How do you make a very quick supper after a long and busy day at work?
Put on a pan of water to boil.
While it’s boiling, race outside to water vegetable garden.
Come inside, be relieved the water hasn’t boiled dry and cook the Gnocchi with some broccoli (4 minutes).
Stir fry some onion and red pepper in coconut oil. Add chopped roast chicken and spinach and a splash of soy sauce.
Stir through the broccoli and gnocchi and le voila!
A yummy and mainly very healthy supper for two, with just one saucepan and one frying pan to wash up. The gnocchi is of dubious nutritional value but it is quick and easy to cook so of great value to a busy working woman.
