Heal Thyself

I am no phsyician but I do have a reasonable idea of what to do to provide my body with super nutrients to try and heal itself.  I seem to have succumbed to a stomach bug which has been very unpleasant.  I was initially worried in case it was food poisoning from the Giggling Squid but I am confident that is not the case.  I will spare you the details but I have been feeling extremely unwell (cold, shivery, headachy and craving sleep) and unable to retain what I eat.

On Thursday I had nothing except water and herbal teas all day.  I braved a smoothie in the evening but it didn’t last long.

Today I woke up feeling worse then ever.  I put 1 heaped tbsp each of raisins, goji berries and almonds in to some water to soak for when I felt ready to eat them.  I drank some green tea and that seemed to help settle my stomach.

goji berries, rasins and almonds I recently blogged about a banana and apple breakfast pudding.  I remembered it being the type of taste and texture I might manage so used it as my inspiration today.  I put in to the blender the almonds, raisins, goji berries and the water they were soaking in.  Plus a banana and an apple.

It turned out thick and smooth and very light.  In the VitaMix the apple seems to whip us so it is a very light texture.  Just the thing for this morning.

I also made sure I took some supplements.  I do think you get what you pay for with supplements.  Good quality supplements are expensive but I am convinced of their efficacy.  I try to take the multivitamin and mineral every day.  Today I also took some of the Glutagenic which is a powder I mixed in to my breakfast pudding. It is good for your gastrointestinal lining.   I also added a light sprinkle of Spirulina.  Spirulina is rich in protein and many nutrients and also has anti-inflammatory properties which I thought may help.  However, it tastes disgusting so I can only ever manage a small amount.  I also took some Psyllium Husk to help sweep out my intestines and the mucilage within it would hopefully help remove toxins
supplements I began to feel more human and so cooked a light lunch.  I didn’t fancy anything raw so I gently cooked some mushrooms, red peppers and kale in a little butter.mushrooms, kale and pepperI served it with a 2 egg omelette.

carob milkshake 2It was made with lots of healthy things and actually contains no chocolate at all.  I blended a heaped tablespoon of tahini with a banana and a desert spoon each of protein, maca and carob powders.  The Maca gives it a sweet vanilla flavour.  I added it because it is supposed to help mental clarity, ease cramps and balance mood.  The carob gives it a chocolatey look and taste.  The bonus of carob is it is rich in antioxidants and phytonutrients, has antiseptic and anti-bacterial properties and is allegedly helpful for diarrhoea.  The tannins in the carob help reduce acid production in the stomach and combat related ailments.superfood for smoothie I added about 1/4 of a tsp of Crystal Manna, a blue-green algae from Lake Klamath in Oregon.  The health claims of this product are impressive.  Apparently it is a nutrient dense food rich in vitamins, minerals, essential amino acids, and proteins. The nutritional benefits of Klamath Lake Algae mostly reported are increased energy levels, heightened mental clarity, improved memory and recall, relief of inflammatory conditions and an overall feeling of well-being.  I can not confirm or deny these claims but in case they are true, I took some.Crystal manna I do not know whether this glass full of chocolatey yumminess will live up to its claims.  I hope it does.  Even if it doesn’t, it tasted wonderful.  A glass full of thick chocolate you can enjoy without feeling guilty.Carob milkshake

The Giggling Squid

The day started well with a smoothie made with kale, banana, frozen blueberries, low fat natural yogurt, chia seeds, plus I added 2 tbsp oats and a sprinkle of Spirulina.

smoothie 22-5-13 Unfortunately this then happened.Monmouth almond croissant It accompanied the coffee from the absolute Mecca of all things coffee – Monmouth.  Bliss.Monmouth Coffee perfection Lunch was a pot of pulled pork from EAT which was really good.  It was served with some rice and coleslaw.  Definitely one to have again.pulled pork I left work just before 5pm which is early for me.  I picked up Harvey and dashed over to Giggling Squid in Tunbridge Wells.  We met Lucy, Emily and Charlie for a double celebration.  We celebrated Harvey’s birthday and Emily taking her last exam which means she is now finished with school.  13 years of school all done.  Over.  Finitto! She was rather happy 🙂

Lucy had been recommended ‘Giggling Squid’ and what a great Thai restaurant it was.  I recommend it if you like Thai food.  Everything was fresh and quite light.

