Making My Own

I ate 3 very healthy and nutritious meals today and I made them all.   I didn’t even buy a tea or coffee from anywhere today so definitely some pounds left in the bank today.

I was looking forward to trying the Coco-Nutty-Granola for breakfast that I had made the night before.  coco nutty granola in white storage jar It was delicious.  I had mine with almond milk and it did not disappoint.  As well as tasting lovely it kept me going until lunch time but by then I was very hungry.  It was a small bowlful though and I didn’t eat lunch until 2 pm.coco-nutty-granola in bowl I loaded some Mary Berry on to my phone to watch on the train and set off for London for another day working in the West End.

I am new to iPlayer.  I am not sure why it took me so long to get my act together but it has transformed train journeys.  The hour it takes, 2 times a day, used to be a source of annoyance but with iPlayer it has been transformed in to 2 hours to myself where I can watch what I like with no one talking to me or moaning about what I want to watch.  Marvellous.  It also gives me time back in the evenings when I don’t watch tv but have been able to spend more time persuing other hobbies.  I do love a bit of Mary Berry.Mary Berry on iPlayer

While I munched my granola I made a salad to take to work.  I used a mixed leaf salad as a base and added 2 half chopped peppers.leaves and cut pepers Some quinoa I had in the fridge.Quinoa in bowl Plus some cucumber and spring onion with tuna.  I made a simple dressing with lemon juice, olive oil and salt and pepper.  I enjoyed this after I went out for a lunch time walk.tuna salad to go Supper was a simple and humble affair.  I cooked some brown Basmati rice with Wakame, which is a sea vegetable.  It comes dried in the packet and I just placed it in the pan with the rice as the rice cooked.Wakame in packet Amazing how much it absorbs water and swells up to look like the kind of seaweed you pull from the sea.  I confess I am not a huge fan of the texture but I can eat small amounts if they are chopped up small.  I persevere with it because it contains so many minerals and it is a pleasant flavour to have through the rice.  I need to remember to add extra water next time as the rice was a bit dry.rice and wakame I ate my rice and wakame with steamed broccoli and Tahini.  That was a bit too boring so I then added some Chipotle chilli paste which added a lovely smokey flavour and some heat plus a glug of soy sauce for saltiness.  A perfectly adequate supper.broccoli, roce and TahiniI went to the Leisure Centre to weigh myself tonight.  I was pleased to see I have lost 4 pounds since I last went 3 weeks ago.  If I can lose 3 pounds this week, I am back to the 21 pound loss for the year that I attained at the end of January and have struggled to get back to ever since.

I found being sugar free much easier today.  I was worried the granola might be too sweet and would set me up for a sugar craving day but it didn’t.  I did use a lot less of the rice syrup than the recipe suggested (2 heaped tsp instead of 3 tbsp) so it was not very sweet overall.  The sweetness mainly came from the coconut.  I feel very proud of myself for behaving today and confident I can do it again tomorrow.

Hi! My name is Zoe and I live in Hastings, East Sussex, with my son Harvey and dog, Milton. I have been fighting the fat for years but this time I am serious. I want to lose weight and gain health. This blog is about how I am changing my lifestyle so I can lose weight but not by just "being on a diet" but by making small changes to our lives so that as I lose weight, I gain health. I do not eat animal products so follow a vegan diet. I try to use locally produced food supplemented with what I can grow myself. I support and try to use local farmers markets and farm shops. Another objective is to add more exercise to our days. It sounds so simple when I write it down :-)
