I have eaten so many veggies today and I feel really good about that.
Some fruit today too. Over the course of the day I munched my way through 4 apples and about 8 dates. At lunch time I went back to Food For Thought, hoping to find more of that yummy shepherdess pie I had yesterday. It wasn’t on the menu today so instead I had this ‘Iranian Stew’ which was their hot vegan offering. It was really good. I had it with 2 salads. It was all excellent. Lots more veggies for dinner. I str fried an aubergine, leeks, broccoli, cauliflower and mushrooms in coconut oil. Added a can of light coconut milk and a large spoonful of red Thai curry paste. Garnished with mint and coriander it made a quick to cook and satisfying supper.
Thank you to all those of you who have sent me comments about dry skin/eczema/allergic reactions you have had. It is not unusual it would seem. I feel encouraged that I need to persevere to isolate what it is that is triggering this reaction and unless it is coconuts, I did well today on an allergy friendly diet as I had no fish, shellfish, gluten, grains, eggs, dairy, citrus, nuts or seeds. I really enjoyed everything I ate too 🙂

Hi! My name is Zoe and I live in Hastings, East Sussex, with my son Harvey and dog, Milton. I have been fighting the fat for years but this time I am serious. I want to lose weight and gain health.
This blog is about how I am changing my lifestyle so I can lose weight but not by just "being on a diet" but by making small changes to our lives so that as I lose weight, I gain health. I want my family to be healthy too and never have to struggle with their weight like I have. In common with many large people, I have gained and lost weight many times over the years. This time, I want to lose it and maintain a healthy low weight.
I am interested in eating food that is nutrient dense and delicious and that appeals to children and adults. I do not eat animal products so follow a vegan diet. I try to use locally produced food supplemented with what I can grow myself. I support and try to use local farmers markets and farm shops. Another objective is to add more exercise to our days. It sounds so simple when I write it down :-)
