This morning I made one of the best smoothies I have ever had in my life. Ever. When I say best I mean the tastiest. It was absolutely sublime. It was not necessarily the healthiest as it was mainly fruit and it is healthier to have smoothies with vegetables and nuts or seeds in it.
Ingredients (serves 1)
- 1/4 large Pineapple (core removed and roughly cubed)
- 1 cup Blackberries
- 1 Kiwi Fruit
- 1 Banana
- 1⁄2 Comice Pear
- 1⁄2 cup Coconut Water
- Approximately 10 fresh mint leaves
- 1 tbsp Flax seed oil (optional)
Place all ingredients in blender and blitz until smooth
The colour was intense and the flavour absolutely superb. The mint was surprisingly good. I will definitely be making this again. At lunch time Sarah popped over with her sister, Katy. They read my blog ( 🙂 ) and were interested in trying a smoothie. So I reasoned that anyone could make a fruit only smoothie, such as the one above. You could probably make that one in an average blender. So I wanted to make them a smoothie with green veggies and some superfoods i.e. a really healthy one. Unfortunately I was enjoying their company so much I forgot to note down exactly what we made it with or take any photos.
It was certainly healthy. It could probably have been sweeter but I am so used to making a smoothie for one, I perhaps didn’t increase certain ingredients enough such as banana to make it sweet enough for 3. This had in it; 2 cups of frozen mixed berries, 1 banana, a generous amount of coconut milk, 2 tbsp chia seeds, a huge handful of spinach, cabbage and beetroot leaves and a tbsp each of Maca and Lucuma. It was thick and quite earthy in flavour. I liked it and hope they did too. Cheers! I was too busy this afternoon to make the salad I was supposed to have for lunch so by late afternoon, when I was still too busy to stop to make anything, I caved in and had 2 slices of bread with peanut butter. I should have snacked on some of these fresh fruits and vegetables instead but I didn’t. Hey ho! For supper I did have a large salad. Loads of green leaves and topped with leftovers from Sundays spiralled salad. It was good.
I was disappointed I had 2 slices of bread with butter and peanut butter but at least I stopped there and didn’t go in a downward spiral of bad eating for the rest of the day.
