Cloudscapes

Living beside the sea has made me more aware of the beauty of the clouds.  I think it’s because you san see so much sky because your view is not obstructed by any buildings.   As I drove along the seafront this morning the cloudscape (is that a real word?) was stunning.  The sky was filled with a towering black could but it was fringed by a bright white cloud layer.  I had to pull over and take some photos as it was so beautiful.IMG_1086My iPhone has not managed to capture the contrast between dark and light accurately.  The lower layer was bright white rather than gold.IMG_1087The colours are more accurate in this photo.IMG_1088Very dramatic.IMG_1089I didn’t eat anything very exciting today.  Cherries and melon for breakfast.IMG_1094Heated up leftovers for lunch: I mixed the leftover pasta in a cavelo nero pesto with last night’s left over lentil and mixed bean curry.  They did not taste good mixed together but this bowlful kept me going for hours.IMG_1100HOW MANY CALORIES ARE IN A PIZZA ????  I am so shocked.  I knew they were bad but had no idea it would be that bad.  This pizza has hardly any cheese and obviously no meat.  But it has nearly 700 calories – it weighs 320 g.  That converts to between 30 -35 syns so more than 2 days worth.  I didn’t have any yesterday so I have evened out but even so, that is shocking.

This was not a patch on the amazing pizzas from our local pub but it was ok.  However, now I know how many calories/syns are in it, I am not having another one.  I will save pizza calories for the Imperial pizzas.

Hastings Country Park

I had a brilliant day today because Lucy and I walked for about 3 hours in the beautiful Hastings Country Park on a warm and sunny day.  It was challenging for me but I managed and feel great this evening.

I had half a melon and a huge cup of tea for breakfast.IMG_1049I made syn free potato wedges but chopping up potatoes, rubbing them with smoked paprika and salt and baking them in the oven at 200 ° for 30 minutes.  They were for a picnic on the beach.IMG_1052Lucy picked me up and we drove over to the Country Park and parked up near the Visitor Centre (near Fairlight Church).  The Visitor Centre was open today and we got a really informative leaflet with a much needed map.

The leaflet describes the Country Park as:

“A picturesque nature reserve of national importance with stunning coastal views sited within the High Weald Area of Outstanding Natural Beauty.

The nature reserve has 345 hectares (853 acres) of ancient gill woodland, heathland, grassland and farmland together with 5 kilometres of dramatic sandstone cliffs and coastline.  Much of the area has been designated a Special Area of Conservation (SAC) and a Site of Special Scientific Interest (SSSI) due to the unique wildlife & fossil rich soft rock cliff and slope.”

We then proceeded to have a really delightful walk; one of my favourites of the year.  The scenery was so beautiful and so varied.  Come and have a look.

IMG_1057This is the view from the Coast Guard Cottages, looking towards Hastings.IMG_1058This is the view looking back the way we had walked, towards the Fire Hills and Fairlight.IMG_1060Our destination was the little beach in the cove near Fairlight Glen.IMG_1061The scenery was so varied, it made for a very interesting walk.  I was only in trainers but it was muddy and slippery in patches so proper walking shoes next time and walking poles as it was very hilly and in places, very steep.IMG_1064A little waterfall.  I loved the variety of woodland areas and open clifftop areas with sweeping sea views. IMG_1065The descent down to the cove.  This was very difficult and I was glad of a rope someone had provided.IMG_1067IMG_1068We made it.IMG_1069What a perfect spot.  We nearly had the beach to ourselves and we sat and relaxed for a while as it was so warm and peaceful.IMG_1071I ate my lunch; potato wedges and celery sticks.  Not very exciting but I didn’t have time to make anything else and it was sufficient to keep me going for the day.  It was a long and steep walk back up to the top of the cliffs.IMG_1073We were blessed with perfect weather.  Look at the colour of the sea!IMG_1075It was a hilly walk and I had to stop to catch my breath several times – thank you Lucy for being patient.IMG_1076Near the end of our walk was a disused quarry so another scenery change.IMG_1078Near the car park is a cafe and having walked up and down all these hills and down to the beach and up again, we enjoyed a good cuppa.  I will be back here, that’s for sure as it was such a beautiful walk.IMG_1081Supper was a made up lentil and mixed bean curry.  I “fried” some onions in vegetable stock with fresh ginger and garlic, added ground cumin, turmeric and coriander and then added carrots, cavolo nero, and a tin each of lentils and mixed beans.  I added a smudge of maple syrup and the zest and juice of a lime to balance the flavours.IMG_1082I also added a large jar of passata and served it on a bed of rice with fresh coriander.  Nothing very exciting but nourishing and good enough.IMG_1084I haven’t had any syns today and no HEB and I walked for about 3 hours.  And had loads of fun.  So a brilliant day.

