Extending the Vegetable Patch

The sunshine we have enjoyed recently has inspired me to get out in the garden.  That and my recent gardening course.  I bought this little box of 5 seed packets.

5 seed packets When I opened it up, inside there was a cute little tin.seeds tin Inside the tin were plenty of planting notes and recipes plus the seeds.  This would make a great gift as it was so beautifully presented.seeds and notes I only managed to plant out some rocket and lettuce though because hail stopped play!seeds and gloves I have been planning to extend my vegetable garden for a while and I have recently found someone to help me i.e. someone to do all the hard work.  This part of the garden will have my new greenhouse, a fruit cage and 2 raised beds.veg garden makeover 4 This part is going to be tidied up and then it will all be rabbit proofed.  I am really excited.veg garden makeover 3 As promised, George and Dan turned up on Sunday, staked out where the new raised beds are going and the outline for the rabbit proof fence.veg garden makeover 2 I can not wait to see this part of the garden being transformed.veg garden makeover 1 Now for the eating part.  I have eaten lots of healthy food but have also eaten sugary things.  Not too many but any is too much when you are trying to quit sugar.  So I am doing week 1 of Sarah Wilson’s plan again.

I did make a delicious courgette based recipe from ‘I Quit Sugar’.  I am going to grow 2 varieties of courgette this year so I can make this a lot.  If you are ambivalent about courgettes, which I am, try this.  It is delicious and will convert you in to a courgette fan.

Cavolo Nero, Three Times

I constantly hear about how good kale is for you and wanted to try some other varieties so in this weeks shopping I popped a large bag of Cavolo Nero, also known as ‘Black Tuscan Kale’ and ‘Dinosaur Kale’.  It is packed full of nutritional goodness so I was looking forward to trying it.

For breakfast on Friday I stir fried cavolo nero with mushrooms and onions.

Buddha and Orchid In fact I was very busy on Friday and for lunch I made a very simple meal; I had a huge bowlful of cavolo nero which I gently fried in butter and then topped with Gruyere.  Gruyere and cavolo nero compliment each other perfectly.  This simple meal took about 15 minutes to think about, prepare and then cook.cavolo nero and Gruyere Lunch today was a big bowlful of leftovers from the fridge, including the last of the cavolo nero and some carrots and broccoli.cavolo nero, carrots and broccoli There was a good sized portion of last weekends roast pork which I fried with the cavolo nero in coconut oil.cavolo nero and roast pork Served with carrots, broccoli, brown basmati rice and some egg which I cooked with soy sauce.  Delicious.  We are all cavolo nero fans which is praise indeed as my menfolk are not usually enthusiastic about green leafy vegetables.cavolo nero stir fry3 It was much colder than I expected today which I really noticed when I walked the dogs over the road this morning.  A lot of the woodland has been sold and the owners are beginning to mark their territory. Provate woods I do hope we can continue to ramble through these charming woods which we have enjoyed for many years.H and I over road It is looking like it will be a good season for bluebells.bluebells growingA walk in the crisp Spring sunshine is a lovely way to start the day.

Red, White and Blue

One of the lovely things about working in the West End is having the opportunity to see it early in the morning.  I usually rush through on my way to work but today I decided the world would actually continue revolving on its axis if I took 15-30 minutes to appreciate the relative peace and quiet of this beautiful part of London.

This was my view at about 7:40 this morning as the train pulled in towards Charring Cross Station.  The London Eye and Big Ben against a bright blue sky.London Eye and Big Ben The station is next to Trafalgar Square which was very peaceful in the early morning sunshine.  It was gorgeous being in this big open space with relatively few other people. The National Gallery early This is the National Portrait Gallery which is a stunning building.  A creamy white colour with bright red flags that provide huge pops of colour. The National Gallery This is the Canadian High Commission.  Another beautiful building with plenty of red and white flags.  I notice these waving at me each day as I walk to and from the station.Canada The enormous bright blue cockerel.  It is very large, very bright and very blue.  It is 4.72 m high!T. Lunch, But Not Like We Used To

More of that yummy Coco-Nutty Granola for breakfast, eaten with a small dollop of Greek yogurt and some almond milk.  I took it to work and ate it at my desk and yet again, it kept me going all morning until another late lunch.

breakfast 19-3-14 Back in the day, going out for lunch with colleagues was a very regular occurrence but these days it is very rare.  We all seem to work harder, faster and longer.  The team I sit next to were going out for lunch today to say farewell to someone re-locating to Switzerland and they invited me to join them.  We went to Jamie’s in Covent Garden.  I was not comfortable taking photos so I will have to tell you what I had.  Water to drink and a bun less burger with fries.  It was really good.

