Lentil Salad

I worked from home today which makes eating healthily and exercising much easier.  The day after a fast I expected to be starving but I wasn’t, and I actually didn’t eat anything until late morning.  By then I was peckish.

I had half an orange to use up (the other half was sliced up and used in glasses of water and mugs of black tea) and I fancied avocado on bread.  I thought half a small avocado would be sufficient.orange and avocado It is really easy to track calories in the FitBit tracker.counting clories Breakfast then was half an orange, half an avocado mashed on 1 slice of wholemeal bread, bread, a large juicy tomato and alfalfa and broccoli sprouts.  It was very good.lunch 15-3-16 I mentioned yesterday that I would make Rebecca’s lentil salad today and I did.  I highly recommend it.

Rebecca’s Lentil Salad

Ingredients (for 1)

  • 150 grams cooked green lentils
  • juice of 1 – 2 oranges or lemons
  • 1 large red tomato, chopped
  • half an avocado, cut in to chunks
  • 6-8 sundried tomatoes, sliced
  • 2 sticks of celery, sliced
  • half a large or 1 small red onion, finely chopped
  • 1-2 tbs olive oil (I used 2)

Method

  • Cook the lentils and while still warm, pour over the orange/lemon juice
  • Mix with the other ingredients and mix gently but thoroughly so everything is coated in the orange/lemon juice and oil.
  • Serve as is or with a green salad.

I did well today.  I had some tasty food and most of it was very nutritious.  Plus I walked more than 10,000 steps.  If I get a good night’s sleep, I can tock all 3 boxes; nutrition, exercise and sleep.

2 glasses of fresh juice – 215
Dinner – 461 calories
Plus a large spoonful of raspberry sorbet – 61 calories

Fast Day 3

I feel rather pleased with myself that I have completed another fast day.  This was the third one in 6 days and the easiest.  The book does say they get easier as your body gets used to not eating and they were correct.  I did it differently today because I ate nothing all day and saved the 500 calories for supper.  I think this works best for me and will try that next time too, which will be Thursday.

I checked my blog and I followed the Fast Diet 3 years ago and found it quite easy then too.  But I only did it for about 3 weeks and stopped, but didn’t explain why.  Hmmmm, curious.  Assuming this does help with weight loss, it is quite an easy way to diet and psychologically, knowing you only have to get through today but can have what you want tomorrow, is so much easier.

I drank lots of water today (2 litres) with lemon and mint in it plus a couple of black teas.  I had no time to go for a walk at lunch time but I did manage to pop round the corner to Monmouth Coffee.  It was sunny on London and cool so perfect walking weather so I was annoyed about not having time to get out for longer.

At the time of writing, which is the end of the day, I have only walked 7,743 sets today which is disappointing but can not helped.  I have a poorly boy at home who wants me sitting with him so I couldn’t go out after work.  I will try and walk more tomorrow.

I feel pleased with myself for completing another fast day and getting back in to the zone of losing weight (hopefully – fingers crossed for Friday !).

A Day Out With My Sisters In Brighton

I had a lovely day out to look forward to when I woke up today; a day in Brighton with my sisters.

Before I went out though I made a blueberry and banana smoothie for myself and Harvey as a smoothie or ice-cream is about the only thing he can manage at the moment.  After a fast day, you really notice the sweetness in foods; it’s amazing how your taste buds become more sensitive after just one day on a reduced calorie diet.

Today I consumed an estimated 2,164 calories.  It is really hard to estimate when you eat out but I was as honest and accurate as possible.  I walked over 10,000 steps so was within today’s allowance which was 2,513.  On a non fast day I am trying to stick to under 2,000 but it was a special occasion.  I don’t often spend time with my lovely sisters and I really enjoyed all of it.

Walk In The Woods With Me

I had no intention of fasting when I woke up today.  It’s a Saturday and the original plan was to take Harvey to St.Leonard’s for the afternoon and have lunch in a cafe there.  Unfortunately my little lad is very poorly and has not ventured further than the sitting room where he has spent all day, mainly sleeping, occasionally awake but feeling quite dreadful.

Harvey hadn’t wanted supper last night but he did want something easy on his sore throat this morning so I made him banana nice cream by blending 2 frozen bananas with 2 dates, some hemp milk and vanilla.  I topped it with half a caramelised banana which I fried in coconut oil with some coconut sugar and a sprinkle of salt.   The recipe comes from an Instagram account I follow and really like – loveliveraw by a Swedish chef whose restaurant we visited in Gothenberg last year.

