A Spot Of Shopping

I was ultra organised last night and made both breakfast and lunch to take to work which meant I had time to go shopping at lunch time.

This was breakfast.

Timberyard Espresso Supper was amazing and is worthy of a proper recipe.

Noodles and Thai Red Vegetable Curry

Ingredients (serves 1)

Half a packet of buckwheat Soba noodles
1 tbsp coconut oil
One onion, chopped
5 cavolo nero leaves, chopped
A large handful of kale, chopped
1 yellow pepper, chopped
Oyster mushrooms
1 can of coconut cream
1 tbsp Thai red curry paste
Coriander, chopped
Soy sauce

Method

Cook the noodles according to packet instructions and set aside
Heat the coconut oil in a frying pan
Gently cook the onion, cavolo nero, kale and yellow pepper until soft
Add the mushrooms and cook for a couple of minutes.
Add the coconut cream and Thai red curry paste and mix well
Add the noodles and warm through
Serve the noodles and vegetables in a large bowl, garnished with coriander and add soy sauce to taste

This tasted really good.  Healthy comfort food at its best and every mouthful was eaten with great pleasure.noodles in coconut cream

It’s a Plant Life

Plants, plants and more plants for me at the moment.

Now I feel very full.  All full of plants which is the objective so I am happy with another successful day of eating lots of plants.

Going With It

I continue to go with my new lifestyle of eating mainly plants and whole foods.  I was a bit worried about going back to work where there are so many temptations but I did well again.  In part thanks to Wholefoods.

I took breakfast in to work with me and it was really enjoyable but it looks a bit unappetising because it got shaken up as I walked to work.breakfast 6-1-15 2 I had an orange, some watermelon. pomegranate, a heaped spoonful of Co Yo, some granola and a 50g bag of raw mixed nuts.  It kept me going for hours.breakfast 6-1-15 I resisted a Monmouth coffee – I am proud of that one.  I have not given up coffee but I am trying to significantly reduce dairy so lattes are out.

Despite the pouring rain I walked to Wholefoods for lunch.  Just being in there makes me want to eat fruits and veggies.Wholefoods fruit display Their salad bar has been hugely improved.  I took a spoonful of all of thesesalad bar some of these and some plain undressed raw veggies as well.Wholefoods salad bar I had nuts in my breakfast so I didn’t need to add any of the sprinkles.salad bar sprinkles This doesn’t look much more appetising than breakfast as it is all jumbled up.lunch 6-1-15 2 But it tasted really good.  So many yummy things in one box.lunch 6-1-15I picked up some other bits while I was in Wholefoods such as these noodles and some miso which I had for supper.
soba and miso I cooked the noodles, drained them and set them to one side.  I then heated some more water and cooked some cavolo nero, kale, spinach and oyster mushrooms.  When they were nearly ready I added the miso and the noodles.  I served it garnished with some coriander and spring onions, served with soy sauce.miso greens 2I am not a huge fan of such simple flavours as it was all a bit bland but I ate it as it was all so nutritious.

I feel very pleased with myself for such healthy eating.  I didn’t do a great deal of exercise but the walk from the station to the office and back is about 20 minutes as is the walk to Wholefoods and back so that is better than nothing.  Onwards and upwards.

Back To Work

I was back at work today after a 3 week break.  I was lucky to have so much time off so I shouldn’t complain about having to go back.  I was eased back to corporate life gently as I worked from home today which made the adjustment and sticking to the healthy lifestyle easier.

I had a fruity breakfast.fruit and granola 2 1 orange chopped up with a kiwi fruit, slice of watermelon, sprinkling of the granola I made yesterday and a dollop of Co Yo, a coconut yogurt.  This was a great way to start the day and I have made something similar for breakfast tomorrow.fruit and granola I made a mistake at lunch time.  A top tip for you all is that before adding chilli to a recipe, try it first!  I made a large salad and the intention was to add some cooked toppings, using up leftovers.  I warmed up half a can of chickpeas, some leftover roasted cherry tomatoes and, as it turned out, too large a spoonful of chipotle chillies.  I was aiming for a smokey and spicy flavour for the chickpeas.chick peas, tomatoes and chipotle It does look very pretty.lunch 3 5-1 This colourful bowl is made from romaine and lamb’s lettuce, topped with heated up leftovers of roasted courgettes and peppers, red lentil and kale dal, Bombay potatoes and the spicy chickpeas, garnished with fresh pomegranate.