Now many years ago, a City lunch would have lasted hours and involved vast amounts of wine.  Todays had no alcohol at all and did not go on for hours.  Shame as I would have liked to sit there longer.  Mind you, lunch was brought to a halt by a poor man being taken very ill at the table behind us and then a fire alarm so we all had to evacuate.

So instead of food photos I took some pictures of my walk back to the office.  Hello Gudrun Sjoden.  4 pounds down, 10 to go and I will be there, shopping!outside of Gudrun's So this is one of my favourite parts of London, Seven Dials.  So called because the dial is in the middle of 7 streets that radiate out from the little roundabout with the dial on it.Seven Dials 5 Seven Dials 4 The little streets are not too busy, there is a chilled vibe and lots of interesting shops and cafes.Seven Dials 3 I read yesterday that Marcus Wareing is opening a cheap restaurant in Seven Dials which I will be interested to try.Seven Dials 2 The production of Matilda is excellent and well worth a visit.Seven Dials 1 These much bigger and grander buildings are at the Trafalgar Square end of the Strand which is beside Charring Cross train station.  The buildings looked even more stunning in the early evening light.looking up the Strand Neither of us were hungry for supper so I had a quick smoothie.  It had the remnants of Harvey’s smoothie in it so I did have a little bit of the apple and  raspberries he had.  I mainly had coconut water, Chia seeds, Flax seeds, Spirulina, Matcha powder, Coconut yogurt and some blackcurrants.  It came out a very unappetising green/grey colour but it tasted OK so i drank it and enjoyed the nutrients.Smoothie 19-3-14

I ate 3 reasonable meals today and managed some walking.  I didn’t eat enough vegetables but apart from that, I feel quite pleased with the days effort.

Making My Own

I ate 3 very healthy and nutritious meals today and I made them all.   I didn’t even buy a tea or coffee from anywhere today so definitely some pounds left in the bank today.

I was looking forward to trying the Coco-Nutty-Granola for breakfast that I had made the night before.  coco nutty granola in white storage jar It was delicious.  I had mine with almond milk and it did not disappoint.  As well as tasting lovely it kept me going until lunch time but by then I was very hungry.  It was a small bowlful though and I didn’t eat lunch until 2 pm.coco-nutty-granola in bowl I loaded some Mary Berry on to my phone to watch on the train and set off for London for another day working in the West End.

I am new to iPlayer.  I am not sure why it took me so long to get my act together but it has transformed train journeys.  The hour it takes, 2 times a day, used to be a source of annoyance but with iPlayer it has been transformed in to 2 hours to myself where I can watch what I like with no one talking to me or moaning about what I want to watch.  Marvellous.  It also gives me time back in the evenings when I don’t watch tv but have been able to spend more time persuing other hobbies.  I do love a bit of Mary Berry.Mary Berry on iPlayer

While I munched my granola I made a salad to take to work.  I used a mixed leaf salad as a base and added 2 half chopped peppers.leaves and cut pepers Some quinoa I had in the fridge.Quinoa in bowl Plus some cucumber and spring onion with tuna.  I made a simple dressing with lemon juice, olive oil and salt and pepper.  I enjoyed this after I went out for a lunch time walk.tuna salad to go Supper was a simple and humble affair.  I cooked some brown Basmati rice with Wakame, which is a sea vegetable.  It comes dried in the packet and I just placed it in the pan with the rice as the rice cooked.Wakame in packet Amazing how much it absorbs water and swells up to look like the kind of seaweed you pull from the sea.  I confess I am not a huge fan of the texture but I can eat small amounts if they are chopped up small.  I persevere with it because it contains so many minerals and it is a pleasant flavour to have through the rice.  I need to remember to add extra water next time as the rice was a bit dry.rice and wakame I ate my rice and wakame with steamed broccoli and Tahini.  That was a bit too boring so I then added some Chipotle chilli paste which added a lovely smokey flavour and some heat plus a glug of soy sauce for saltiness.  A perfectly adequate supper.broccoli, roce and TahiniI went to the Leisure Centre to weigh myself tonight.  I was pleased to see I have lost 4 pounds since I last went 3 weeks ago.  If I can lose 3 pounds this week, I am back to the 21 pound loss for the year that I attained at the end of January and have struggled to get back to ever since.