It was very sunny today but hazy and the pictures have all come out looking as if the sky was grey, but it was actually a gorgeous early spring day.

This section of the high path is much drier so very easy walking.  Without worrying about slipping over in the mud you can really enjoy the scenery.

Harvey slept most of the afternoon and evening and I suddenly noticed it was 8:30pm.  I had only had 156 calories and I did consider not having anything else.  But then decided to eat the 500 calories I am allowed.  I didn’t want to cook so I had a sandwich made with houmous, tomato and alfalfa sprouts.  I carefully measured everything to ensure I didn’t go over 500.bread on scales I used the Firbit calorie tracker and my scales to calculate how much bread could go on my top slice.  Not quite a full slice but nearly.bread, houmous and alfalfa

I enjoyed my sandwich and lemon and mint water and feel perfectly sated.  I can’t believe how easy I found it today and I am pleased I stuck with it despite the walk which made me feel hungry.  I had thought it would be better to not do much exercise on a fast day but it was ok.  I was hungry this afternoon but if I drink water and a black coffee, the hunger soon goes.  It doesn’t get worse, it just goes.

I smashed it today and am really pleased.

A Sunny Friday

Today may have started very foggy but when the fog cleared, we had a beautiful sunny day and it was Friday so all was good with the world.

In the fog, with the first rays of sunshine trying to break through, this cobweb looked really pretty.  Even though I really dislike spiders, I do admire their skill in making webs.  The moisture looked like little jewels having on the delicate threads.

cobweb on rose buch Most of my brassicae have been devoured by slugs but this has survived.  I can’t remember what it is but I think I can eat the leaves so I may try them this weekend.red cabbage in garden 11-3 I started the day with a hot water with lemon and turmeric.lemon and turmeric I had a late breakfast of chia pudding.  I put 200 ml of hemp milk in a jug and added 2 tbsp chia seeds.  I set it aside and stirred/whisked occasionally to stop the chia seeds clumping.  As the chia seeds absorb the milk, the consistency changes from liquid with little seeds to a thick creamy texture.  It takes 1-2 hours or you can leave overnight.hemp seeds and chia I had it with a pink grapefruit which was good but lacking something.grapefruit and chia Coconut yogurt, that is what it was missing!  This was a delicious breakfast and I enjoyed every mouthful.chia pudding and grapefruitI was working from home today and was incredibly busy so lunch had to be very quick.  I needed to use up some of these.

Supper was one of my favourite soups; ‘My New Roots’ “Four Corners Red Lentil Soup”.  I love this.  It is spicy with the cumin and cayenne pepper, garlicky, sour from lemons and sweet with a small amount of maple syrup.  And so nourishing thanks to the red lentils and tomatoes.  I had one huge bowl and a bit later another, and this time I added some spinach which cooked down in to the soup and was a really good addition.  red lentil soup March

Everything I ate today fuelled and nourished my body in a good way and I feel good about that.  I chugged back 2 x 750 ml cold water with lemons in plus some tea so I am also well hydrated.  If I have a good sleep I will be on fire tomorrow !

The Day After The Fast

Having fasted yesterday I thought I would wake up this morning feeling starving hungry but I felt ok.  I slept quite well and woke up feeling refreshed and positive about the day ahead.  I did choose to spend a bit more time at home than usual so I could make lunch to take to work to ensure I had something nutritious and saved some money.  I made time to track the calories in what I am eating.