A Green Day

I didn’t sleep well last night and woke up feeling tired.  It was sunny so I took the dogs to Bulverhythe to see if a walk beside the sea would rejuvenate me.IMG_1022It did, as it always does, but I still felt a bit tired.IMG_1023I reviewed the weekend’s meals while I walked and they were not good enough; either in terms of being on the diet plan or being nutrient dense enough.  So I resolved to head home and have a large green smoothie.  Green vegetables are so nutritious and I have not eaten enough lately and an easy way to consume a lot of raw green leaves is in a smoothie or a salad.  So I had a smoothie for breakfast and a salad for lunch.

I added some seaweed which I dislike but if I let it soak for a while in whatever liquid I am using, it becomes soft and can be blitzed so small in my Vitamix (blender) that I don’t notice it.  I think this has zero syns.  Some seaweeds do but this is 100 % natural seaweed.IMG_1024I used 500 ml almond milk (half my HE A) and packed the blender with green vegetables:  cavolo nero, and, from the garden, Japanese spinach and mizuna. I feel better just looking at those green leaves.IMG_1026Plus a scoop each from the 2 green powders I regularly add to my food.  I usually only add one at a time but today I had both.  IMG_1027I also added 2 bananas.  You are meant to add syn values when you blend them, even though bananas are free usually.  This is because you would eat more in a smoothie than as a whole fruit.  However, I would eat 2 bananas if that was all I was eating so I did not add any syns for this glass of greenness.

It was certainly green and tasted very virtuous! It’s not for the faint hearted but tastes ok and I was glad of the nutrients.IMG_1028The veggie patch is doing well.  These are the Japanese spinach plants.IMG_1030This is the mizuna, which I usually add to salad but it was fine in a smoothie too.  It’s a bit peppery, similar to rocket.IMG_1031 (1)I am thrilled with how quickly it has grown as I only planted the seeds, directly outside on the 26th August – less than a month and they are ready to eat.IMG_1032I planted radish (and lettuce and borage) on the same day and they radishes are now growing well too.  The lettuce and borage are progressing but far more slowly.IMG_1033For lunch I was aiming for a large green salad and topped it with a carrot and corn salad which I have not made before.  This recipe comes from one of my favourite cook books – ‘My New Roots’.IMG_1034It was really easy and tasted lovely.  Although I must say I don’t like carrots cut in to rounds.  Is that weird?  The recipe said to cut in to rounds but I much prefer sticks and I cut both ways to check.  Yup, sticks beat rounds hands down.IMG_1035

My New Roots’ Sundown Carrot and Grilled Corn Salad

Ingredients

  • 2 large corn cobs
  • knob of coconut oil (I didn’t use any oil when cooking the corn)
  • Grated zest and juice of 1 lime
  • 1/2 a fresh chilli, chopped in to tiny pieces
  • 1 tsp maple syrup
  • 1/2 tsp sea salt
  • 1/2 tsp ground cumin
  • 1 tbsp cold pressed olive oil
  • 3 medium carrots (recipe says purple but I used orange), sliced thinly
  • 4 spring onions, sliced in to thin rounds
  • 1 small bunch coriander, chopped
  • smoked sea salt

Method

  1. Brush the corn with oil (optional) and grill for 10-15 minutes until the corn is tender.  Set aside to cool, then scrape the kernels in to a large bowl.
  2. In a small bowl which together the lime zest and juice, chilli, maple syrup, sea salt, cumin and olive oil
  3. Add the carrots, spring onion and coriander to the large bowl containing the corn.  Pour the dressing over, toss to combine and set aside for at least 10 minutes to let the flavours soak in.
  4. Season with smoked sea salt and enjoy.

This was a simple lunch and very tasty.  I ate the carrot and corn salad on a bed of round lettuce and mizuna.