Giggling Squid was a really good find and I will definitely go back there again.  This was taken outside a different Thai restaurant along the same street.  Someone couldn’t resist getting in!

A Birthday Bike Ride

This year Harvey’s birthday was on a Monday, which is a boring old day to have a birthday, whatever age you are.  So we had a pre-birthday on Sunday and let him have his present a day early early – a new bicycle.

It was such a glorious day we headed out to our local forest.  I have not been on a bike since October and was slightly anxious but also looking forward to the exercise and being in the forest.  Not anxious about whether I could ride my bike but anxious about getting tired too quickly.  It was all good though and we cycled around for about an hour and a half.  It was excellent actually and we can’t wait to go back.

The boys had pizza and ice cream for tea.  I had …… yup…… pizza and ice-cream !  A bad day’s eating for me as I picked too much.  Just one of those days for me but a very happy one for my special boy.

The Dinner Party

What an amazing dinner party I had the very good fortune to be invited to last night!  Knowing I was going to be eating very well in the evening I tried to eat ultra lightly all day.  I made a small portion of the blueberry, banana and cashew nut smoothie I made the other day with the addition of some fresh mint.  The cashew nuts were soaked overnight which not only makes them easier to digest but also makes them easier to blend.

sprig of mintThe mint made something wonderful even more delicious.  This has the consistency of soft serve ice cream and as the banana and blueberries were frozen, it was just like a bowl of ice cream.

I managed to spend all morning gardening and then headed off to my favourite local nursery to buy some new plants to put in the freshly weeded and dug over beds.  The Walled Nursery is in Hawkhurst and if you have never been, you are missing a real gem.  Go along and take a look and support this friendly family run business.  They have 13 Victorian glass houses and grow most of their plants on site.

Lunch was some tuna and salad.

The afternoon was spent watching Harvey play cricket and unfortunately sampling too much of the tea provided.  Oops.

And so to dinner.  A short stroll up the road brought us to Annette and David’s lovely home and stunning garden.

Drinks on the terrace Our host had done nearly all the cooking and I was touched they made a spinach and apple juice as an appetiser, knowing how fond I am of my green juices.  It was delicious and a great way to start the evening as it provided us with a boost of nutrition to aid our digestion for the wonders to come.mini green juices Brie and cranberry parcels.  Yummmmmm.Brie and cranberry parcels Fire to warm us while we enjoyed a lovely sunset.Fire in the garden In the middle of the table is the goat’s cheese and red onion bread – spectacular.Dinner table Which was eaten with relish alongside this original starter of bunny burgers.  Not only does David cook but he goes to the trouble of shooting and preparing his own rabbit.  How amazing is that?  Ticks all my ‘eat local’ boxes 🙂

The mini burgers were indeed made with rabbit plus chicken and smoked bacon, served on a bed of a pea shoots (which I completely love), with edamame, a dijon dressing and home made rhubarb chutney.  This was so good, if I am not invited back to have it again, I may camp out in their garden until I am served some.  It was original and totally delicious.Bunny burgers By this stage of the proceedings I had imbibed far more wine than was probably necessary and so I can not remember the charming description our main course was introduced with.  There were little sautteed potatoes, a green vegetable which I think was pak choi, haddock and a very flavoursome caper and coriander dressing.  It was wonderful.haddock stackPudding time !! We had a trio of desserts.  There was a frozen raspberry mousse, a lemon tart and meringue.  It was all good but the lemon tart was off the scale of lemony yumminess.  Nothing about this exquisite slice of lemony heaven could have been improved.  Except I could have had a much bigger slice or one of my so called friends could have traded their slice with me for one of my other desserts!

Trio of desserts The meringue and cream were accompanied by a selection of berries served in this spectacular bowl, made of ice with flowers in it.  It was just brilliant.

Our wonderful evening finished with music, more wine and many more conversations with very lovely people.  What a shame such evenings have to finish but how lucky were we to have been invited at all.guitar and violin

Day In Docklands

I am never sure whether I admire Canary Wharf or despise it.  Arriving there is as pleasant as tube trains go but then I get the feeling I am just a machine.  One of thousands, being cranked up the escalator and despatched to work for the day.

