Salad and Chocolate

Supper last night was a healthy salad, Fattoush, followed by a sweet chocolate treat.  Apart from the asparagus I served with the salad, it was all raw.

Fattoush is a Lebanese salad and the chocolates I made taste a little like Toblerone.  Both recipes came from my recipe book of the moment – Raw Living by Kate Wood.  I totally recommend this book.  It has no pictures but the recipes are imaginative and easy to follow.

Ingredients (serves 2)

  • 2 bunches watercress
  • small bunch of mint
  • small bunch of parlsey
  • juice of 2 lemons
  • 4 tbsp olive oil
  • 1 tbsp liquid aminos ( I didn’t have any and used soy sauce instead)
  • 4 tomatoes
  • 1/2 cucumber
  • 1 tbsp zaatar (mix of thyme, sumac and sesame)

Chop up the watercress, tomatoes and cucumber and place in a large bowl.

Watercress, cukes and tomsMake a pesto with the mint, parsley, lemon juice, olive oil and soy sauce by placing ingredients in a blender and blitzing until smooth.

Cover with the dressing and sprinkle zaatar on top.

I served this with fresh asparagus and it was absolutely delicious.Fattoush and asparagus

Raw Nearly Toblerone

Ingredients (makes 12)

60g cacao nibs
60g cashew nuts
100g cacao butter
30g carob butter
2 tbsp agave nectar
1/2 tsp Blue Manna powder
1/2 tsp maca
1 dessertspoon coconut oil

Grind cacao nibs and cashew nuts to a fine powder in a coffee grinder.  Set asideground cacao and cashews Grate the cacao butter in to a bowl.
Set that bowl over a larger bowl filled with hot water so the cacao butter melts.  Do not add water to the cacao butter.

Add the carob, agave, Blue Manna and macs to the cacao and cashew nuts.dry ingredients Stir in to the melted cacao butter and coconut oil.raw nearlt toblerone mix Pour in to moulds of your choice.6 heart moulds I used 6 large heart shaped and 6 smaller moulds.  Mine are silicon and they did not stick at all so the chocolates turned out easily.Raw Nearly Toblerone These set within about an hour and were a delicious sweet treat, served with some berries for a pudding.chocoltae heartHave a healthy days eating 🙂

About Lose Weight and Gain Health

Hi! My name is Zoe and I live in Hastings, East Sussex, with my son Harvey and dog, Milton. I have been fighting the fat for years but this time I am serious. I want to lose weight and gain health. This blog is about how I am changing my lifestyle so I can lose weight but not by just "being on a diet" but by making small changes to our lives so that as I lose weight, I gain health.