scales I made a salad with brown Basmati rice, green grapes, cucumber, celery and cherry tomatoes.  I also chopped up a lemon to add to the water I was going to sip all day.making lunch 10-3-16 All packed up with a serving of Vegan blue cheese dressing.lunch 10-3-16 7 This dressing is great.  It is not as tasty as one made with real cheese but it does taste good and doesn’t have the nasty after taste several other vegan “cheese” substitutes have.follow your heart vegan bleu cheese I can’t work out what is in the ingredients to make it taste like blue cheese!vegan bleu cheese In the office I had 4 clementines for breakfast, a cup of tea and 750 ml water with fresh lemon in it.10-3-16 5 I filled my water bottle 3 times today.  Until recently I didn’t drink much at all but Phoebe, who sits opposite me, and I encourage each other and it has now become a habit. breakfast 10-3-16 4 I was hungry and had an early lunch which I started at about 11:30 am.  It did take me quite a while to munch through all those vegetables and I felt full and sated all afternoon.lunch 10-3-16 3 lunch 10-3-16 2 That dressing really is very good.lunch 10-3-16 1Phoebe gave me a 40g packet of nuts in the afternoon and I did enjoy them.Raw Nuts So many calories in this little packet.  It was a 40 g packet so had 254 calories.nut nutrition For dinner I made a stir fry with an onion, leek, tender stem broccoli, a large carrot, a red pepper and 100g smoked tofu with almonds, seasoned with soy sauce.  Dressed with a pot of “chilli drizzle” I had left over in the fridge.  It was made with chilli, coriander, lime juice, thyme, oregano and olive oil.  The veggies are very low calorie but the fats are really high and the tofu was more than I thought.  30g coconut oil was 259 calories, 1 tbsp olive oil was 119 calories and 100 g tofu was 185 calories!Dinner 10-3-16

I enjoyed everything I ate today.  The fast yesterday made me very aware of how many calories are in the food I eat and that usually, I eat far too many!  I can eat “normally” today which I think is 2,000 calories.  My Fitbit says I can have more than that but I am going to aim for 1,500 – 2,000 on non fast days so today was great.

The Fast Diet aka 5:2

I have recently been impressed but the weight loss of two good friends of mine.  When I asked them what they had done, it was the Fast Diet which is also known as the 5:2 diet.  So called because you eat normally for 5 days and then eat a 1/4 of your normal calories, which for a female is 500 calories, on 2 days.  I had tried this before and it didn’t seem to work for me but Kath and Rebecca inspired me so I had another go.

 Today was a working day which I think helped because I was busy and most of the time, away from sights and smells of food.  I would have found this harder at home.I drank 4 glasses of water with fresh lemon in it (4 x 750 ml) throughout the day and several mugs of black tea.   I had 2 apples for breakfast and that was it until supper time – eek !!!!!!  Would I manage ?   
 I went for a walk at lunch time.  Last week I walked to St Paul’s and back and had noticed a road side stall selling fruits and veggies, including 3 avocados for £1 so I walked to buy some.  On the way back,  I treated myself to a long black from Monmouth.

I haven’t been to Monmouth for ages – I have been missing out!  
I followed Dr Michael Mosley’s plan of 150 calories for breakfast and 350 12 hours later for supper with nothing to eat in between, just lots of fluids.  I had a bit of a wobble at about 2:30, panicking that I was hungry and couldn’t eat for another 6 or 7 hours but I drank black tea and it soon passed.

Before I knew it, I was home and preparing supper.  I had planned what to have so got on and made it.

 One cauliflower, 2 juicey tomatoes, a pile of spinach, half a cup of brown Basmati rice (cooked) with some rapeseed oil and za’atar.  I preheated the oven to 200 degrees C, sliced the cauliflower from top to bottom rather than in florets, halved the tomatoes, sprayed the vegetables with oil and sprinkled over 1 tsp of za’atar. I placed them on baking sheets and put them in the oven for about 20 minutes.
 Cooked to perfection.   I really like cauliflower and I was particularly looking forward to it tonight. I washed the spinach in water and gently wilted it in a pan without any  need to add any oil to cook it.  This seemed like a feast and I enjoyed every mouthful of it.

 I am pleased I have done this and will try to do my fast days on Monday and Thursday’s and see how I get on.  Fingers crossed this works for me.

Hastings and Mother’s Day

Yesterday (Saturday) I walked over 19,000 steps and ate reasonably well but not brilliantly.  I have not been losing weight lately, despite the walking and if anything, am putting some on.  I must focus more as I have not put much effort in to dieting lately.  I eat lots of healthy food (fruits, vegetables, lentils, beans, whole grains) but also a lot of high fat and stodgy food such as crisps and humous, popcorn and way too many lattes.  So I will try much harder from tomorrow.

But this weekend was about having some much needed fun rather than focusing on dieting.  My weekend kicked off with a late and drunken night at Sarah’s (I know it was drunken because I woke up feeling dreadful and remembered singing and dancing round Sarah’s kitchen ) but I still got up at a reasonable hour on Saturday and drove down to St.Leonard’s and Hastings.

