to finish this afternoon.  They are full of maple syrup and calories so should be avoided but I do struggle to resist such things when I now they are there.coconut and dates As I had eaten too many sweet things today, I made a very simple supper.  I sliced up a butternut squash and roasted it until it was soft.  I chopped up some cucumber, black grapes, tomatoes and an avocado.chopped veggies 19-2-15 I made a dressing I had seen Nigel Slater make; the juice of 1 orange, 1 tbsp of olive oil, salt and pepper.  I whisked the dressing together and added the just chopped veggies and grapes and stirred gently to mix.raw veg in dressing I chopped up the roasted butternut squash and mixed in with some quinoa I had previously cooked.quinoa and roasted squash Served with a simple garnish of fresh mint and coriander.dinner 18-2-15 2 A simple but delicious supper.  I enjoyed every mouthful.dinner 18-2-15

Colourful London

I hopped off the train this morning and London was bright and sunny with the biggest bluest sky I have seen for a very long time.  It was very uplifting.

The Best Daal Ever – Shame It’s Not Vegan

I ate so much plant food today and I feel great about it.

Breakfast was a huge bowl of fruit.  Nothing more.  Just pure, sweet, juicy fruit: black grapes, blueberries, persimmon and pineapple.fruit for breakfastI treated myself to a lunch at Dishoom, the amazing Bombay Cafe style restaurant near the office.  I came here with my colleagues around Christmas time and have tried to come back several times since but it is usually full but we were lucky today.  The menu is completely different to your usual Indian which makes such a refreshing change.
Dishoom 3 This was a disappointment.  This is the ‘Far Far’ which is described as “a sort of carnival of snackery, half way between crisp and cracker.  Colourful, lemony, salty.” Well, you can’t deny the description but it was like a crazily coloured Quaver.  Not my thing.puffy things This was totally my thing – okra fries.  Total and utter okra perfection.  Salty and crispy, rather then gelatinous and sloppy like they often are, I ate them as if I had not eaten for months.  I popped those little green fingers in as quickly as I could because they were so delicious.  I need to eat these again.fried okra I also had the black house daal and roomali roti (the bready thing) washed down with a pot of Darjeeling.Dishoom 2Every mouthful was amazing but the daal is very creamy and I suspect it contained dairy cream and ghee (clarified butter) so not good on a vegan lifestyle.  So I really enjoyed it but probably won’t have it again but I can’t promise though because the flavours are sensational and the spicing is perfect.  It makes your mouth jangle but not burn.  Genius.
Dishoom 1 I wasn’t very hungry in the evening so made a supper of veggies.  I stir fried an onion, carrot, leek and yellow pepper.  I was asked how I use my coconut oil – the answer is like this.  It is a saturated fat and behaves like butter i.e. it is solid at room temperature and melts very easily when heated.  It is completely colourless but does taste and smell of coconut.  I always use it when frying anything.

Coconut oil has many reputed benefits which are easy to find on line, as are articles denying those claims.  But I like the taste and don’t use huge amounts so I enjoy it when I do use it.supper 16-2-15 The stir fried veggies had nothing added other then salt and pepper and the oil.stir fried veggies 16-2-15 I served them with a large portion of guacamole I made with an avocado, a very large tomato, the juice of half a lime and salt and pepper.  Simple but delicious and full of lovely nutrients.guacamole 16-2-15

I didn’t manage to be vegan all day but I did eat loads of plants so I am happy with that.

2 Super Stores

I am not a fan of super stores or even large supermarkets and try to avoid them.  I either order online or shop locally, favouring farm and independent shops.  But sometimes you have to pluck up the courage, steel your nerves and face them.