I calculated the salad had 6.5 syns in total.  I ate half for lunch and a quarter for supper.

For supper I made pasta in a cavolo nero and garlic sauce.  I based it on a Jamie Oliver recipe you can find here .  I used 2 tbsp oil (instead of 100g Jamie uses !!!!) and made the sauce blend smoothly by adding some of the cooking water.  I didn’t have a leek so my green sauce was made with cavolo nero and garlic plus some fresh basil and also 1 tbsp sesame seeds and 1 tbsp linseeds (HE B).IMG_1041I blitzed the cooked garlic and cavolo nero with fresh basil and the seeds.IMG_1044Then stirred that in to the cooked pasta.

I also roasted some cherry tomatoes (from the garden) and 2 standard sized tomatoes.  I didn’t add any oil, just a little salt and pepper.IMG_1040Harvey and I both had the same supper and both declared it perfectly pleasant and very adequate.IMG_1045I liked the combination of colours, flavours and textures.IMG_1046So my day’s eating was very nutritious and I feel much better.  I end the day on 12.5 syns and having walked 9,000 steps.  I will try to get that up to 10,000 before bed tonight.

Fairlight Hall and Hastings’ Seafood and Wine Festival

My view seems to have disappeared!  This is what I woke up to.IMG_0896After a misty start to the day, the rest of the day was spent in sunshine which was lovely.  The sea was ultra calm today so we had a lovely swim.  Harvey swam with me (well, he was in the water at the same time) and Milton scavenged around for mussels.  I upped the distance to swim 8 times between the groynes today.  The swimming was so enjoyable and we both relaxed in the water for a while before getting out as the water temperature is still warm enough to enjoy being in.

Breakfast was a bowl of porridge made with almond milk (HE A) and with 1 tbsp linseeds and 1 tbsp sesame seeds added in (HE B) and topped with half a fresh mango. That plus a strong black coffee and a hot shower warmed me up nicely.

IMG_0918Our next outing was to Fairlight Hall, which I have never been to before.  WOW!  WOW! WOW!  I am going again.IMG_0932There are so many stunning plants there; I highly recommend a visit.

I was impressed they have so much colour in their flower beds but I nearly swooned when I saw the vegetable garden.  It was laid out out in a beautiful (and huge) walled garden.

We both enjoyed our visit to Fairlight Hall.

At home I munched on a couple of bananas as by then it was 2pm and I knew we were not eating lunch for a while and I was hungry.IMG_0989We walked for half an hour to get to The Stade to the Seafood and Wine Festival.  It was packed!IMG_0993I am obviously not a fan of seafood but Harvey likes it and I wanted to support a local venture which is why we went.  I managed to avoid all the fabulous wines on offer which was a relief as I don’t need the calories and the wine makes me forget my diet!

These were my favourite fish for sale.IMG_0992Harvey chose a paella and I had lunch from this van:  IMG_0998Punjabi Samosa ChaatIMG_0999and I also bought some samosa’s to share.  None of it was at all greasy but I have no idea how to work out the syns.IMG_1001It was very crowded at the festival so we walked round to the beach and enjoyed our lunch, sitting in the sunshine.IMG_1003IMG_1006I have never sat at the harbour arm end of the beach before and it was very pleasant, watching the boats coming and going and the paddle boarders drifting along.IMG_1010Hastings looks very small compared to the huge cloud hanging above it.  When the rainclouds began to get larger and darker we walked home.  So as well as swimming for half an hour today, I have also walked 13,500 steps which is great.IMG_1013My view was back when we got home.IMG_1019I hope you all had a good weekend.  I certainly did.

Back In The Water

After a bad experience in the sea last Sunday, I have been anxious about getting back in.   However, I did not want one bad moment to ruin something I love so much so I was determined to go again. The sea has been so rough this week I was unable to go back to the sea with my swimming companion, Rebecca but this morning I knew the sea was calm.