The chickpeas were SMOKING!!!!!!  Wow they were hot.  I actually had to scrape them off and throw them away as they were too hot but at least I salvaged everything else.lunch 1 5-1 The Bombay potatoes and red lentil and kale dal reheated really well and the fresh and juicy pomegranate went really well with them.  I will have to make these again and photograph the recipe so I can share it as all 4 of us really enjoyed the potatoes and the dal.Lunch 5-1-15 1 For supper I made a vegan chilli with red pepper, onions, celery, garlic, chickpeas and black beans in a garlicy tomato sauce.  We ate it with a jacket potato.  It was good and there are 2 portions leftover for another evening.jacket potato and chilli

So I ate well, survived my first day back at work but failed to do any exercise.  I really must be better at fitting in time to exercise!

Home Cooking

I was full of beans when I woke up after another goods night sleep and very organised today.  I finished sorting out the study and made lots of tasty and nutritious food for today and the week ahead.

Within an hour of setting foot in the kitchen this morning I had made granola for tomorrow, breakfast for today and roasted vegetables for lunch.

The granola recipe needs tinkering with before I share it.  I didn’t have enough oats for the recipe I was following but I had already mixed up the runny ingredients so the mixture clumped together more than it should have so I want to try it how it should be.  It was easy though as it is made with just peanut butter, maple syrup, vanilla and salt.  Plus oats.granola ingredients After combining the wet ingredients in the blender you pour them over the oats, mix everything well together and spread it out on a baking tray and bake it in the oven.  Very easy.granola on baking sheet This was more like a flapjack than granola.granola 1 It was yummy anyway and had a great texture as it was chewy and crunchy.granola

So that is now packed away ready to be eaten as granola or sprinkled on fruit this week.

Since the blender was already dirty from making the granola I decided to have a smoothie for breakfast today. I made a banana ice-cream with peanut butter, 1/4 of an avocado, a handful of pomegranate and a splash of coconut water.  I felt hungry so I had 3 medium sized frozen bananas.

Before lunch we walked in to Cranbrook along the route Annette showed us yesterday.  Today we had Lara with us which was an unexpected treat as she came home late last night.

walking to Cranbrook Apart from the sections of road walking, this is a lovely walk.dark wood in Cranbrook We had left a car in Cranbrook so we could drive home – we thought it might be a bit cheeky to ask David to come and get us as he did yesterday 🙂back to Cranbrook Before we left for the walk I had roasted a tray of vegetables in the oven with salt, pepper, zat’ar and a sprinkling of olive oil.  I roasted them in the oven while I baked the granola to make good use of the oven being on.zat'ar special blend Just red and yellow pepper and courgette.veg ready to roast I popped in some cherry tomatoes for the last 10-15 minutes and then left it on the side while we walked.roasted veg When we came back I added 1 tbsp of pomegranate molasses to a simple vinaigrette dressing.pomegranate molasses I placed a variety of salad leaves and the roasted and chopped up vegetables in a large bowl and added the dressing.  I tossed the vegetables so they were evenly coated in the dressing and then added some of the couscous I had left over from yesterday plus a few raisins for sweetness.  The final garnish was a handful of pomegranate.pomegranate salad 2 This was excellent.  Harvey declared this salad to be so tasty that he could eat it every day.  Now that is a huge improvement on yesterday’s verdict of “disgusting” on the squished salad!  I really enjoyed this too.pomegranate salad 1 My dinner photos came out badly but it was a really tasty meal of bombay potatoes with kale and red lentil dal.  The blob in the middle is a lime and pepper jelly I really like.  I have a portion left over so can hopefully provide a better photo tomorrow.dal and potato

So a good day again.  Lots of very healthy food and another decent walk.  Back to work tomorrow but at least I am working from home and not back in London until Tuesday so I can ease my way back to long hours working and commuting.  I have loved my three weeks off and can’t believe it is all over.  Back to the grind but at least I have a fridge full of nutritious left overs which will make meals next week easier.