Before I reflect on my super store ordeal, I will show you some other things I have been doing in the past couple of days.  On Thursday evening I accompanied my manager to Leicester Square.M&M store LSq The Odeon in Leicester Square often hosts film premieres and on this particular night they were hosting the premiere of 50 Shades of Grey.  I did read the book, was appalled by how badly written it was but wished I had written it as the author has made so much money from it.  Who would have thought one badly written book could make so much money and become such a success!  Having wasted my time and money on book 1 I didn’t bother with 2 or 3.50 SOG LSq Anyway, I enjoyed the atmosphere but had to leave before any of the ‘stars’ arrived.  We were offered free tickets to watch the film but neither of us were able to go so I headed home.  50 SOGFriday morning is weigh day for me and I lost another pound which I was grateful for after 3 nights of drinking and a couple of unhealthy snacks.  In total that makes 17 pounds this year 🙂

On Saturday morning I began the day with a really delicious banana ice-cream made with 2 frozen bananas, 12 almonds I had soaked overnight, 1 tsp spirulina and almond milk.  It was excellent.  Harvey and I then set off on our shopathon.  We began in Tunbridge Wells and completed all errands and shopping targets in time for lunch.  I was introduced to Basil’s in Tunbridge Wells 2 weeks ago by Lucy and this was my third visit!!!

They were very good at looking up the ingredients of their salads and they confirmed these three were all vegan: couscous with lots of finely chopped herbs, lentils with roasted veggies and a cucumber salad.  It was excellent.
Basil salad trio Harvey had a quiche and salad and then the chocolate covered flapjack I have treated myself to during the previous 2 visits.  I managed to restrain myself this time.H in Basils Just look at how tempting that is!  I was too full from my huge salad so it was easy to resist.  I just had a soya milk latte instead.chocolate covered flapjack H's We then hit the super stores: Costco and Ikea.  Actually Costco is relatively quick to go round because although the store is huge they only stock a limited range of products so you can get round quickly and I found lots of goodies.  We then went to Ikea which takes forever.  I haven’t been for a very long time but soon remembered how quickly my initial enthusiasm for the place wanes and it is hard to get round quickly.  To increase my frustration I couldn’t find what I was looking for but we did at least get the things we needed for Harvey.H in Ikea Some of the goodies I bought in Costco included a tray of persimmons, tray of persimmons a HUGE jar of coconut oil.  Look at the size of it compared to my usual brand.Caringtons coconut oil small cucumbers These are incredible, as are the calories in them so this will be a once in a lifetime opportunity!toasted coconut chips We didnt get home until nearly 9pm so I had a bowl of granola with coconut yogurt, a persimmon and a handful of those awesome coconut chips.granola, coconut chips It was so good I had it all again which is way too much sugar to consume.ganola, persimmon I still felt full this morning so I just had a juice for breakfast.  This made enough juice for 2 of us.juice ingredients 15-2-15

I had a very relaxing day, pottering about, clearing out and tidying up cupboards in the kitchen.  I am removing and re-arranging some of the units, painting it white and replacing the very old lino.  So not a major scheme of works but enough to brighten it up. The spice drawers were well sorted and organised.spice jar I am frustrated with this section.  I have seen the exact units I want at ‘Muuto’, a Danish design/furniture shop but it is too expensive so I was hoping Ikea would offer a much cheaper alternative but sadly not.  So for now this shelving until will have to do.  It is too tall, too narrow and too dull for what I need but it is practical and better than nothing.jars on small shelves I do like my new storage jars though.new Ikea jars For supper I made a Jamie Oliver recipe for ‘Keralan Veggie Curry’.  As per usual I adapted his recipe to what I had and added extra vegetables but to see the original, click here.

Here is my version.