I found being sugar free much easier today.  I was worried the granola might be too sweet and would set me up for a sugar craving day but it didn’t.  I did use a lot less of the rice syrup than the recipe suggested (2 heaped tsp instead of 3 tbsp) so it was not very sweet overall.  The sweetness mainly came from the coconut.  I feel very proud of myself for behaving today and confident I can do it again tomorrow.

Activate Your Nuts

Today was activate my nuts day.  I have read many times recently that we should activate nuts and seeds before eating them.  To activate them means to start the germination process which activates enzymes that makes them easier to digest and metabolise .  You do this by soaking them for hours (at least 12) and then drying them slowly with a very low heat.  I use my dehydrator and it works really well.  This is because nuts and seeds contain molecules that inhibit digestion so when you soak them in water, these molecules leach out.  I change the water several times during soaking to wash away the molecules I am trying to get rid of.

Another benefit of activating nuts and seeds is it reduces the amount of starch and fibre.  I assume the protein and fat soluble vitamin content remains the same but I would guess the water soluble vitamins leach out.

If you like nuts and seeds but feel “heavy” after eating some, try some activated ones instead.  I definitely feel better when I activate them and I do it myself which is much cheaper than buying them already activated.

I keep a jar of activated mixed nuts in the fridge but I had run out.  I wanted to use some to make Sarah Wilson’s granola hence I soaked some yesterday, dried them overnight and they were ready by this morning.

In the fridge I had one of the egg and bacon muffins I made yesterday.  It fitted in to its little pot perfectly and so in to my handbag.  This is a great snack to have with you as it takes up very little room and kept me going all morning.  I left one out for Harvey to have and he loved it too.egg and bacon muffin in pot I ate mine at my desk and it was delicious cold.  No need to warm it up in the nasty microwave.

181 calories – what a bonus; filling, mainly good for you, tasty and low calorie.  I will be making these again!egg and bacon muffin At lunch time I went for a walk up Regent Street.Looking up Regent Street These buildings are so beautiful.Regent Street I had forgotten Carnaby Street even existed.  I often wandered round here in my youth but I doubt I have been here for about25 years.Carnaby St 2014 Shakespeare pub I surprised myself with my lunch choice.  I decided on the spur of the moment to go in to a Hawaiian themed burger bar!  Yes, really I did.  I ordered an Americano which came with warm milk on the side which was a nice touch.  It was very good coffee actually- really strong.lunchtime coffee This was lunch.  A burger without the bun but with cheese and an onion ring plus tomato, lettuce and raw carrot on the side plus a portion of chips.  Well, this is Week 1 of an 8 week quit sugar plan so I ditched the white carb bun I was not allowed and enjoyed what I am allowed.

I think that lot cost me about 760 calories.  I clearly should not have had the chips but I have been craving sugar badly today and so told myself I could have what I liked as long as it was within plan which this lunch is.Bunless burger Just as well I had a filling lunch as round the corner I came across Choccywoccydoodah.  That has to be my favourite name of any shop anywhere.  I had to go inside!outside Choccywoccydoodah I didn’t know they had a Choccy’ shop outside of Brighton.  You can look at their website here.  It is an extraordinary shop and I enjoyed the genius of the chocolate creations.  I enjoyed walking out and managing to resist buying anything even more 🙂 . I need to forget that is there.inside Choccywokkydoodah I went to Wholefoods instead – much safer. I needed coconut flakes and a snack for this afternoon.Outside Wholefoods I bought these – activated almonds with Himalayan salt.  Really yummy but calorietastic – 419 calories in this 70g bag!  Buy them to share with a friend as once you start you can not stop.Activated almonds Supper was a smoothie.  Sarah Wilson’s ‘I Quit Sugar’ book is beautifuly laid out but not always enough detail for me.  For example, it does not state in week 1 that I have to give up all fruit.  I am assuming I do because at the end of the programme you can introduce some low fructose fruits back in.  I find this uncertainty a little frustrating.

