Today may have started very foggy but when the fog cleared, we had a beautiful sunny day and it was Friday so all was good with the world.
In the fog, with the first rays of sunshine trying to break through, this cobweb looked really pretty. Even though I really dislike spiders, I do admire their skill in making webs. The moisture looked like little jewels having on the delicate threads.
Most of my brassicae have been devoured by slugs but this has survived. I can’t remember what it is but I think I can eat the leaves so I may try them this weekend. I started the day with a hot water with lemon and turmeric. I had a late breakfast of chia pudding. I put 200 ml of hemp milk in a jug and added 2 tbsp chia seeds. I set it aside and stirred/whisked occasionally to stop the chia seeds clumping. As the chia seeds absorb the milk, the consistency changes from liquid with little seeds to a thick creamy texture. It takes 1-2 hours or you can leave overnight. I had it with a pink grapefruit which was good but lacking something. Coconut yogurt, that is what it was missing! This was a delicious breakfast and I enjoyed every mouthful.I was working from home today and was incredibly busy so lunch had to be very quick. I needed to use up some of these.
Wholewheat pasta, steamed carrots, tomato sauce and sprouts, generously sprinkled with pepper and chilli flakes. This took about 15 minutes from thinking about it to eating it. Very simple. I walked over the road in the woods at lunch time and Lucy joined me which was lovely. It’s quite hilly and we walked at a good pace and in 1 hour I had nearly done my 10,000 steps which is great.
Supper was one of my favourite soups; ‘My New Roots’ “Four Corners Red Lentil Soup”. I love this. It is spicy with the cumin and cayenne pepper, garlicky, sour from lemons and sweet with a small amount of maple syrup. And so nourishing thanks to the red lentils and tomatoes. I had one huge bowl and a bit later another, and this time I added some spinach which cooked down in to the soup and was a really good addition.
Everything I ate today fuelled and nourished my body in a good way and I feel good about that. I chugged back 2 x 750 ml cold water with lemons in plus some tea so I am also well hydrated. If I have a good sleep I will be on fire tomorrow !
