I worked from home today which is always enjoyable because I avoid 3 hours commuting and I can prepare food in my own kitchen.
I had a good nights sleep last night which I think is partly because I went to bed having eaten lightly, so I wasn’t wasting valuable energy digesting a huge meal. These looked tempting, sitting there in the sunshine.
I was in the mood for a smoothie so I made one with persimmon, blueberries, banana and pineapple with coconut water and a spoonful of mixed nut butter.
Really good. So creamy and full of sweet flavours.
I couldn’t get in to my kitchen until 3pm as I had an electrician working in there so I snacked on some coconut chips, almonds and dates.
Then some grapes.
By 3pm I was too busy with work to cook anything other than a bowl of ready made soup.
Not as good as home made but close enough.
More snacking in the afternoon. I ate more coconut chips later as I was getting frustrated with how much work I had to finish this afternoon. They are full of maple syrup and calories so should be avoided but I do struggle to resist such things when I now they are there.
As I had eaten too many sweet things today, I made a very simple supper. I sliced up a butternut squash and roasted it until it was soft. I chopped up some cucumber, black grapes, tomatoes and an avocado.
I made a dressing I had seen Nigel Slater make; the juice of 1 orange, 1 tbsp of olive oil, salt and pepper. I whisked the dressing together and added the just chopped veggies and grapes and stirred gently to mix.
I chopped up the roasted butternut squash and mixed in with some quinoa I had previously cooked.
Served with a simple garnish of fresh mint and coriander.
A simple but delicious supper. I enjoyed every mouthful.
I now have 2 days off to look forward to – yippee
Enjoy your time off. I hope all went well with the electrician in the kitchen. I love the idea of the squash and quinoa. I used left over quinoa with some spinach and red peppers to it as well for the colour warmed in the frying pan with lemon and minced garlic. Adding the squash would be another colour and more veggies. 🙂