Green Is Good

I dedicate this blog to green smoothies.  Partly because I made an amazing one today that I could happily eat every day.  It was quite perfect and I think even you would enjoy this one.

I picked my first crop of spinach.
spinach growing Yum.  Green perfection.spinach stack These apricots were a bit disappointing.  I bought 8 yesterday lunch time and today only 3 were edible; the others had gone rotten.apricots I had another one of the Alphonso mangoes.  Oh my – they are so perfect.  Love the green with the orange too.  I felt healthier just for looking at them.mango and spinach They went in to the blender with some coconut water, protein powder and 1 tsp flax oil.  This was green smoothie perfection.  Complete and utter perfection.  About as thick as a runny yogurt, super smooth (I blended it for a couple of minutes) and an amazing colour. I intended to sip it slowly while I blogged but it was so fantastic I practically choked on it as I could’t guzzle it down fast enough.  I think the freshness of the spinach and the perfection of the mango made this as amazing as it was.Pale green smoothie

But partly because I did not eat brilliantly today.  It wasn’t my fault !!!!!!  I was working all day in a software company in the Docklands and had not made breakfast before I went.  My journey took longer then I thought so with no time to stop I arrived hungry.  No worries I thought.  On the table were 2 platters of fresh fruit which I helped myself to.  Unfortunately they were next to platters of pastries and after a couple of hours half a Bakewell tart and half a cinnamon twist got the better of me.

On a sugar roller coaster I then over ate at lunch time too when they provided sandwiches and crisps 😦 .  So I was determined to eat a light and healthy supper.

One of the most beautiful things I saw today was this amazing tree.  I took this photo at 7:30pm this evening when the evening sun seems to bring out the brightness in everything.

As soon as I get home from work each evening I head out to the garden to see how is growing well, who needs some tlc and who needs a bit of a talking to.  I am delighted with the French beans, courgettes, lettuces and sweet corn.Veggies growing Keep growing my lovelies.growing greens I had 2 handsome visitors to the greenhouse.H and W Something has totally decimated my purple sprouting broccoli and is now getting thorugh the brussel sprouts.  I am so disappointed.  I gave in to slug pellets recently but they are not making any difference.

Pure Purple Pleasure

I made one of my best ever breakfasts this morning with just 3 ingredients.

An Interesting Salad

After more than two weeks we have the internet back.  Oh, how I have missed it.  Thank you to all my friends who have allowed me to share your internet access and plied me with teas and coffees so I can post the occasional blog.  It was fun.

Now here I am at home again, feeling quite contented to be able to post about some of the interesting food I have been experimenting with recently.

I am trying to make sure half of what I eat is raw.  I am not sure why but I didn’t take a photo of breakfast.  It was some strawberries, a banana, protein powder, acai powder and soaked goji berries, which I whizzed up in the blender and then froze overnight so I had a cold ice cream like breakfast.  Rather pleasant.

Lunch was great and again I made it last night.  In to my lunch box went some left over wholewheat Udon noodles (we had them for lunch on Sunday), raw cauliflower, some chick peas I had sprouted, tomatoes, carrots and pomegranate.

I topped it with lamb’s lettuce, watercress and fresh mint and coriander.

With a dollop of hemp seed humous I made on Sunday and half an avocado.lunch 14-5-13 2 The hemp seed humous and avocado added essential healthy fats and were the only type of dressing I used.  I really enjoyed this salad as it had an interesting variety of flavours and textures.  It certainly took some chewing too so I felt very sated after it.lunch 14-5-13

I went for a wander at lunch time.  It was raining so I wimped out of a walk any further then the market.  I was looking for a treat and was drawn to this fruit and veg stall.

At home I had a fancy for onions, Tamari and Halloumi.  I have had very little cheese recently and felt I could justify some tonight.  For 2 of us, I chopped up a large red pepper, one brown and one red onion, half a head and stalk of broccoli and a huge handful of kale.  I stir fried them with some coconut oil.

Salad and Chocolate

Supper last night was a healthy salad, Fattoush, followed by a sweet chocolate treat.  Apart from the asparagus I served with the salad, it was all raw.