A Walk Through My Backyard

Today I ate well and had a lovely long walk so I am feeling great this evening.  I slept well last night and woke up feeling more energised than I have recently so I decided to tackle the chaotic jumble of papers and piles of I had forgotten what, in to some semblance of order.  So engrossed was I in my task that I failed to notice the clock tick by and it was lunch time before I had even had breakfast.  Fancy me missing a meal!

I dug out a book I have had for a few years for inspiration for a salad for lunch and chose a recipe called ‘Seductively Squishy Salad’.Raw Living book I assembled a similar list of ingredients as those in the book: half a romaine lettuce, a huge pile of rocket, some coriander, half a cucumber, a red pepper, 2 carrots, the juice of a lemon, 1 tsp of hemp protein and sea greens and an avocado.  I was feeling hungry so I ate 2 brazil nuts while I washed and chopped the veggies.squished salad ingredients Following the instructions I piled everything in to a large bowl.salad for squishing Then stuck my hands in and squished the avocado through the veggies.  It initially looked a bit of a mess.squishing the salad But when it was piled up on the plate it looked better and it tasted great.  I will be making a squished salad again.  When you have the leaves coated in avocado, there is no need to add another dressing.squished salad I am trying to encourage Harvey to eat more plant foods in general and salad in particular.  He is really good at eating fruit and cooked veggies but quite reluctant with salad unless it is covered in a creamy dressing and topped with croutons.  I want him to learn to like the natural flavours of the raw plants so he was asked to eat a salad with his pasta.  He declared it to be “disgusting”  but managed to eat about half of it.  I am grateful for any consumption of salads so was pleased with that.  I was really pleased by how much he is enjoying the cucumber and lemon water which he is swigging back.Harvey's lunch At 2pm we braved the gloomy weather and went out with Annette who showed us a lovely walk from our village to Cranbrook.  I have lived here for 13 years and never known about this walk even though I have driven near these footpaths for all these years.path to Cranbrook I think Harvey enjoyed being with Ebony rather than admiring the pretty route.Harvey and Ebony Thank you Annette for encouraging me out on another walk and for showing us this charming network of footpaths we can use to walk to town.  We shall do it again when hopefully we have better weather as there was a lovely view along this part of the walk.Annette and Harvey Supper was a quick and easy stir fry.  I heated some coconut oil and fried onions and garlic with some Thai red curry paste.  I then fried an orange and a yellow pepper, some runner beans and king prawns.  I served them on couscous (I much prefer rice but I had run out) with a dollop of Cholulah, a hot pepper sauce.stir fry 3-1-14 It was very tasty.  Apart from 2 cups of tea, and the hot lemon water with honey and apple cider, I have drunk several glasses of cucumber and lemon water throughout the day.  It really is very pleasant.dinner 3-1-14

It’s A New Year

Happy New Year to all my blog readers 🙂

I ended 2014 the way I spent too much of it i.e. eating too much and too much of the wrong food.  I think I ate half my body weight in chocolate!  I celebrated the new year with neighbours and friends of Marion and Colin which was very handy as they live over the road so only a very short totter home.