High tide was at 08:23 so I got down to West St.Leonard’s  by 8am.  I wished I had someone to go in with but I didn’t.  There was so much seaweed and so many shells on the beach, washed up from the stormy seas earlier in the week.IMG_0874Milton would have enjoyed the mussels.IMG_0875I find the colours and patterns on the beach very lovely.IMG_0876I haven’t seen such pink seaweed before on these beaches.IMG_0877Time to get in.  The water was so calm there was no reason not to so in I went and it was fabulous.  The air temperature was 13 °and the sea temperature was 16 ° so it was actually warmer in the sea than out!  IMG_0880I swam backwards and forwards between the groynes 6 times.  It felt great and I was so glad I went in. IMG_0883 I also met another swimmer out there, who swims all year round and she suggested I join a local sea swimming group on Facebook.  So I have done that and can see there is a swimming event annually from the harbour arm to the pier and back again;  I hope to be able to do that next year.IMG_0882Back at home I had a hot bath and then a large bowl of fruit with 150 g Alpro vanilla yogurt (2 syns).  I added the yogurt and banana as I was hungry and knew I wasn’t having lunch until 2:30.IMG_0884I drove up to Surrey to have lunch with my Dad and step-Mother and was delighted Lara joined us as well.  Dad took us to Zizzi’s which I like as they have a really good vegan menu.

I resisted wine (easily done as I never drink alcohol when I have to drive on a motorway)  and instead had a lime soda (3 syns).  As a starter I had a small bowl of spiced nuts.  It was mainly chick peas so actually not many syns.  I can’t find any Zizzi dishes on Slimming World Online but a member of my SW group helpfully sent me a link to the calories.

Herby potatoes = 338 caloriesIMG_0889I should have then just had a black coffee but I didn’t because Zizzi does the most amazing vegan dessert;  sticky chocolate torte with a scoop of coconut and chocolate ice-cream.  So yummy it’s hard to believe it’s vegan.

Coconut and chocolate gelato = 112 caloriesIMG_0890Total Zizzi calories = 1,486.  Wow !!!!!  So high but it was all very enjoyable and it was great to spend time with my family.  But I think next time I need to resist the torte and ice-cream and then I would only have had 835 calories.

In the evening I had a small portion of vegan shepherd’s pie I had left over in the fridge.

My Birthday Week

I am feeling very happy because I lost 3 pounds this week even though it was my birthday week and I was not eating to plan all the time.  I did however focus when I could and do a lot of exercise which saved me.  So that means I have lost 8.5 pounds to date (in 2 weeks) and I am pleased with that.

I am finding I do well and feel good when I exercise in the morning and eat a light breakfast of just fruit.  I like most fruits and have had a variety of fruit salads throughout the week.

Lunches and suppers have mainly been home cooked and simple.  With no alcohol, which I find easy to resist when we are home alone but it is harder with visitors but I did it this week.  I batch cook so I have leftovers.  It means I eat the same meal several times in the week but at least it’s nutritious and mainly free from syns.

One exception to home cooking was a lunch in Radley’s Bistro on George Street which Ian treated me to.  They made me a buterbean pie with potato on top instead of pastry.  I managed to leave most of the sweet potato fries.  This was very tasty.

IMG_0811I did some new exercises this week or familiar exercise in new places.  I did a challenging (for me) yoga class in Udimore on Monday.  I will go again as I enjoyed it and really liked the teacher.

On Monday Lucy and I went for a walk in Hastings Country Park which I have never been to before.  It was beautiful.  IMG_0770Lovely weather for a walk too as it was sunny and very clear so we could see for miles.IMG_0771It was windy, which I suspect is not unusual in these parts, judging by the trees! IMG_0772We plan to walk the entire length of the park, which is about 5 miles, hopefully next week.IMG_0775The sea conditions were too rough for me this week so I have not been in the sea since Sunday but I do plan to go tomorrow.  Instead I went to a swimming pool and yesterday I swam 50 lengths (of a 25m pool).

I did quite a lot of walking around Hastings as we had some lovely visitors staying this week; my step-Father Ian and his wife, Helen.  Helen loves gardening and arrived with a plant for my garden and plans to buy me some more while they were here.  Helen was impressed with my immaculately kept vegetable beds but not quite so impressed with my weeding in the flower beds so Ian and Helen both rolled up their sleeves and helped do some weeding and pruning which I was very grateful for.IMG_0790I prised them away from the garden so we could go for a walk around the Old Town as neither of them have been to Hastings before.  We started at Rock A Nore.IMG_0792We were blessed with a beautiful day.IMG_0795I have wandered round the Old Town many times now and every time is different as each visitor notices and is interested in different things.  Ian and Helen liked the architecture and all the different doors and door furniture.