Fattoush is a Lebanese salad and the chocolates I made taste a little like Toblerone.  Both recipes came from my recipe book of the moment – Raw Living by Kate Wood.  I totally recommend this book.  It has no pictures but the recipes are imaginative and easy to follow.

Ingredients (serves 2)

  • 2 bunches watercress
  • small bunch of mint
  • small bunch of parlsey
  • juice of 2 lemons
  • 4 tbsp olive oil
  • 1 tbsp liquid aminos ( I didn’t have any and used soy sauce instead)
  • 4 tomatoes
  • 1/2 cucumber
  • 1 tbsp zaatar (mix of thyme, sumac and sesame)

Chop up the watercress, tomatoes and cucumber and place in a large bowl.

Watercress, cukes and tomsMake a pesto with the mint, parsley, lemon juice, olive oil and soy sauce by placing ingredients in a blender and blitzing until smooth.

Cover with the dressing and sprinkle zaatar on top.

I served this with fresh asparagus and it was absolutely delicious.Fattoush and asparagus

Raw Nearly Toblerone

Ingredients (makes 12)

60g cacao nibs
60g cashew nuts
100g cacao butter
30g carob butter
2 tbsp agave nectar
1/2 tsp Blue Manna powder
1/2 tsp maca
1 dessertspoon coconut oil

Grind cacao nibs and cashew nuts to a fine powder in a coffee grinder.  Set asideground cacao and cashews Grate the cacao butter in to a bowl.
Set that bowl over a larger bowl filled with hot water so the cacao butter melts.  Do not add water to the cacao butter.

A Breakfast Blog

I am still without internet at home which is very frustrating and is the explanation for the sporadic posts recently.  Today I am visiting my Dad and making use of his WiFi.  Rather than do a typical, this is what I have eaten today post, I wanted to show you 4 breafasts I have had recently.  They are all very healthy.  3 tasted wonderful and 1 was not so wonderful but super healthy so I ate it anyway.

I did post this recipe the other day but was missing the photos I took.  As it was so delicious, I am posting it again, this time with the photos.

1. Carob and Cashew Dip

Ingredients (serves 4)

  • 200g cashews, soaked 8-12 hours ( I soaked overnight and we had this for breakfast)
  • 60g carob powder
  • 4 tbsp olive oil
  • 1 heaped tbsp Blackstrap molasses
  • 250ml water

Method

  1. Drain the cashews and add them to a high powered blender
  2. Add the other ingredients
  3. Blend until smooth – about 3 to 4 minutes

Wash some fresh fruit such as strawberries and dip and eat and enjoy.

2. Sunshine Breakfast

Ingredients (serves 1)

  • 1 banana, frozen
  • 30g goji berries, soaked for at least 1 hour
  • 4 fresh apricots
  • 1 tbsp sunflower seeds (optional, but they provide protein, healthy fats and fibre)

Method

  1. Cut banana in to chunks and add to blender
  2. Drain goji berries (drink the soak water, it’s delicious!) and add to blender
  3. Remove the stone from the apricots and add to blender with the sunflower seeds
  4. Blitz until smooth.

3. Bloody Good Buckwheat 

Ingredients (serves 1)

  • 1/2 cup of raw buckwheat groats, soaked overnight and rinsed well
  • 1 blood orange, peeled
  • 1/2 avocado
  • 1 banana (ideally frozen but fresh would work)
  • 1 tbsp chia seeds
  • 1/2 pomegranate

  1. Rinse buckwheat, drain and place in a bowl
  2. Blitz orange, avocado and banana in blender until smooth.  Pour over buckwheat.
  3. Sprinkle chia seeds and pomegranate on top.

This is the one that tasted awful but was so healthy I ate it anyway.

4. Spirulina Cream

Ingredients (serves 1)

  • 1 banana
  • 1 apricot
  • 2 strawberries
  • 1 tbsp flax oil
  • 1 tbsp freshly sprouted chick peas
  • 1 tsp spirulina

Method

  1. Put everything in the blender and blitz until smooth.

I dislike the taste of spirulina and the flax oil doesn’t taste great either.  But this little pot of green was so full of amazing nutrients I managed to eat it all and consoled myself by thinking about how much good it was doing me.  The texture was perfect which helped it go down.