NYE 5 We had an Italian themed dinner and everyone brought along a dish.  I enjoyed everything I ate and everything I drank.NYE 4 I particularly enjoyed all the gorgeous company.NYE 2 What a great space to have a party in and what a great party we had in this space.NYE 1 It is fair to say that things did all get a bit blurry but at the time it was all great fun and it was a brilliant way to welcome in the new year.  Thank you to Marion and Colin for such a wonderful evening.dancing at new year So New Year’s Day dawned very late for me.  Before I went out I peeled a lemon and added it to a large jug of water with some cucumber and celery.  It was perfect for drinking in the morning and actually so enjoyable I now have a jug permanently in the fridge.lemon and cucumber water When I was hungry I made a simple smoothie with frozen bananas, half an avocado and a teaspoon of ‘Out of The Woods’,  half a teaspoon of matcha and some coconut water.hydration therapy in to the light ingredients This had a very mild flavour and was perfect for a woman with a hungover.matcha banana ice-cream I did excel myself later by cooking my family a roast chicken with roast potatoes and gravy but I only ate the chicken and vegetables, with no added fat.  I have to be better this year and I am starting immediately.roast chicken and 2 veg In the evening I snacked on an apple and 2 tangerines and that was it.  A great start to 2015.apple and tangerines I did really well again today too.  I have read that having hot water with lemon is a beneficial way to start the day.  I have also heard that hot water with honey and apple cider vinegar is good.  So I had them all in one glass; half a lemon in slices, 1 small teaspoon of honey and 1 tbsp apple cider vinegar.  Not bad.water, lemon and honey For breakfast I had half a small watermelon.  I scrapped out the melon seeds and blitzed them in the Vita Mix which I then poured over the chunks of watermelon.  Eating the seeds adds protein and makes the meal more substantial.watermelon half and quarters It was a bit like a watermelon soup and was rather good.  Certainly very refreshing.watermelon soup For lunch I made a vegetable soup.  I made a chicken stock with the carcass from yesterday’s chicken and used that as the base.  I roasted 2 butternut squashes and 4 sweet potatoes with some sesame oil, fennel seeds, salt and pepper for 45 minutes at 180 °C.butternut and sweet potato We like soup very smooth so I blended it in the Vita Mix.  A little bit of the stock blended with some chunks of roasted vegetables and any bits of leftover chicken.  It always takes longer than I think to make soup but it is well worth it.making soup This was an excellent soup.  butternut squash and sweet potato soup It had the perfect consistency and a rich and well rounded flavour.  Definitely one to make again.  Harvey had his with crackers but I just had 2 bowls of the soup.sweet potato and butternut soup For supper I had a bowl of raw veggies and some chickpeas.  I dressed the salad with a very simple dressing made with olive oil and red wine vinegar.  That was it, nothing else was added.salad 2-1-15 2 A very satisfying supper and I think I will conclude this evening’s eating with an apple.salad 2-1-15

I am not giving up anything this year, apart from processed foods.  I want to eat a plant based diet which means mainly fruits and veggies with wholefoods such as brown rice and other whole grains, seeds and nuts.  I will eat a small amount of meat and have the occasional glass of wine.  I don’t want to eat anything sweet such as cakes, biscuits and puddings.  I am also going to try to eat minimal amounts of dairy.

So far this year, so good.  I am going to be much healthier this year.

Planning

Having recovered sufficiently from all the lovely socialising I have done over the past 2 weeks, I got some of my mojo back today and my thoughts turned to the New Year.  I began planning my diet and organising various aspects of my life which need attention.  There is a long way to go but I feel satisfied for having begun the planning of it all.

Part of my preparation for my healthy eating was to clear out the fridge.  I want my fridge to be filled with fresh and wholesome foods so anything droopy or wilting had to go!  Some things were fresh enough to consume but not quite good enough to eat so I made a juice.

juice ingredients 30-12-14 Not the best but I thought of the nutrients and it was bearable.  It was the Ying to the yang of the little bundle of chocolate coins I found and consumed later with a cup of tea!juice 30-12-14I had planned to play tennis this morning but frost prevented play which was frustrating.  However, instead of tennis I went for a walk with Harvey, Annette and our dogs so I did get some exercise in.
frosty walk 9 Harvey’s main objective on the walk was to find as much ice as he could – there was a lot around!frosty walk 8 I think this was the heaviest frost so far and it is really pretty.  The sun was so low in the sky and the air so still you could see the rays of sunshine coming through the trees.frosty walk 7 It was quite magical.frosty walk 6 frosty walk 5 frosty walk 4 frosty walk 3 This pond was completely covered in ice.frosty walk 2 All good fun for the Little Fella and of interest to the dogs.frosty walk 1 I was going to make a butternut squash for lunch but instead had cheese, crackers and grapes.  I had about twice this many crackers, all the Stilton but hardly any Gruyere.cheese crackers candle For dinner I made a surprisingly tasty supper.  I thought it would be one of those midweek suppers which is fine but not memorable but it was actually really good.  I cooked up some wholewheat fusili pasta.  While that cooked I fried some bacon and then added onion, yellow pepper and broccoli.  When that was nearly cooked I added chopped up left over turkey and bacon wrapped sausages.  Finally I added a generous dollop or two of our homemade cranbery sauce.turkey stir fry and pastaThis has used up all the turkey and remains of Christmas lunch apart from one more serving of cranberry sauce plus some more week old vegetables.
dinner and raw living This was so easy to make and so yummy I would happily eat it again.  It had that winning combination of sweet (cranberry sauce) and salty (bacon) and a great contrast of textures.  Plus it had lean protein (white turkey meat), vegetables and wholewheat pasta so while not a meal I would promote as healthy (mainly due to the pasta, sugar in cranberry sauce, sausages and bacon) it did have a lot to commend it.Dinner 30-12-14 This however has nothing going for it apart from the absolute pleasure and state of virtual Nirvana achieved while I ate it;  2 perfectly cooked (chewy in the middle) meringues on some lightly whipped double cream.  Food of the Gods and one of my absolute favourites.  I would have had it with berries but I don’t have any in the house.2 meringues with cream