I had a successful morning (as well as very enjoyable) because I found some items for a costume I am putting together and a chair.  I have been looking for a chair that is tall enough for me to sit at in my new office/study but not too tall.  It has been tricky but I found one in Hendy’s so I was really pleased about that.  I often take visitors in to Hendy’s because it is so interesting and there is always something you want to buy.

After a morning away from a garden Helen had itchy green fingers so I took them to one of my favourite nurseries;   The Walled Nursery on Water lane in Hawkhurst.IMG_0826Its a delightful independent and family run nursery, with many greenhouses which are being restored.  We walked through the melon house which has lots of succulents and cacti in which I liked.

I highly recommend a visit.  They also have a cafe and adjacent to them, in the old estate office, is my favourite florist; Astilbe and Sorrel .  We enjoyed being there and Helen treated me to some new plants which were planted as soon as we got home!  I liked these so might get some another time.

IMG_0827I have also enjoyed walking at Bulverhythe this week.  It is convenient to get to after dropping Harvey at school and the sun has been shining brightly first thing.  I have not added any filters of edited this picture in any way – I love that blue.IMG_0843These two enjoyed their walk there this morning.IMG_0862 (1)More cloudy today than yesterday but such pretty blues in the sky made it a real delight to walk about in.IMG_0864So that was my week.  I did well from Monday until Thursday night when I went to Marion’s with Sarah for a belated birthday celebration.  Marion’s daughter Lucy is a vegan and her daughter JoJo lives with 2 vegans so they are really good at vegan catering.  Jo Jo made a wonderful tomato, aubergine and pesto tart which was so good I ate too many slices of it (and too much humous and olives in oil). Hey ho, it was all delicious and lovely to be back in my old village for an evening with my former neighbours.IMG_0850I had earlier that day spent a happy afternoon with another friendly face from Sissinghurst; Lisa, who came to visit. I love living in Hastings and am so glad it is easy to keep in touch with the super souls I met in Sissinghurst.IMG_0849I am happy with my weight loss this week, happy with my exercise and very happy to have spent time with so many lovely people.  I feel really motivated to have a good week and can not see any obstacles. Birthday Weekend 2017

I had such a fun birthday weekend.  I use the term “weekend” loosely because my celebrations began on the Thursday.

We had a fantastic swim on Thursday and I ate really well during the day.  Oranges and a kiwi fruit for breakfast and then a delicious bowl of brown rice, lentils, green vegetables, sprouts, mushrooms and samphire for lunch.  It was brilliant.  In the evening I went up to London and had a really good Thali in an Indian restaurant on Floral Street in Covent Garden called Masala Zone.  It was good food, good service and excellent company as I was with my sister Lucy, Lara and Keven, a very dear friend who is visiting from Australia.

Friday was my actual birthday.  It was also weigh day at Slimming World and after a week of diligently following the plan (until Thursday evening), I was pleased to have lost 5.5 pounds.

I had a lovely day with Lara being at home.   The only disappointment was the shocking weather; it rained so hard I was unable to go to the castle which was the intention for the morning.  Despite the torrential rain Rebecca and I did actually go to the beach for a swim but decided against it as the waves were so high so my new goggles remained unused.  I did use the lovely Clinique body cream Lara gave me and I was really pleased with the little pot Rebecca made me and which I am using as a pepper pot.

It is fair to say I did not stick to plan, at all !!!  After a leisurely day we had pizza and beer in the Imperial.  I discovered the Imperial Stout which is a real joy to drink, despite the £11 a pint price tag although at 9.1 % you can’t drink much.

On Saturday Keven came to Hastings to see our new home and my sister Abi joined us for lunch.  I had half a perfectly ripe papaya and some pineapple for breakfast but the rest of the day was not so good.  Lunch was OK as it was mainly vegetables and lentils with some humous and bread.  I even managed to decline a gin and tonic.  But we seemed to end up back in the Imperial where I had pizza and the Imperial stout, again.

