Vegtastic

Remember I told you how I fell over a few days ago?  My right knee is very swollen and covered in a spectacular bruise.  It is very tender and hurts when I walk 😦 .  Sorry, that is gross isn’t it?

No more nasty photos, I promise.  I packed in the fruits and veggies today.  I was quite horrified to realise that I ate no fresh fruits or veggies yesterday until the evening so today I did much better.  I also want my bruise to heal so I provided lots of nutrients.

The little fella requested strawberries so he got some.

They were blended with banana, vanilla soya yogurt, almond milk and sunflower seed butter.  It was a great start to our day.

Enhanced by the fact I was at home making it at 7:30 am, nearly an hour after I usually have to leave.    I also had time to make a raw salad for lunch.

I chopped up cucumber, celery, red pepper, carrot, cherry tomatoes, sugar snap peas, and added some mixed sprouted seeds and 1 tsp hazelnut butter instead of dressing.  Ultra healthy 🙂 It did take a lot of chewing though.  I was thinking I could pop it in the blender, add some water and ice cubes and drink it effortlessly.  Instead I munched it slowly while I worked.

I took Harvey to get the school bus and sang Candyman at the top of my voice.  Deep joy.    I had this lovely start to the day because I was bound for the Gillingham office which was only a 50 minute drive from home.  When I go to London I go early to snap up a decent desk and to get going with the mountain of work I have each day.  But there was no point going early today so I didn’t.

I had a great day at work and was home earlier then usual.  I was very hungry as I had only eaten the smoothie and raw veggies all day.  I made one of my favourite meals – mixed vegetables in cheese sauce.

Step 1 : place raw kale in a layer over the bottom of an oven proof dish.

Step 2: pile on a mixture of lightly steamed vegetables (cauliflower, broccoli, carrots, peas, purple and pink new potatoes).

Step 3: Pour over cheese sauce and grate more cheese on top.  Bake in the oven for half an hour at 180 ° C.

Step 4:  Mangez.

About Lose Weight and Gain Health

Hi! My name is Zoe and I live in Hastings, East Sussex, with my son Harvey and dog, Milton. I have been fighting the fat for years but this time I am serious. I want to lose weight and gain health. This blog is about how I am changing my lifestyle so I can lose weight but not by just "being on a diet" but by making small changes to our lives so that as I lose weight, I gain health. I want my family to be healthy too and never have to struggle with their weight like I have. In common with many large people, I have gained and lost weight many times over the years. This time, I want to lose it and maintain a healthy low weight. I am interested in eating food that is nutrient dense and delicious and that appeals to children and adults. I do not eat animal products so follow a vegan diet. I try to use locally produced food supplemented with what I can grow myself. I support and try to use local farmers markets and farm shops. Another objective is to add more exercise to our days. It sounds so simple when I write it down :-)

Yum! Dinner looks awesome and my mouth is watering.
I take it you don’t have any Arnica, which will help with the pain and the bruising. I have used it whenever I need it from sore muscles from working out to being bruised from whatever I did.

Enjoy the weekend and keep up the great eating. Happy Weigh-In for Monday and don’t forget to ask about your 50lb release reward! Pictures please. 😀 Your success is everyone’s success.

    • I did find some Arnica and I think it’s helping 24 hours later. Thanks for the suggestion. I can’t get weighed Monday which is a shame as I have done well this week. I am travelling with work again. Have a great weekend x

When I dislocated and broke my wrist in two places the November after we met you, I had some on me and the doctor in ER was so happy I had taken the pellets on the way down. He is a doctor/surgeon that works with natropaths and recommends to all his patients that they take Arnica pellets 3 days before surgery so there will be less swelling and bruising.

Glad you found some. Harvey is getting older, so always keep it as a staple in the house. It is a great natural healer.

      • Do you keep taking it or just once?

The gel you can rub on several times a day and the pellets (you put 5 small pellets under your tongue) you can take every 3-4 hours. It really does work and gets the bruise to dissolve much quicker.

      • I have the pellets, not the gel. Thank you x
