Seaweed Super Salad

Friday!  Yippee.  I have missed my smoothies recently as I haven’t made one for ages so for breakfast I whizzed up a frozen banana, frozen raspberries, yogurt and almond milk.

Every Friday when I work from home, I hope to be able to sit and eat lunch with Lara and Harvey and have not yet managed it.  I didn’t manage it today either.  Isn’t that ridiculous?  I suppose I can’t moan too much as I had a 2 hour lunch break yesterday but I really wanted to eat with them today.  Unfortunately, it was a lunch eaten as I worked, again.  Lara made a fantastic salad which she kindly brought in to me.

Seaweed Super Food Salad

  • Arame seaweed, soaked for 15 minutes
  • Lettuce
  • Tomatoes
  • Cucumber
  • Carrots
  • Avocado
  • Sweetcorn
  • Feta cheese
  • Crispy bacon

I made supper.  Harvey gathered some vegetables from the garden – guess who likes carrots but not green leaves?

I used 3 shallots that I harvested from the garden 2 weeks ago.  These are lovely.

I fried the shallots with some Wild Boar mince I found in the freezer, and the chopped up carrots, beans and some mushrooms.  When it had all browned slightly, I had a little clear out of the fridge and poured on 3 half eaten jars of tomato based pasta sauces and some corn.  I left it all to simmer for about 20 minutes while I cooked some pasta – I used up the end of 3 different packets of pasta.  I do love a clear out.

Very tasty, washed down with a red wine.  Have a good weekend :-)