I didn’t manage a swim on Saturday but I did walk a lot; more than 13,000 steps.  This was due to walking to the castle and then in to the Old Town.  When I sit in my armchair at home, I can see the castle and until Saturday, I had never actually been to it.  Now I have.  Before getting to the castle we admired the views of the Old Town from the cliff tops just outside the castle.

It was quite windy but mainly sunny and bright so I think we saw the castle at its best.  It was very interesting and we all enjoyed pottering about around the ruins.

IMG_0738Can you see it?IMG_0723There we are – the Terrace.IMG_0723 (1)On Sunday I had all good intentions of getting back to plan but I was incredibly tired and then had a bad experience in the sea.  It seemed much rougher than it appeared and I mis-timed my entrance and ended up being battered by large waves and all the pebbles they contain!  It is the getting in and out that is hard because of the way the waves crash to shore.  If you time it correctly, you can enjoy swimming as away from the shore the waves are more manageable.  But I blew it yesterday and suffered the consequences.  Suffice to say I did not enjoy it as much as I should and quickly became cold.  Once home I thawed out in a long hot bath and then wasted the afternoon dozing on the sofa, eating toast and drinking tea.  So not great.  But I can report the new goggles were fantastic.

IMG_0744I did much better with my eating and exercise today.  I was unable to swim due to huge waves today so I went to a yoga class in Udimore for the first time.  It was very challenging for me but the teacher was incredibly helpful and supportive and I enjoyed it very much but have felt achey all afternoon as she really pushed me, which is a good thing.  I have included a picture of the geese who roam around the village green in Seddlescombe; I had stopped to get some water as I was thirsty after yoga and stupidly had not taken any water with me.

I ate this meal twice today; once at home for breakfast and again as a packed lunch.  The best part was that it was all leftovers, including the salad, so no preparing or chopping.  Just opening up storage jars and serving it.IMG_0751I made more effort for supper and cooked a vegetable and cannelloni bean soup.  It was acceptable.  Very nutritious but not quite as tasty as I wanted.  No syns in it though because I did not add any oil during cooking.  The liquid is a combination of vegetable stock and a tin of chopped tomatoes.  IMG_0763

Gratitude and Two Beaches

I went to the beach twice today; once to swim and once for a dog walk.  I really enjoyed both trips.

We swam near Rock A Nore again.  We aim to swim just before high tide and that was at abut Midday today.   The sun actually shone while we swam which was lovely and it warmed up the pebbles so they were quite cosy to sit on for a while when we came out of the sea.IMG_0667I cold sit and watch the waves for hours.IMG_0670In the evening Rebecca and I took the dogs for a walk along the beach at St. Leonards.IMG_0679We went at low tide so all the rocks and little rock pools were exposed.  The beach is so different at low tide and is lovely to walk along.IMG_0682Milton was like a kid in a sweet shop.IMG_0688As I usually take him at high tide, he scavenges mussel shells off the beach.  But at low tide he could pick them off the rocks.  I only let him have a couple as I am not sure if they are good for him and he has just had a very upset stomach.IMG_0687The water is quite calm this evening and it is a full moon so we did debate going for a moonlit swim but actually it’s a bit chilly and I feel tired and so we both agreed to skip the moonlight swim.  Another time.IMG_06892 dogs and 2 birds enjoyed their evening beach stroll.IMG_0691So I did ok for exercise today, with the swimming and walking.  Eating was mainly good but not perfect today.

I really like papaya; it’s one of my favourite fruits and I bought this beauty in Barnet on Saturday.  I had half the papaya for breakfast, with a mango and a cup of jasmine green tea.

We unexpectedly had lunch out because I needed to get some papers printed which we did straight after our swim.  By the time that was done it was 1pm and we were both hungry so we popped in to Cafe Gratitude and sat there, somewhat damp as we still had our wet costumes on, and had a bite to eat.

