I confess to still feeling a little tired this morning from the weekends fun. I had a lovely evening at home. It involved lots of sprawling on the sofa alongside my gorgeous boy and a small dog. Yes, Beryl was here for the weekend.
This morning I focused on packing in some nutrients. I had a very ripe mango
and an avocado that just won’t ripen. So I have given up with it and I popped it in the blender with the mango,
plus 1 tbsp of each of these powders and coconut milk.
It was thick and creamy. Had a slightly strange taste (I think I overdid the hemp protein) but was very drinkable.
It was sunny and bright outside but cold. However, 3 little faces told me it was time to go for a walk.
We went over the road and it was lovely.
The streams were all full and flowing
and some have popped up where there are usually none.
I snacked instead of having lunch which was a mistake. Toast with marmalade and then cheese and biscuits. So not healthy and too many calories.
I tried to make it up at tea time. I roasted the salmon with cherry tomatoes, red onion and a red pepper, drizzled with some olive oil.
Served with Quinoa which I cooked with some vegetable stock.
Nothing else was added. No salt or seasonings.
It was good, tasty and healthy and I have a portion ready to take to work tomorrow.
Happy 400 to you Zoe! It looks like you have set yourself up for success for tomorrow. I made Bob and I some crock-pot/slow-cooker steel-cut oats last night with apples, cinnamon, nutmeg and 1/2 water 1/2 almond milk, which was so creamy and yummy this morning. Bob was really happy to have such a healthy start to the morning. I turned it on Low about 9:00 p.m. and it was ready for him at 5:00 a.m. He was a happy camper that I found a way for him to have hot cereal and not have to spend the time he doesn’t have cooking/stirring it for 20-30 minutes. It was so nice an creamy and I thought of you and your busy working week breakfasts.
That sounds wonderful and what a good idea. My crock pot is very large though so I don’t think it would work. I am intrigued by “steel cut” and want to look that up. My oats only take 10 minutes to cook. I did have porridge today but made by someone else 🙂
This link from Dr. Andrew Weil should explain it rather well. Steel cut is the processing and it takes longer to digest in your system, keeping you full longer.