Lyme Loveliness

I have just returned from a lovely weekend in Lyme Regis, where I caught up with some of my lovely family and had lots of lovely time with my lovely girlfriends.  Much loveliness in lovely Lyme.

I drove down on Thursday evening, had an early night and consequently was awake early. I didn’t want to miss a second of the day so I went straight down to the Cobb to catch sunrise.  P1050749 P1050751I was there just before 7am and all was peaceful and quiet.Lyme fishing baskets Lyme early 5 It’s a little tradition of mine that every time I go to Lyme I walk around the harbour and to the end of the Cobb.Lyme early 4 This is such a beautiful place and I like it best this early when there are no other people around.  It was high tide and the sea was very lively which makes this beautiful place quite dramatic.Lyme early 3 After pottering about, this way and that, I returned to the promenade.Lyme early 2 I then headed East to see how far I could walk.Lyme early Lyme early morning Lyme beach hits Lyme sea front bridge in Lyme Amazing to think little old me was standing there in a world heritage site.World Heritage site This walkway opened last year and this was my first trip along it. Landslide 2 lanslide 1 Lyme sea 1 Time for a coffee but I was a little early so I waited.Bakery 10 The Bakery is worth waiting for.The Bakery 9 I was rather peckish so I opted for the toast which you cut and cook yourself from one of their freshly made loaves.Bakery 8No plates, just boards and you help yourself to cutlery too.  It is all very simple with the focus being on the food which is top quality.
Bakery 7Their sourdough bread is absolutely delicious, eaten with peanut butter and raspberry jam.  I had a soya milk latte and was then joined by my cousin Miranda who lives nearby and I had another latte with her.Lyme 7 By the time Miranda and I had finished chatting, the sun was out and it was a glorious day.  Lyme 5 Lyme Regis has such a pretty seafront.Lyme 4 I went to visit my Step-Father Ian and Helen for lunch.  They very kindly made me a plant based lunch.  We had salad and a homemade vegetable soup.salad at Ian's Followed by a fruit salad.  It was all very tasty, ultra healthy and great to see them both too.  I spent the afternoon with my Uncle and Aunty in Axminster and then back to Lyme Regis, where my wonderful friends had arrived and cooked a dinner which starred a very good vegetable chilli.fruit salad at Ian's Your very best friends ………..

……… are those who support you in your food choices and then get up very early to join you on a walk down to the Cobb again.  A brisk walk and the fresh sea air worked wonders on the hangovers!lyme in morning This is becoming a bit of a habit – first through the door of the Bakery again.bakery 6 bakery 5 town mill 10 years I had a bowl of their muesli which was excellent.Bakery mueslibread in bakery After breakfast we set off for Stonebarrow, next to Charmouth and walked along the cliff tops to Golden Cap and then looped back along a ridge.  It was a long and hilly walk with stunning views, which my camera does not do justice to, and of course, lovely company.Stonebarrow 6 Stonebarrow 5 Stonebarrow 4 We weren’t sure how to make the walk a loop, to avoid doubling back on ourselves, but luckily other friendly walkers had maps and/or local knowledge so helped us out.  It was a long and lovely walk.Stonebarrow 3 Stonebarrow 2 Stonebarrow 1 I walked over 24,000 steps this day and climbed 109 flights of steps (equivalent) so a very good amount of exercise indeed.  Lunch was definitely next on the agenda and we went to Sladers Yard at West Bay.sladers entrance sladers menu A charming rustic interior, comfy seats and a very generous sized lunch, which I enjoyed after a latte and a bag of crisps.Inside Sadlers They were very accommodating and let me replace the halloumi cheese on the mezze menu with extra falafels.  The falafels were good and were served with humous, pitta bread, olives and celery, carrot and cucumber sticks,  most of which was inhaled as I was so hungry.  The advantage of being up so early is that you have a very long day.  After lunch we wandered around Lyme Regis, I had a nap while the others watched a film and we then had the evening together too.Sadlers mezze We spent the evening in my sister Lucy’s beautiful home in Lyme (where we were all staying) where Michelle made roasted veg, a huge salad and chicken for the flesh eaters and I made the lentil and cauliflower dish I blogged about in my previous post.  I do love being with these very dear and special friends.  Note to self – wear glasses when taking photos so you can check what you are taking the picture of and ensure all subjects are looking at you and are in focus!  Especially after a very large and amazing Burnt Orange gin, which i bought in Ammonite in Lyme Regis.Besties at Lucy's This morning we were up and out early again which is a result to all be up and out so early.  What an amazing day – so sunny and so good to be up early before the hordes descend.Lyme 1 This really is becoming a habit!  Latte and toast for me today.Bakery 2 Bakery pics 1

I have had a wonderful 3 days in Lyme Regis and feel so happy to have spent my weekend with family and friends.  I did drink wine, champagne and gin and eat crisps with humous but nothing to excess and I did do a lot of walking.  So not a weight loss weekend but hopefully not a gain either.  It was excellent and I wish I could do it again next weekend.  Thank you girls for being such lovely company in Lyme.