I had an almond milk latte.IMG_0675Then the vegan full Monty.  I find it really hard to work out the sun value on these meals as I don’t know what was cooked in oil, what type of bread it is etc.  So I calculated  4 syns as follows:

  • bread as a HE B as although 2 slices, they were small
  • 1 tsp spread on the bread – 2
  • 1 tsp oil used in frying – 2
  • tofu – scrambled with curry powder – 0
  • 250 ml almond milk in the latte – 5

IMG_0676Supper was easy as it was leftover Tex Mex casserole from yesterday.  I made Harvey’s in to a burrito and I had mine with jalapeño, juicey tomatoes and half an avocado plus coriander.  It was delicious and it reheats very well.IMG_06777 Syns for half the avocado.  The rest was speed or free food.IMG_0678I was ok at this point (16 syns) but as we had eaten a very early supper (4:30 as we had to be at an event at Harvey’s school), I was hungry after the evening walk along the beach and so I had some tortilla chips (25 g ish) and humous ( 1 tbsp ish) which I have synned at 6 + 2.5 = 8.5.

Daily syn total is 24.5

1 swim of at least 400 m in the sea and 7,500 steps walked.

Tex Mex Casserole

The swimming continues.  Undeterred by the rain the intrepid swimmers set off again and were rewarded by the rain stopping as they reached the sea shore.IMG_0629The sea was much calmer today than yesterday which meant we were able to actually swim more, rather then just bobbing about and enjoying the huge waves.  The colours of the water and the clouds made for a very dramatic swim today.

The sun nearly shone but not quite.IMG_0631Our only company in the sea today was a fishing boat, surrounded by gulls hoping to get lucky with some fish.  As a vegan I obviously do not like fishing but if people are going to eat fish, I would rather they bought fish caught by the local fishing boats as their fishing methods are more sustainable than the huge ships used by the supermarkets.

These people are even more sustainable as they are trying to catch their own!IMG_0644

I ate well today.

Breakfast

Rice, 2 kiwi fruits and 250 g stewed apples (HE B) with a little cinnamon.

Lunch

Leftover swiss chard and red lentil dal mixed with baked beans and a huge pile of stir fried veggies, just flavoured with garlic, chilli and soy sauce (mushrooms, red onion, orange pepper and pak choy) , garnished with coriander.  All free and speed foods.

Dinner

I found these little pots in my spice cupboard and decided I fancied making a smoked paprika flavoured supper.IMG_0650One of the first vegan blogs I started reading was Oh She Glows written by a Canadian vegan called Angela Liddon .  I have her cookery book and flipping though it I found her recipe for a Tex Mex casserole.  I have made it before and know we both like it.

Oh She Glows’ Tex Mex Casserole

Ingredients (serves 4 – 6)

  • TEX MEX SPICE BLEND:
    • 1 tbsp chilli powder ( I used a bit less to reduce the heat)
    • 1 1/2 teaspoons ground cumin
    • 1 teaspoon smoked paprika (I used the chipotle rub instead)
    • 1/4 teaspoon cayenne pepper (I left this out)
    • 1/4 teaspoon ground coriander
    • 1 1/4 teaspoons fine sea salt (I used my smokey salt)
  • CASSEROLE
    • 1 1/2 teaspoons oil (I subbed with veg stock to reduce calories/syns)
    • 1 red onion, diced
    • 3 cloves garlic, minced
    • 1 orange and 1 red pepper, diced
    • 1 jalapeno (if desired), seeded and diced
    • salt and pepper
    • 90 g fresh or frozen corn (I used 2 corn cobs)
    • 1 can of tomatoes
    • 250 ml tomato sauce (I used 200 ml tomato puree)
    • 120 – 200g chopped kale or spinach
    • 1 can black beans, drained and rinsed
    • 500g cooked rice
    • 50 g vegan cheese, grated (I used 100g)
    • 1 – 2 handfuls corn tortilla chips

Method

  1. Make the Tex Mex spice blend; combine all the spice ingredients in a small bowl and set aside
  2. Preheat the oven to 190° C
  3. In a large pan heat the oil (or veg stock) and add the onion, garlic, peppers and japaleno and fry gently for 7-8 minutes until softened.  Season with salt and pepper.
  4. Stir in the Tex Mex spice blend, corn, tinned tomatoes, tomato sauce/puree, kale/spinach, beans and rice and half the cheese.
  5. Pour the mixture in to a casserole or serving dish, sprinkle with crushed tortilla chips (I did not do this, as I just served them separately so I didn’t eat any) and the remaining cheese.  Cover with a lid or foil and bake for 15 minutes.

You could serve this with a salad, salsa, guacamole or avocado.  I just had mine as it was and it was delicious.