So, a good day today.  Not with eating but I have had far worse lately.  But good because I saw Annette, had a lovely walk and spent useful time planning.  And relaxing.  Lots of much needed relaxing today.

Christmas 2014

Another lovely Christmas has been enjoyed by us all.  We have visited all our immediate family and done rather well visiting our “big” family too i.e. Anuties, Uncles and cousins.  I have eaten and drunk to excess practically every day, unfortunately not of plant foods and juices!

I have however, amongst the rich and unhealthy foods, also eaten lots of plant foods which is easy to do at this time of year as it is citrus time and I love all the citrus fruits, such as these lovely tangerines.tangerines I have enjoyed some fruity smoothies but not enough, in part because we have been away visiting a lot.smoothie with pomegranates When I am at home I do make sure we eat lots of fruits and veggies.  If I give Harvey a little bowl of fruit, all prepared and easy to eat he does munch his way through it so he gets some goodness in amongst the over indulgence of chocolate and rich foods.fruit selection I find that if I have an appealing plate of fruit at the ready, I can graze on it while cooking instead of something more fattening.3 fruits Dec

Our Christmas festivities began in earnest on Christmas Eve.  I made a pheasant casserole with the 2 pheasants BJ gave me.  This is a Delia Smith recipe and it is excellent.  The pheasant is cooked with bacon and mushrooms in Madeira and is one of my favourite casseroles.

As well as the usual present frenzy, we enjoyed a cocktail while the turkey cooked.  I am not sure I have had a Martini before – shaken, not stirred – but it was rather pleasant.  Quite strong though so one was enough!

Followed by roast turkey with all the trimmings.  Harvey made the cranberry sauce the day before using Helen’s recipe and it was excellent.

boats in Lyme Dec It looks as if Lara is leaning to the left but she is actually standing up straight.  It is the Cobb wall which is leaning to the right and it is this huge wall which protects all the boats in the harbour.at the end of the Cobb Back at Lucy’s house Martha found a cosy spot to sit in the sunshine and relax.Martha in sunlight Ian and Helen joined us for lunch and we had a lovely time.  The only lull over the entire festive period was watching ‘Mr Turner’, a film I had been looking forward to seeing but which was so disappointing.  2 and a half hours of the usually impressive Timothy Spall grunting, snuffling and rutting like a pig through a series of sets which were too pristine, with little dialogue or action of any interest.  At the end of the film we felt we knew little more about Turner’s life than we did before.  Ian and Helen in LymeMe with my sister Lucy.  After the stupor of Mr Turner we had a lively evening playing Racing Demons which was far more fun.

