I want a day off. A day where I can just choose fun things to do or relaxing things to do. I had so much to do today I had to write a list and the list was too long for a Sunday. Definitely too long for the only clear day in my diary for the next month. Humph!
Needed something energising. Kale, fried in coconut oil,
with 2 eggs and some Cheddar.
Kale and cheese omelette. Yum!
Loads of garlic, which is now brushed and stored.
Quick and simple lunch of tuna and sweetcorn mayonnaise sandwich.
Since I had some really boring chores to do, I made a delicious drink as a more interesting diversion.
There are many iced peach tea recipes on the internet and I chose this one from Channel 4.
Peach Iced Tea
Ingredients (makes 4 glasses)
- 1 tbsp loose leaf tea
- 2 tbsp sugar
- 1 passionfruit
- 500 ml peach nectar
- Crushed ice to serve
Method
- Place the tea in a jug and pour over 500ml boiling water.
- Leave it to steep for 5 minutes then strain in to a jug, stir in the sugar so it dissolves and set aside to cool.
- Sieve the passion fruit so the pulp is added to the tea, along with the peach nectar.
- Serve over ice
This was lovely. Sweet and refreshing.
These make me smile each time I walk past them.
Supper could have been simpler but we all wanted a roast. It seems like it has been ages since the 4 of us sat round the table and had a traditional Sunday meal. We had roast chicken, which I roasted with garlic, lemon and tarragon, with potatoes from the garden, broccoli, sweetcorn and mashed butternut squash. It was delicious.
I have such a busy week ahead of me. 2 trips to the Paralympics planned :-). 2 nights out planned 🙂 . Plus travelling to 3 different offices. So much stuff to do!
I hope you had an organized, stress free Monday. Here in Canada it is Labour Day and mine was one exactly what you wanted, so I am sending you the relaxed energy so you sleep well tonight.

What a great way to end the evening. I really do wish they would put the Paralympics as the same level as the Olympics and get the same airtime coverage. But they don’t YET, so I catch what I can online.