Keralan Vegetable Curry

Ingredients (serves 4)

1/2 a cauliflower, cut in to slices about 1 cm thick
Spring greens or other green leafy veg (optional)
2 tbsp oil
1 tsp black mustard seeds
1 tsp fenugreek seeds
1 tsp turmeric
1 small handful curry leaves
1 thumb sized piece of ginger
2 cloves of garlic
6 spring onions
1 fresh chilli
1 large bunch fresh coriander
2 ripe tomatoes
1 x 400g can coconut milk light
1 x 400g can chickpeas, drained and rinsed ( I had run out so used flageolet)
1/4 of a large pineapple, peeled and chopped roughly
1 lemon or 1 lime
1 cup brown basmati rice
4 cloves

Method

1. Slice the greens and set aside.
2. Slice the cauliflower and heat a griddle pan.
cauliflower and cabbage3. Place the cauliflower in the pan and cook until lightly charred on both sides.
cauliflower in griddle pan4. Cook the rice according to instructions and add the cloves as the beginning of the cooking time (remove cloves before serving)
5. Pour the oil in to a large casserole pan, heat up and then add the mustard and fenugreek seeds, turmeric and curry leaves
6. Blitz the ginger, garlic, spring onions, chilli and coriander until very finely chopped and add to the oil and spices
7. Roughly chop and add the tomatoes, spring greens and any other vegetables you want to add (today I added sweetcorn and sliced mushrooms too)
8. Blend the pineapple (or you could chop instead) and add to the pan with the coconut milk, the chickpeas, the girdled cauliflower and salt and pepper.
9. Add the juice of the lime and cook gently for 10 – 15 minutes until the vegetables are cooked.

More Meanderings in London

I have had such a busy few days, both at work and outside of work.  I have eaten reasonably well considering but not as well as I should have done.  Unusually for me these days, I have had a couple of glasses of wine for the last 3 nights so that will not help weight loss this week but sometimes such things are needed.

Monday began well with a tub of overnight oats and chia seeds with banana, taken in to work.banana and chia pudding I didn’t eat much on Sunday and was very hungry all day.  Luckily the cafe at work sold apples and a seed and nut bar which was quite good.9 bar I eventually had time to go out and popped in to Pure which is the nearest food place to the office.  I haven’t been in there for a while and certainly not while I am trying to eat like a vegan so was delighted to notice how clear their labelling was.Pure Bean Beanie I wanted some soup and their vegan offering was a Thai green curry with lentils which they let me sample.  It was fabulous.Pure sample So I returned to the office with a green juice, Bean Beanie wrap and lentil Thai green curry soup.  A feast worthy of any vegan wannabee.Pure 9-2-15After 2 large glasses of wine with my Dad and sister Lucy I headed home with some fruit to munch on the train.  I ate all the mango.

classic fruit salad On Tuesday I had breakfast at home before work; porridge made with almond milk, mashed up with a banana for sweetness and topped with a blood orange, some blueberries and a teaspoon of peanut butter.  porridge fruit and nuts I worked in a different office on Tuesday in Southwark and went to Leon for lunch.  Not overly impressed.  I disliked the green smoothie and the bean wrap was just not substantial enough.Leon wrap and juiceHaving eaten hastily I went for a wander as my location was close to the Bankside office we moved away from just over a year ago.back of Tate Bankside statue near Albion I have missed Albion so I popped in.Albion frontage I shouldn’t have because I bought a very large cookie.  It was lovely but should definitely have been left on the shelf.Albion biscuit In the evening I walked over to Fleet Street.  Past the huge building housing the Tate art gallery.Tate BanksideOver the Millenium Bridge to the North side of the river.
wobbly bridge I met my Dad at his hotelApex elephant and we hopped in a cab to Salt Yard on Goodge Street.  It is an excellent tapas restaurant but not very vegan friendly so I avoided the meat and fish and instead had 3 dishes with dairy in them.  The dishes are all small but three was about the right number.salt yard menu A lovely light salad made with blood orange and golden beetroot with whipped goats cheese and walnuts.yellow beetroot salad Polenta with chard and mushrooms in a heavenly creamy sauce topped with Parmesan.polenta and chardAnd chips – the only vegan thing on the menu assuming you resisted the mayonnaise – I didn’t!

Today I was ok with my eating.  Porridge for breakfast, a Wholefoods salad for lunch, a snack of coconut meat and mango and a small tub of chocolate Co Yo.  Supper will be a jacket potato with baked beans and then a very early night!
