I had a very frustrating reason for working from home today but at least that meant that I could enjoy the lovely spring sunshine.
I miss the pretty flowers which come out while I am usually at work.
They are so lovely in the sunshine
and I felt very lucky to be able to enjoy them today.
I was thrilled to see the roses my sisters gave me for my birthday are budding.
They were only twigs when I planted them in Autumn.
Watermelon for breakfast.
I had half a medium sized watermelon, which I nibbled during the morning.
I worked in the kitchen
because that is the sunniest room in the mornings.
It’s a very happy space.
Late morning I made this fantastic bowl of chocolate banana ice-cream. Made with 3 bananas, 2 tbsp peanut butter, Green and Blacks cocoa powder and a splash of almond milk.
4 simple ingredients made the most delicious and amazing bowl of ice-cream I have had so far.
In the afternoon I made my lunch. I spiralled a courgette and chopped up some cucumber, tomatoes, spring onion and lettuce.
Dressed simply with salt, pepper and olive oil.
Delicious.
Supper was very easy. 6 falafels with some humous, sprouted pulses, olives and cherry tomatoes.

I was just mentioning to Bob last night how March 1 was the first day of Spring where you are. We are waiting patiently for March 21 to arrive. Too bad ours still will be with a few feet of snow and the threat of more winter weather looming. I just got my power back about an hour ago after another snow/freezing rain/ice storm yesterday and last night. Enjoy those flowers even more.
I was also mentioning to Bob that you eat a lot of sprouted foods and sure enough, there is supper. 🙂
I have seen instagram photos and news reels of the terrible storms battering Eastern Canada and USA. You have my sympathy and Harvey’s envy ! We haven’t had any proper snow so it must be the mildest winter I can remember. I try to eat sprouts but find them an endurance rather then a pleasure as they are quite bitter but I hope the goodness outweighs the unpleasant taste. Alfalfa sprouts are easier on the palate but I like to eat a mixture.