This meal was all free foods and speed foods apart from the cheese.  I used 7 syns on 50 g of ‘Violife for pizza’ cheese as that has a reasonable melty quality and tastes ok too.

Earlier in the day I made a coffee with 100 g cashew milk which is 1.5 syns so the day’s total syn count is 8.5.

My HE A was 300 ml soya milk in tea (I had a lot less than that today)

So a good diet day and another swimming day.

Lebanese Lentils and Cauliflower

I woke up to rain today which is good for the garden, especially the little seedlings which have sprouted this week.IMG_0595I only planted the radishes, borage, lettuce and mizuna last Saturday (9 days ago) and they are already looking good.  If we have the warm Autumn we are forecast they should grow to an edible size.  You can also see baby leeks (top bed under the chicken wire – they look like grass) and Japanese spinach in the front right hand side.IMG_0596Was it swimming weather though?IMG_0600It was more of a challenge today because it was very overcast and actually raining so going for a swim in the sea did not seem very appealing but we decided to go for it regardless.  IMG_0602IMG_0607Obviously we were the only ones on the beach!IMG_0609The sea was VERY lively and I wouldn’t have gone in alone but as we were together, we both swam.  And it was absolutely marvellous.  IMG_0606E-X-H-I-L-A-R-A-T-I-N-G.  Getting in and out was quite a challenge as the waves were high and when they crashed to shore the pebbles all swirled around but once you were out a bit deeper it was great fun, bobbing about out there.IMG_0625

I had porridge for breakfast (HE B) made with soya milk (HE A), with 2 bananas and 1 tbsp of hazelnut butter (4.5 syns.IMG_0614

I seemed to miss lunch (breakfast was late) and for supper I made a bit of a family favourite; Roasted Cauliflower with Lebanese Lentils. This is one of my favourite recipes from My New Roots.  My New Roots is a brilliant book (and instagram site and website) written by Sarah Britton, a Canadian holistic nutritionist who now lives in Copenhagen.  It’s not 100 % vegan but very close.  The recipes are imaginative and arranged seasonally which I really like.

Roasted Cauliflower and Lebanese Lentils (serves 2 – 4)
Ingredients for the cauliflower and lentils
  • 1 head of cauliflower
  • 1 tsp oil for basting on the cauliflower
  • Salt and pepper to season
  • Half a cup of quinoa, cooked
  • 1/2 cup of green lentils, cooked until soft (I soaked mine for about 2 hours and then simmered for 20 minutes)
  • 2 teaspoons of cumin seeds
  • 1 teaspoon of fennel seeds
  • 1/2 teaspoon of black peppercorns
  • 1 stick of cinnamon (optional.  I didn’t use one but if you do, add whole while you fry the onion and other spices and then remove)
  • 2 large onions
  • Veg stock for “frying”
Ingredients for the dressing
  • Zest of 1 orange
  • Juice of half an orange
  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • Pinch of salt
  • Handful of chopped fresh mint and parsley
Method
  1. Heat to oven to 200 degrees Celsius and line a baking tray.
  2. Cut the Cauliflower into steaks and place on the tray, baste with oil and season.
  3. Roast in the oven for 20 minutes.
  4. In the meantime, heat 1 small ladle of veg stock in a large saucepan and fry the onion and spices.  I don’t like chunky spices such as whole seeds so I blitzed mine to a powder in a coffee grinder first.  Add more stock as needed.
  5. Once the spices are fragrant and the onion is soft (takes about 15 minutes), remove from the heat and add the lentils and quinoa and mix well together.
  6. Whisk dressing ingredients together and mix in to the lentils and quinoa .
  7. Place the lentils in a bowl and top with the roasted cauliflower.

I served mine with a large tomato.  This is a very flavoursome dish and I really enjoyed it.  It looks a bit dry in the photo but it wasn’t at all.  It’s warm and gently spiced with hints of orange and mint.IMG_0616I don’t feel as if I ate much today but I managed to use 14.5 syns, mainly from the oil in the cauliflower and lentil supper as I ate half the amount I made.

I walked 5,000 steps so short the 10,000 I aim for but I think the swimming added to the exercise total so not bad for a day.  And the swimming was great fun and the supper delicious so I go to bed satisfied with diet and exercise and happy as I had a chance to enjoy the company of 2 dear friends today.