Knowing I had only a few calories left, I made a smoothie for supper.  Harvey had one too with a handful of nuts on the side which he was not too happy about initially as he wanted “proper’ food rather than a drink but he really enjoyed it and soon stopped moaning.  His smoothie had a frozen banana, an orange, coconut yogurt sweetened with Xylitol rather than sugar, avocado, flax seeds and almond milk.  I made one with coconut water, flax seeds, 1/8 th of a large avocado and spirulina.  Since I used the same blender jug and didn’t wash in between, I would have had some remnants of his much sweeter smoothie.  Hence I went to look up if I am allowed fruit to see if it matters.  smoothie 17-3-14 I also made Sarah Wilson’s Coco-Nutty-Granola.  So called because it is full of coconut and nuts!  I will let you know in the morning how that turned out.  It smells great and an early taste test shows great promise.nuts and granola picI am pleased I resisted sugar today and feel more confident about managing to be sugar free tomorrow too.

Getting Going in the Garden Again

It was so warm and so sunny today I couldn’t wait to get outside and start sowing some seeds.  First though we needed some breakfast.

I Quit Sugar bookA couple of weeks ago I bought Sarah Wilson’s I Quit Sugar book.  It is well laid out, beautifully illustrated and clearly presents many of the reasons why you shouldn’t eat sugar.  It is not as detailed or as informative as other books I have read such as David Gillespie’s Sweet Poison but I bought it because I like Sarah’s blog, I wanted to get some of her recipes and I wanted to follow her 8 week programme to quit sugar.  Today I began week 1.  My objective is to not eat anything with sugar added and to cut out refined white carbohydrates which is easy for me as I rarely eat refined white carbs anyway.  Cutting out all sugar is hard though as I have been so bad recently.

Harvey and I had bacon and eggs for breakfast.  I can not find any organic and sugar free bacon.  All the organic bacon has sugar added so I opted for non organic but free range pigs.  If anyone knows of bacon which is organic and has no sugar, please let me know.

eggs and Spoilt Pig I had mine with a little cheese and parsley.cheddar and parsley I made the egg and bacon cupcakes.  They are so easy.  Preheat the oven to 200 °C and grease a muffin tin.  Lay one rasher of bacon in each muffin pan to cover the sides and bottom.  Bake in the oven for 5 minutes to get the bacon going.  I then used some kitchen paper to blot up any water and fat inside the bacon cases.  Crack an egg in to each bacon case (don’t worry if some goes over the sides or top), sprinkle on a little cheese and parsley (optional) and bake for 10 – 15 minutes until the egg whites are cooked.
egg and bacon cupcakesTa Daa!  These were extremely easy to make and we both enjoyed them.  I did cut the fat off.  15 minutes cooking meant the yolks were solid and we would have preferred them runny.  I would have found egg and bacon on a plate unappetising without bread but eating them this way, the bread didn’t seem necessary.  We had two each.
egg and bacon cupcakeI popped out to the lovely Walled Nursery in Hawkhurst this morning to buy some seeds, pea sticks and thick hazel bean poles.  The bean poles are from local coppiced trees so are more sustainable than using bamboo and will be easier for the plants to climb up than bamboo.

I couldn’t resist these blue hyacinths as the scent was just heavenly.
blue hyacinth I also picked some of the many daffodils we have in the garden.dafs So pretty to have some of the Spring flowers inside.spring flowers inside

I found my garden notes book.  In 2011 I was very diligent about writing down what I planted, where and how it turned out.  Much easier to do when you are not working!  I decided it was useful and am going to try to keep notes this year.Garden notes

I planted out some aubergine and tomato seeds.  It was just delightful to be outside in the sunshine, planning this years vegetable growing and then getting started.  I should have sown the aubergine last month but let’s see how it goes.

