28 Day Vegan Challenge : Day 16

Yes, it really is only day 16!  I wanted eggs for breakfast but vegans don’t eat eggs.  I did not want breakfast or cereal or fruit,  so I used up some left over rice and had it with some stir fried vegetables.

Brown Basmati rice, edamame beans, kale, spinach, tomatoes and mushrooms with soy sauce.stir fried rice and veg

Lunch was inspired by these lovely ripe tomatoesRipe tomatoes

and a perfectly ripe avocado.perfect avocado

I toasted 2 slices of wholemeal toast,Wholemeal toast

made a guacamole with the avocado, lime juice, salt and some fresh basil which I spread on the toast. plus guacamole

Seasoned with salt and pepper.  Crunchy.  Creamy.  Juicy.  Tasty.Lunch 16-2-13

In the evening BJ was coming to stay on his way back from Meribel.  We met him at The Raja for a delicious curry.  After poppadoms with onion and mango chutney I had Bombay potatoes, spinach and Tarka Dahl.  Bombay Potato, Tarka Dahl and Spinach

We then headed off to Cranbrook Rugby Club to listen to the Tragic Mushrooms and catch up with local lovelies.

About Lose Weight and Gain Health

Hi! My name is Zoe and I live in Hastings, East Sussex, with my son Harvey and dog, Milton. I have been fighting the fat for years but this time I am serious. I want to lose weight and gain health. This blog is about how I am changing my lifestyle so I can lose weight but not by just "being on a diet" but by making small changes to our lives so that as I lose weight, I gain health. Another objective is to add more exercise to our days. It sounds so simple when I write it down :-)

    The Tragic Mushrooms sounds like a Vegan Cafe. Only joking – just been reading about veganism in the Sunday Times. It’s all the rage darling.
