Busy day today. 2 scrambled eggs on a slice of buttered wholemeal bread with oats in it for breakfast.

Busy morning and afternoon working. I didn’t have time to make lunch until 3:30 so I made a smoothie. MMMMMMMMMMM. It was good! Almond milk, 1 tbsp Udo’s oil, 1 tbsp chia seeds, 2 tbsp Tahini and 2 bananas.

I had more time to make dinner. Bown Basmati rice, leftover chicken, cooked with shallots and mushrooms and then a sauce made with chicken stock plus some barely wilted spinach. Delicious.

I try to use locally produced food supplemented with what I can grow myself. I support and try to use local farmers markets and farm shops. Another objective is to add more exercise to our days. It sounds so simple when I write it down :-)

We don’t seem to have had ANY eggs in the house for the last week. Josh made a cake last weekend with them, and no one’s thought to buy any more. I’m still looking forward to my scrambled eggs! xxx