Aubergine and tomatoes planted

I am also late chitting potatoes but again, let’s see what happens.  As well as vegetables, I am am trying to grow more flowers in the garden this year, some from seed I sow myself and others by buying seedlings.  These sweet peassweet peas and potatoes

and these penstemons are part of a larger collection of seedlings I bought from Sarah Raven.Pentsemmons Out in the veg patch I picked some Kale.  I have found out which type this is – Kale Red Winter which I bought from the Organic Gardening Catalogue. kale in sun I also picked some leeks.  Not many left now 😦leeks in sun The leeks were steamed with carrots, the kale was pulled off the stalks, the green leaves were shredded and lightly sauteed in butter.  The vegetables were great and I wish I had cooked more.  We had them with roast pork and roast potatoes.  I made a really good gravy which I got from Nigel Slater’s The Kitchen Diaries, an excellent recipe book.  I slowly fried 2 chopped onions in a heavy bottomed saucepan until they were translucent and really soft, added 1 very heaped tbsp  flour and cooked for a couple of minutes.  I added a glass of Marsala, 500 ml beef stock, 1/2 a tsp grain mustard and 1/2 a tsp Dijon mustard and black pepper.  When the meat was cooked, I placed the meat on the carving board, poured away the meat fat from the roasting try and poured the gravy in to the roasting tray.  I reduced the gravy slightly while scraping the meat pieces from the bottom of the tray.  When we were ready to eat, I sieved the gravy and it was delicious.  Quite thick, sweet from the Marsala and full of flavour.
Roast pork 16-3-14 I had a lovely walk with Jane over the road in the woods and when I came home I ate some nuts, a small piece of cheese and enjoyed a glass of wine.  I have also had 2 pieces of toast.

I have stuck to Sarah’s week one plan and avoided sugar which I am pleased about but I have eaten too much.  Tomorrow I will get back to calorie counting as that worked well in January.

Sunny Spring Saturday

We enjoyed a lovely sunny day in the South of England today.  Inspired by my recent day with Sarah Raven and the sunshine, I have organised all my seeds and now just need to plan where to plant them this year.  Oh, and actually get on with planting them!

One of my favourites for breakfast; stir fried brown basmati rice with egg, onions, mushrooms, tomatoes and coriander seasoned with soy sauce.breakfast 15-3-14 1 A healthy way to start the day and a substantial one which kept me full for hours.breakfast 15-3-14Lunch was a cheese and salad sandwich.  If I eat bread, it makes me crave sugary things so I really need to go back to not eating bread.  It was quick and easy though which I needed today.
cheese and salad sandwich I went out this afternoon to buy seed compost and to look for a few things for the garden. Harvey came along to “help” and we had a little detour to Frankie’s Farm Shop.  I confess I was a little bit disappointed with Frankie’s initially.  It was too big and bare and I was not a fan of the layout.  I really wanted it to do well though as it did a lot of things very well so I pop in now and again and was really pleased today to see it so busy.  I enjoyed a cup of tea but was unable to resist a slice of cake.  I had the lemon curd cake which was excellent.lemon curd cake Harvey was more interested in the chickens, goats and zip wire.zip wire at Frankie's H on zip wire I tried Sarah Raven’s method of cooking a steak.  I didn’t marinade it as she suggested but I did fry it for 2 minutes each side (she actually recommended 3 minutes but my males like it a bit bloody) and then popped it in the oven for 10 minutes.  It came out perfect for me – pink but not bloody.  I took the thinnest steak and the blood loving carnivorous males had a slightly bloodier one as theirs were thicker.  Served with mixed salad leaves, tomato and jacket potato which had a delicious crispy skin.steak dinner

Apart from the cake, not a bad day of eating and certainly better then some of my days recently.  Tomorrow will be better still and by Monday, I intend to start being sugar free again.

Foggy Beginnings

The last 2 mornings have started very foggy but then the spring sunshine has burned its way through and we have been treated to warm sunny days.  I like the look of the fog from the house and garden as it is quite dramatic but I really dislike driving in it.