Lebanese Lentils and Roasted Cauliflower

I was in the mood for cooking when I got up today and before even having breakfast I baked a banana bread to have during the week.  I was going to blog the recipe but I made such a delicious lunch I am going to share that recipe instead.  I will share the banana bread recipe later in the week as it is already late and I don’t want to spend too much time blogging.

banana bread in tinBreakfast was a lovely smoothie made with just 3 ingredients: bananas, frozen blackberries and coconut water.  This quantity made enough for me and Harvey.

This is definitely one of my favourites smoothies.  Bananas and blackberries seem to go so well together and I always feel good after consuming it.

This book is fantastic. Definitely one of my favourite recipe books.  I like the style of it, the photos, the matt paper and the most important thing is that the recipes all really work.  It is well worth getting.  It’s not vegan but it is plant based and many of the recipes are vegan or can easily be adapted to make them vegan.  The My New Roots instagram site is really good to.My New Roots cookbookSo thanks to My new Roots for today’s delicious lunch.  I made it exactly as the recipe said but instead of ghee I used coconut oil and instead of kaniwa I used quinoa.  Don’t be put off by the length of the recipe, it was very simple to make, as long as you have plenty of saucepans!

Roasted Cauliflower with Lebanese Lentils and Kaniwa

Ingredients (serves 4)

1 head cauliflower
knob of ghee/coconut oil, melted
Flaky sea salt
1/2 cup kaniwa or quinoa
Fine sea salt
1 cup green lentils (or brown seemed to work fine as I had to use a combination)
2 tsp cumin seeds
1 cinnamon stick
1 tsp fennel seeds
1/2 tsp freshly cracked black pepper
3 small onions (about 350 g) sliced
2 tbsp olive oil
Grated zest of 1 orange
2 tbsp freshly squeezed orange juice
1 1/2 tbsp freshly squeezed lemon juice
1/3 cup chopped fresh mint leaves
1/3 cup chopped fresh parsley leaves
1/2 tsp fine sea salt
1 tsp raw honey

Method

  1. Preheat oven to 200 C.  Line a baking sheet with baking parchment
  2. Cut the cauliflower head in to slices.  Toss in the oil and salt and lay on the baking sheet.  Roast for 20-30 minutes until the edges become brown.
  3. Rinse and drain the kaniwa/quinoa.  Put it in a small saucepan, add just under 1 cup of water and fine sea salt and bring to the boil.  Reduce heat and simmer until tender – about 15 minutes.
  4. Rinse and drain the lentils.  Put them in another small saucepan, add water to cover, bring to a boil and then simmer until tender – about 20 minutes.  About 5 minutes before they finish cooking, add a few pinches of flaky sea salt.
  5. Heat some oil in a large saucepan over medium heat.  Add the cumin seeds, cinnamon, stick, fennel seeds and black pepper.  Cook until fragrant – 3 to 5 minutes.  Add the sliced onions and cook, stirring often until lightly caramelised, about 15 minutes.  Add the cooked kaniwa/quinoa and lentils, stir to combine and reheat if necessary.  Remove the cinnamon stick.
  6. Whisk the olive oil, orange zest and juice, lemon juice, mint, parsley, fine sea salt and honey together in a small jug.  Pour over the lentils and kaniwa/quinoa.

Give it a go as it really was completely delicious and both Harvey and I had to have seconds.

We had a reasonable length dog walk over the road in the woods this afternoon and when we came back we had some banana bread and these delicious bliss balls.  I will have these again.

So not a bad days eating.  Lots of plant foods but too much oil due to the frying and lentil dressing so I need to cut down the fat.  But I enjoyed everything we ate today and since it was essentially all good stuff, I am not beating myself up about a bit of oil.
