I made one of my best ever breakfasts this morning with just 3 ingredients.
Cashew nuts, frozen blueberries and a fresh banana.
I added no liquid so it remained thick. Very thick, with small nuggets of cashews, which I had soaked the previous night. By the time I got to work it was still very cold but not frozen at all. I LOVED it!
I had it with a chopped up sweet and juicy orange. Oooh yeah, that was taste heaven.
I managed to make lunch again too. Half a large red pepper, a large red tomato, 1 carrot and some more hemp seed humous.
Topped with loads of lamb’s lettuce.
Before eating lunch I went for a wander round the market and Turnip was open and they had trays of Alphonso mangoes which I adore. At 4 for £5 I bought 4 🙂
I also went to the Turkish cafe, TAS, and bought some of their falafel and humous, both of which are the very best I have ever had.
The falafel is really crunchy and the humous is unbelievably smooth.
When I got home the jar of broccoli seeds I was sprouting had gone mouldy which is a shame as they were about ready to eat. I will have to try again.
I was still quite full up from lunch as that was a large serving of humous. So I had a very light supper starring the lovely mango.
Everything about these is wonderful. The creamy flesh, the stunning colour, the irresistibly sweet smell and the heavenly taste.
I ate them with some pumpkin seeds, almonds, walnuts, raisins and cool creamy natural yogurt.
I could eat that lot again, it was wonderful.
A fab foodie end to a fab foodie day.