foggy morning I have not managed year round vegetable growing with the same degree of success as Sarah Raven but I haven’t done badly.  I have recently finished the red cabbage which we also enjoyed over Christmas.  The Swiss and Rainbow chard goes on and on.  It gets nibbled but I can always find hole free whole leaves or I just cut away the nibbled bits on the larger leaves which I find preferable to spraying.  I never spray anything I want to eat in my garden.chard in garden I also have kale and the last few leeks to eat.leeks and kale I can’t remember the name of this kale but I would grow it again.  It has pale green leaves with a pink stalk and I like the flavour. kale in garden Breakfast this morning was a mug of green tea with a tenderstem broccoli and mushroom omelette.  Harvey was not impressed with the volume of vegetables in his omelette but was bribed to eat them by the “treat’ of an orange afterwards.  How we have moved on from sugar laden breakfast cereals :-).green tea and omelette Hi omelette did have a higher egg to vegetable ratio than mine did but I was still impressed he ate it all.broccoli and mushroom omelette Lunch was a huge bowl of chopped vegetables; half each of a red and orange pepper, cucumber, a large tomato, parsley and chervil.  With salt and pepper, the juice of a lemon and 2 tbsp olive oil.chopped vegetables and herbs I added 90g quinoa and half a small can of tuna, mixed it well together and set aside for a couple of hours before eating it to allow the flavours to meld.  Very tasty.quinoa and tuna saladAs it’s Friday we had an end of week treat which involved cake and chocolate which is bad but I gave in today.  So supper will be a smoothie, similar to this one I made yesterday morning with 250ml coconut water, an avocado, a large handful of kale, the juice of 2 small limes, 1 tsp Spirulina and ice.  It wasn’t palatable enough as it was so I blended it again with a large banana.

A Day With Sarah Raven

I can not remember when I last had a day off for me.  A day to go and do something all by myself that I wanted to do.  A day with periods of quiet time at home and not feeling pressured to be working or doing chores.  I usually take time off to go on holiday with the family which is obviously lovely but today was different and I had a great time.

I started with a nutrient dense smoothie.  I ate too much sugar today but it was a special ocassion so I enjoyed what I was given.

smoothi ingredients 12-3-14 I added in some cacao nibs too.cacao nibs on spoon Yummy.Breakfast 12-3-14 For my birthday the girls bought me a day with Sarah Raven at Perch Hill in East Sussex. It was only half an hour away and I enjoyed the drive there in the Spring sunshine.  We had coffee and homemade biscuits in the beautiful greenhouse which was more like a glass extension to the shop and lecture room than a greenhouse.  It was huge and filled with so many beautiful plants and pots it was hard to decide which bit to admire first.SR greenhouse display I really liked these colourful hyacinths in the wooden trough.SR coloured hyacinths The views were lovely, especially in the sunshine.  This is a very peaceful part of East Sussex so you could really enjoy the birdsong.Corner of SR greenhouse These smelled lovely as did all the indoor spaces we went to.hyacinths SR Greenhouse 1 After an interesting morning of learning how to grow vegetables all year round we moved in to the prettily decorated barn for lunch.SR decs in barn Lunch was delicious.  We had a chicken, apricot and almond tagine with couscous salad, salad leaves and tzatziki.SR main Followed by a baklava with orange ice-cream decorated with fresh orange and pomegranate.  Everything was very full of flavour and fresh.  Really good.SR pudding In the afternoon we walked around the garden.  Sarah encouraged us to taste some of the herbs and vegetables and explained what to plant where, how to sow seeds and how to harvest your crops.  SR explaining The teaching inside was interesting but I preferred this part of the day. Sarah is very approachable and friendly so it is easy to ask her questions.  The other people on the course were easy to chat to too; we all have a passion for gardening and cooking in common.  We had a good look around the flower beds (which had vegetables popped in too) and then set off for the vegetable garden.SR with lettuces This is the kale section of the vegetable garden.  Rather than harvest one plant at a time, Sarah explained it is better to harvest by picking leaves around the plant so the plant keeps growing.  You can see on this kale where the lower leaves have been removed.SRs kale I just love vegetable gardens.  I find them aesthetically very pleasing as (assuming it is a well planned and managed garden) there is order amongst the growing plants plus I think  growing your own food is incredibly satisfying so I am always on the look  out for useful tips and I heard quite a few today.SRs garden 1 After walking round the vegetable garden we spent some time in the polytunnel learning about sowing seeds.SRs gardenWe ended the day back in the lecture room with an interesting run through Sarah’s recommended varieties for growing and some of her favourite recipes.  The session ended with a question and answer session.

I really enjoyed today.  I didn’t learn much about how to grow vegetables but then I have been growing them for a few years now.  However, I learnt lots of useful tips and will try to extend my range of vegetables and try some of the varieties Sarah recommended.  I always have something I can pick and eat in the garden but hopefully this time next year there will be even more.
Sarah Raven teaching As well as the day out I was given a voucher which I had absolutely no problem spending.
