I was working in the Gillingham office today, which is about a 45 minute drive away so I had plenty of time (i.e. no excuses) to prepare a healthy breakfast and lunch.
I got out my little tupperware pots and in to the breakfast one went 1/3 cup of oats, a splash of milk, 1 tbsp chia seeds, 2 tbsp natural yogurt and 1 tbs flax seed oil.
Topped with some melon.
Lunch was a really healthy salad of cauliflower, broccoli and carrots, which I chop up very small.
Plus tomatoes, grapes and celery.
Then a handful of mixed sprouted seeds and beans and raisins. I dressed it with salt and pepper, 1 tbsp olive oil and 1 tbsp maple syrup. Delicious.
I was home from work by 6 pm and decided that I wanted a quick and easy supper so I wasn’t spending the evening cooking and clearing up.
I was very hungry when I got home so while I was thinking about what to eat, I had a slice of bread with cheddar and pickle.
I decided to have sardines on toast, which is nutritious and cheap. After the excessive spending on eating out last week, I need to be more economical this week so Harvey and had a tin of these each on one slice of wholemeal.
Sardines on toast. Easy.
I was going to have a nectarine afterwards but someone small has eaten them all! That same someone who has just asked “how come none of the ball throwers are pretty?”. Yes, we are watching the shot put.