Zoe and Lucy Lucy’s house has a lovely view of the sea and it is always a pleasure to visit and hard to leave.  This time was no exception.view towards sea I was fortunate enough though to be heading for Chichester to visit my sister Holly and my sister Abi and her family joined us too.  Another day, another dinner table, another lovely meal.At H and R's table Holly and her hubby Richard live in a converted chapel which has created a huge and very impressive home and it was a very comfortable place to relax in.  Tempting to just sit and eat and drink some more but we managed to don walking boots and head out for a walk.Harvey and Richard It was sunny and cold which I think is great for walking in.  The light makes everywhere look pretty and the coldness makes you walk perhaps more briskly than you might otherwise and it brings a rosy glow to faces.walking near Chichester It was a pretty walk across flat countryside.me walking Quite muddy in places!muddy bits As the sun began to set, the frost had not melted all day which created a very pretty landscape.frosty fields Definitely time to go in and relax and eat and make merry.Holly's lounge We were joined by Lucy and Emily and dined on lighter fare than we have recently; melon followed by salmon with a lovely salad of red onion, fennel, oranges and pomegranate in a zesty dressing.  That is another recipe I will be sharing when I make it at home.supper 28-12-14

We were entertained throughout the evening by three minstrels who produced multiple performances for us in a variety of weird and wonderful costumes.

H M and K entertainmentI am now back at home, needing larger clothes !  I have overeaten by millions of calories every day and feel unhealthy as a result of it.  However, I have had a lot of fun, been surrounded by many of the people I care about the most, which is what Christmas is all about; being with family.  Thank you to all my hosts for a truly wonderful Christmas.

Parsnip and Ginger Soup

I managed to consume lots of plant foods today i.e. fruits and veggies.  I began the day with this colourful and tasty bowl of fruits.  I was actually still full from yesterday’s excesses but wanted some juicey nutrients and could think of nothing nicer than a bowl of fresh fruit.  Much as I enjoyed scoffing foods like sausage rolls and cheese, washed down with Prossecco, I didn’t drink enough water yesterday and felt quite dehydrated this morning.  This really helped.

fruit salad 22-12-14 I brought home some huge parsnips from Warwickshire and found a recipe I wanted to make from Hugh F-W’s ‘Veg everyday’ cookbook; parsnip and ginger soup.  I tried this recipe because I like this cook book and also because the Little Fella likes both parsnips and ginger and I want him to eat more veggies.parsnip and ginger soup It was really good so I shall share the recipe.parsnip soup Parsnip and Ginger Soup

Ingredients (serves 4)

1 tbsp olive oil
15 g butter
1 large onion, finely chopped
2 garlic cloves, finely chopped
4 – 5 cm piece ginger, peeled and finely chopped
¼ tsp ground cardamom
¼ tsp ground cumin
¼ tsp cayenne pepper (NB: we disliked the cayenne and next time I would leave it out)
500 g parsnips, peeled and cut in to 1 cm cubes
800 ml vegetable stock
200ml milk (I used soya milk to keep it dairy free and it worked well)
salt and pepper
2-3 tbsp mixed seeds or flaked almonds

Method

  1. Heat the oil and butter in a large saucepan and saute the onion for 10 minutes over a medium-low heat, until nearly translucent
  2. Add the garlic, ginger, cardamom, cumin and cayenne (if using) and stir for a couple of minutes
  3. Add the parsnips, stir to coat with spices and then pour in the stock
  4. Season with salt and pepper and simmer until the parsnips are soft – about 15 minutes
  5. Leave the soup to cool slightly and then puree until smooth
  6. Return the soup to the pan, add the milk and heat through
  7. If the soup is too thick, add some water
  8. Toast the seeds / nuts in a dry frying pan until just turning golden
  9. Serve in bowls with the seeds / nuts and black pepper

We had ours with a slice of toasted granary bread.

parsnip soup and toast After the trauma of a trip to my favoured supermarket, I needed a snack and chose a small packet of crisps with some humous.crisps and humous For supper I had one of the most delicious pies I have ever eaten.  It was pheasant and partridge and was packed full of succulent meat. There was a little bit of stuffing inside it too but mainly big chunks of tender meat.  Yummy.   If I had known what consistency the pie was, I would have served it with some gravy.  It was definitely not at all dry and we enjoyed it with buttery mashed potato, carrots and broccoli.  But some gravy would have turned a good dinner in to a great dinner.  I hope my fab friend can give me another one of these one day 🙂Game Pie

So there we are.  Not a diet friendly day but not a disaster either.  I have no intention of dieting at this time of year but I am trying to not add to my size!
