I am really getting in to the ways of eating vegan and feeling so good for it too. I am eating whole food and plant-based rather then vegan junk food as obviously, living on junk such as wine and crisps would be vegan but wouldn’t make you feel very vibrant. I really am feeling much happier and definitely more energetic.
Cucumber and grapes for breakfast, munched in the car while I took Harvey to an appointment. I need to get through quite a lot of cucumber as I ordered double the amount I intended to. Actually we both had cucumber for breakfast! I worked from home so could make my own lunch. I wanted to use up an old and nearly empty bag of pecans. I remembered I had seen a cashew and apricot dip on an Instagram site but I couldn’t remember which one so I guessed. I soaked 40 g pecans with 80 g cashews and 40 g dried apricots.
They don’t look so appetising after a soak! It took ages to blend them and I had to add some water but we got there in the end.
I drank a large glass of water flavoured with strawberries and cucumber.
I ate about a third of the nut and apricot dip with spinach, rocket, cherry tomatoes, celery, red pepper, cucumber and a mandarin.
It all tasted very good and no seasoning or dressing was needed.
The mandarin was so good I had 2 more.
When I finished work I took the dogs for a walk over the road.
Our bluebells seem to be a bit behind other peoples.
Whither shall I wander? Up here?

It is all lovely so it doesn’t really matter.
Back at home I spent some happy time in my outside office, sowing vegetable seeds.
3 types of lettuce, cauliflower, red pepper and more spinach.
I hope these are successful. I have never grown cauliflower before but have really enjoyed it this year so am inspired to grow my own.
Swiss Chard again for supper. It is so beautiful I have to keep picking it.
I stir fried onions, swiss chard, broccoli, chilli, mushrooms and the rice in coconut oil and then water. I use coconut oil to add some flavour and when that has been absorbed, I add water to cook the broccoli and chard stalks so they are soft. Drizzled with some soy sauce and sriracha.
This would have been an excellent day’s eating and I exercised so it should have been an excellent day except I nibbled too many dates and dried apricots this afternoon. I did however stay vegan, whole food and plant-based so not a disaster.
Er, was this a ‘working from home’ day? If so, I’d like some of those. Looks like a very chilled way to spend the day. x
Yes it was. It took no longer to make lunch than to go and buy it. When I finished work at 5:30 I went on a dog walk and worked in the garden instead of commuting home. I got all my work done (more than if I was in the huge open plan office we are expected to work in) and save 3 hours commuting time and made the most of that 🙂
